TUNA WITH CAPERS, OLIVES AND LEMON

Tuna With Capers, Olives and Lemon image

This is not your mother's mayonnaise-laden tuna salad, but it's just as easy to prepare. Here's what you do: stir together some canned tuna, garlic, lemon juice, red onion, black olives, capers and fresh parsley, then spread it on buttered toast. Top it off with a round of ripe tomato or slivers of avocado and another slice of toast. That's it. If you want to make it into a dip, toss the mixture into a food processor with a few tablespoons of softened butter and a bit more olive oil. Purée until smooth and creamy and serve with carrots, fennel, bell pepper and seeded crackers. If you have a tin of sardines taunting you from inside your cabinet, we bet this recipe would work equally well with those.

Categories     easy, lunch, quick, weekday, appetizer

Time 10m

Yield 4 sandwiches or 8 appetizer servings

Number Of Ingredients 11

1 garlic clove, finely minced
Juice of half a lemon, plus more to taste
5 tablespoons extra virgin olive oil, plus 4 more tablespoons if serving as dip
20 ounces canned tuna, preferably packed in olive oil, drained
1/4 cup chopped red onion
1/4 cup chopped black olives
2 tablespoons capers
2 tablespoons minced parsley or basil
Salt to taste
Buttered toast, if serving as sandwiches
10 tablespoons unsalted butter, softened, if serving as dip

Steps:

  • In a large bowl, mash garlic with the back of a spoon. Whisk in the lemon juice and 5 tablespoons of olive oil. Combine with the tuna, onion, olives, capers, herbs and salt to taste.
  • Serve on buttered toast for sandwiches, or make into a dip: Pulse the tuna salad and butter in a food processor until it is creamy. With the motor of the processor running, slowly add the additional 4 tablespoons oil. Taste and add more salt or lemon juice if needed. Serve with cut vegetables (fennel and bell peppers are nice) and crackers.

LINDA'S TUNA AND OLIVE SANDWICH (SANDWICHES) OR FINGER ROLLS

Linda's Tuna and Olive Sandwich (Sandwiches) or Finger Rolls image

This is one of my all time FAVORITE sandwiches. I hope you enjoy it as much as I do. Onions and olives go together well with the mayo in this recipe... YUMMO! The Finger Roll recipe is GREAT around the holidays and for baby and bridal showers, graduations, weddings, parties, and family get togethers. Just omit the lettuce if making the Finger Rolls. Each can of tuna will make 3-4 finger rolls, depending on how full you make them, and how big the rolls are. You can double or triple this recipe, according to how many Finger Rolls you need. Try some of my other delicious sandwiches: Recipe #234542 Recipe #218337 Recipe #52286

KITTENCAL'S EGG OR TUNA AND OLIVE SALAD SANDWICHES

Kittencal's Egg or Tuna and Olive Salad Sandwiches image

This is so good you won't be able to keep your spoon out of the bowl for a taste! ---it's great in a sandwich stuffed in a pita or scooped on a large lettuce leaf, I have served this many times for a luncheon get together and everyone loves it! --- the amounts listed are usually what I use for 8 eggs but the exact measurements do not really matter just use whatever you wish for the amount of eggs you make, I purchase the pimento-stuffed olives for this and I say the more you use the better! after slicing the olives make certain to hand-squeeze out as much of the moisture as possible --- plan ahead slightly the mixture needs to chill for a few hours before using.

Provided by Kittencalrecipezazz

Categories     Lunch/Snacks

Time 10m

Yield 3 sandwiches

Number Of Ingredients 10

8 hard-boiled eggs (peeled and rinsed over cold water then patted dry using a paper towel OR two 7-ounce cans of tuna, d)
2 green onions, chopped small, to taste
1/2 teaspoon seasoning salt (or to taste) or 1/2 teaspoon white salt (or to taste)
1/3 cup pimento stuffed green olive (halved and hand squeezed to remove all moisture)
1/3 cup mayonnaise (or to taste)
1/2 teaspoon fresh ground black pepper
1 pinch cayenne pepper (optional and to taste) or 1 pinch Tabasco sauce (optional and to taste)
4 -6 slices fresh bread (or use pitas)
lettuce (optional)
sliced tomatoes (optional)

Steps:

  • Slice the cooked eggs using an egg slicer or coarsely chop using a fork or flake the tuna in a bowl using a fork.
  • Add in all remaining ingredients; lightly mix with a large spatula or spoon until combined (adjust the mayonnaise, salt and pepper amounts to suit taste).
  • Cover and refrigerate for 2 or more hours to blend the flavors.
  • Divide the mixture to make sandwiches.
  • Note: 1/4- 1/2 tsp dry mustard powder may be added if desired.

NEIL PERRY'S TUNA SALAD SANDWICH

Neil Perry's tuna salad sandwich image

This is a perfect light and tasty sandwich. Pair quality bread and butter with this ready-in-a-jiffy salad and add lettuce for crunch. Use a crispy baguette or soft roll if you prefer or, if you're not a bread-eater, wash some iceberg lettuce, fashion the leaves into "cups" and fill with your mixture. Chopped cooked king prawns and shredded roast chicken are great stand-ins for the tuna, while other fabulous optional extras include roast tomato and diced cooked potato. Enjoy!

Provided by Neil Perry

Categories     Lunch

Time 30m

Yield MAKES 4

Number Of Ingredients 12

8 slices quality soy and linseed bread
butter: as much as you like (I like a lot!)
2 baby gem lettuces, pulled apart, washed and dried
For the tuna salad
425g canned tuna in oil, drained
2 sticks celery, finely diced
12 Gordal olives (large, plump Spanish ones), pitted, roughly chopped
80g mayonnaise
3 sprigs flat-leaf parsley, finely chopped
½ red onion, finely diced
½ dill pickle, finely diced
sea salt and freshly ground white pepper

Steps:

  • 1. To make the salad, flake the tuna into a bowl, add all remaining ingredients and fold to combine. Taste and adjust seasoning as necessary. 2. Spread eight bread slices evenly with butter. Add lettuce leaves to four of them and spoon over the tuna salad. Top with the remaining slices to enclose the filling. Slice in half and serve immediately. LOW FODMAP TUNA SALAD SANDWICHES - FUN WITHOUT FODMAPS
I often like to use tuna packed in olive oil for an extra boost of heart-healthy fats. The olive oil also helps to replace some of the mayonnaise typically used in tuna salad recipes. Mayonnaise is low FODMAP in servings of 2 tablespoons or 40 grams. Double-check ingredients and choose products without high FODMAP ingredients like onion or garlic.
