ROASTED TOMATO SALSA

2 pounds Roma tomatoes, halved lengthwise
6 unpeeled garlic cloves
1 chipotle chile in adobo sauce
1 large white onion, peeled and cut into 1/2-inch rounds
1 large jalapeño, cored* and halved
1 large handful fresh cilantro
1 tablespoon freshly-squeezed lime juice
1 teaspoon fine sea salt
1/2 teaspoon ground cumin

Steps:

  • Preheat broiler to high.
  • Arrange the tomatoes (skin side up), garlic cloves, onion and jalapeño (skin side up) in an even layer on a large baking sheet. Broil for 6-8 minutes, or until the tomatoes and jalapeños have blistered and blackened pretty thoroughly on top.
  • Remove pan from the oven, and peel and discard the skin from the garlic cloves. Transfer the tomatoes, garlic, onion and jalapeño to the bowl of a food processor or blender. At this point (if you're feeling impatient and hungry), you can either go ahead and add in the remaining ingredients and puree the salsa until it's smooth while it's warm. Or you can transfer the roasted veggies to the refrigerator and let them chill until cooled, then proceed with adding in the remaining ingredients and pureeing the salsa until smooth.
  • Taste, and season with extra salt or lime juice if needed. Serve immediately, or refrigerate in a sealed container for up to 3 days.

QUICK-ROASTED SALSA

8 Roma tomatoes, halved
4 cloves garlic
1 small white onion, quartered
1 jalapeno, stemmed, halved and partially seeded
1 poblano pepper, stemmed and halved
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
2 limes, zested and juiced
1/2 cup fresh cilantro, chopped

Steps:

  • Preheat the oven to 450 degrees F.
  • Place the tomatoes, garlic, onion, jalapeno and poblano onto a baking sheet. Drizzle with the olive oil and season with salt and pepper. Roast until charred in spots, about 15 minutes. Set aside and allow to cool slightly, about 5 minutes.
  • Transfer the roasted vegetables to a blender. Add the lime zest and juice and puree until smooth, being careful not to fill the blender too full. Transfer to a bowl and stir in the cilantro. Taste and adjust the seasoning if needed. Goes great with chips or alongside enchiladas.

Steps:

  • In this order, put the cilantro, tomatoes, garlic, jalapeno, onion, lime juice and 1 1/2 teaspoons salt in a blender. Pulse until broken down but still chunky, scraping the inside of the carafe as necessary.

2 1/2 tablespoons chicken broth (homemade or canned low-sodium)

Steps:

  • Preheat a medium heavy griddle or cast-iron pan over medium-high heat. Add the whole tomatoes, serrano chile and shallot and roast on the dry skillet, turning frequently, until golden brown on all sides, about 8 minutes.
  • Transfer the vegetables and chile to a food processor and add the chicken broth and cilantro. Pulse until smooth but with some small pieces remaining, or to the desired consistency. Season with salt and pepper.
  • Serve immediately or cool to room temperature and store in an airtight container in the refrigerator for up to 5 days.

7 roma tomatoes, halved and cored, or more to taste
2 Anaheim chile peppers, halved lengthwise and seeded
2 jalapeno peppers
1 poblano chile pepper, halved lengthwise and seeded
2 onions, quartered
2 garlic cloves, peeled
1 lime, juiced
2 tablespoons chopped fresh cilantro, or more to taste
2 tablespoons cider vinegar, or more to taste
¾ teaspoon dried oregano, or more to taste
¾ teaspoon ground cumin, or more to taste
¾ teaspoon kosher salt, or more to taste

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Line a roasting pan or baking sheet with aluminum foil and coat with cooking spray.
  • Arrange tomatoes, cut-side down, in the roasting pan; add Anaheim chile peppers, jalapeno peppers, and poblano peppers, all skin-side up. Add onions and garlic to roasting pan. Spray the vegetable mixture with cooking spray.
  • Roast in the preheated oven until tomato and chile pepper skins are blistered and charred, 40 to 45 minutes. Remove from oven and cool for 10 to 15 minutes, keeping skins on tomatoes and chile peppers.
  • Blend tomato-chile pepper mixture, lime juice, cilantro, cider vinegar, oregano, cumin, kosher salt, black pepper, and celery salt in a food processor using quick pulses until desired consistency is reached. Refrigerate salsa in an air-tight container.

12 med tomatoes- cored (no need to peel)
8-12 garlic cloves (peeled)
3 Bell Peppers- Red, Orange, Yellow (1 ea- cut into slices- seeds removed)
1 med Red or Vidalia Onion- quartered and separated
2 limes- juiced
1 lemon- juiced
handful cilantro leaves- cut random leaves off
1 1/2 teaspoon cider vinegar
2-3 packs of Mrs. Wages Medium Classic Salsa (Purchased on Amazon or at some Walmart stores)
kosher salt- to taste
(optional- jalapeños)
Six 8 oz jelly jars and lids - sterilized

Steps:

  • • Put prepared tomatoes and peppers onto cookie sheet. Roast under broiler for 6 minutes, then flip/turn. Roast 6 more minutes or until dark spots appear. Set aside to cool. • Turn oven down to 425 degrees. Place prepared onion and garlic on cookie sheet and roast for about 15 min until garlic is somewhat soft. • Place tomatoes in food processor and pulse gently • Add all vegi's to tomatoes in food processor. (depending on your processor size, you may have to do this in batches, with all ingredients and place in large mixing bowl as you go, then blend all together.) Add juice of lemons and limes. Add cider vinegar. Pulse gently. • Add cilantro. Pulse gently. • Add Mrs. Wages Salsa Mix (start with 2 packs then taste after mixing) • Check to see if mixture needs more salt or Mrs Wages mix. • Ladle into jars, add boiled lid and ring. • Turn upside down to cool. Store in cool dark place until ready to eat • If you like jalapeños you can add to the tomatoes and roast- with or without the seeds.
