BRUSCHETTA WITH TOMATO AND BASIL

- Preheat broiler to high, (if you prefer you can also grill the bread). Place bread slices on a broiler pan. Char bread on each side under hot broiler, keep an eye on it! Rub toasts with cracked garlic and drizzle with oil. Chop seeded tomatoes and place in a small bowl. Pile basil leaves on top of one another and roll into a log. Thinly slice basil into green confetti and loosely combine with tomatoes. Add a drizzle of oil and a little coarse salt to the bowl and gently toss tomatoes and basil to coat. Pile toasts around the bowl of topping. Place a spoon to scoop topping in bowl and serve.

AVOCADO BRUSCHETTA
Another what's in the cupboard for an appetizer recipe. You may serve this hot or warm. When you mash the avocado do not puree it, it should still have some texture.

Steps:
- In a mini chopper, chop the onion, garlic, chili flakes and lime juice until very fine.
- Mixed the garlic etc with the fork mashed avocado.
- Meanwhile lightly paint the baguette slices with olive oil on both sides and broil one side then the other until light golden.
- Spread the avocado mixture on the toasted baguette slices.
- Top with the chopped tomatoes and sprinkle with the parmesan cheese.
- Preheat oven to 350F heat for 10 minutes finish under the broiler for 2 more minutes or until the parmesan is golden.

AVOCADO, TOMATO AND MOZZARELLA BRUSCHETTA
An appetizer that is quick to go together and very tasty as well. I make 1/2 a recipe at a time in the toaster oven.

Steps:
- Preheat oven to broil.
- Brush olive oil on slices of bread and toast for 2-3 minutes.
- Remove toast and cool slightly. Using small butter knife, spread avocado, like butter, onto each bread slice. Season each slice with garlic salt and pepper.
- Cut tomato in half and slice down in 1/2 moon slices, 5 slices per half.
- Place on top of seasoned avocado bread slice.
- Cut fresh mozzarella the same way as tomato, yielding 20 slices. Place on top of tomato.
- Put under the broiler for an additional 3 minutes, until cheese in melted.

- Prepare the tomatoes: Dice the tomatoes into small pieces and set aside to strain in a colander while you prepare the rest of the ingredients. Use a wooden spoon to stir the tomatoes to strain the extra liquid. Dice the avocado into small pieces (¼ - ½ inch each).
- In a large bowl, combine all the ingredients - strained diced tomatoes, grated garlic, chopped parsley and basil, salt, and pepper. Mix well. Add the chopped avocado and gently fold in, taking care not to smush the avocado too much.
- Toast the baguette: Brush the olive oil on one side of the baguettes and place in a pan over medium heat for 2-3 minutes, or until the baguette is toasted and golden brown.
