PUMPKIN CURRY WITH TOFU



Pumpkin Curry with Tofu image

After eating this squash curry so many times at Nicky's and Typhoon Thai restaurants here in Pittsburgh, I decided to try as many recipes for it as I could. This is what has come to be my special recipe for it. You may peel the pumpkin if you want, but it will fall apart way more easily. The rind will soften during the cooking process and it is perfectly edible. Plan to make jasmine or basmati rice with this recipe. Enjoy.

1 (12 ounce) package firm tofu
1 tablespoon canola oil
1 small Japanese pumpkin (kabocha squash)
4 ounces red curry paste, or to taste
1 (14 ounce) can coconut milk
½ teaspoon grated lime zest
1 tablespoon lime juice
1 tablespoon fish sauce
1 tablespoon white sugar
¼ cup Thai basil leaves
2 teaspoons chopped fresh cilantro leaves

Steps:

  • Wrap tofu in paper towels. Place tofu onto a plate and place another plate on top. Set a 3- to 5-pound weight on top. Press tofu for 20 to 30 minutes; drain and discard the accumulated liquid and paper towels. Cut tofu into 1-inch cubes.
  • Heat canola oil in a frying pan over medium-high heat. Fry tofu in the hot oil until golden on all sides, 10 to 15 minutes. Set aside on paper towels to drain excess oil.
  • Meanwhile, cut pumpkin into 3/4-inch cubes.
  • Place pumpkin in a large saucepan with enough water to cover and bring to a boil. Continue to boil until pumpkin is just cooked through, 3 to 5 minutes. Make sure the rind softens, but not to the point the pumpkin is falling apart. Drain pumpkin, reserving about 1/4 cup cooking liquid. Set pumpkin and liquid aside.
  • Heat a large saute pot over medium-high heat. Add curry paste and stir for 15 to 30 seconds, then add coconut milk and lime zest. Cook for 5 minutes. Add cooked pumpkin, tofu, basil, lime juice, fish sauce, and sugar. Bring to a boil; cook until the pumpkin is soft, about 10 minutes. If you feel there isn't enough curry liquid, add the reserved cooking water. Garnish with cilantro.

1 (10.5 ounce) package silken tofu, drained
1 (16 ounce) can pumpkin puree
¾ cup white sugar
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground ginger
¼ teaspoon ground cloves
1 (9 inch) unbaked pie crust

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C).
  • Place the tofu, pumpkin, sugar, salt, cinnamon, ginger, and clove into a blender. Puree until smooth. Pour into the pie crust.
  • Bake in the preheated oven 15 minutes, then reduce heat to 350 degrees F (175 degrees C), and continue baking until a knife inserted into the mixture comes out clean, about 40 minutes more. Cool before serving.

1/4 cup packed brown sugar
1/4 teaspoon vanilla extract
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/8 teaspoon each ground allspice, ginger and nutmeg
2/3 cup canned pumpkin
1/2 cup evaporated milk
TOPPING:
1 tablespoon brown sugar
2 teaspoons all-purpose flour
1/4 teaspoon ground cinnamon
1 teaspoon cold butter
2 tablespoons chopped pecans

Steps:

  • In a bowl, beat the egg. Add brown sugar, vanilla, salt and spices. Stir in pumpkin and milk. Pour into two greased 8- or 10-oz. custard cups. Bake at 325° for 20 minutes. Meanwhile, for topping, combine brown sugar, flour and cinnamon in a small bowl. Cut in butter until crumbly; stir in pecans. Sprinkle over custard. Bake 15 minutes longer or until a knife inserted in the center comes out clean.

8 ounces calabaza or pumpkin, peeled, seeded, and cut into 1/2-inch dice
1 can (14 1/2 ounces) condensed milk
1 can (12 ounces) evaporated milk
8 eggs
3 tablespoons sugar
Caramel
1 cup sugar
Crust
1 pound gingersnap cookies
1/2 cup melted butter

Steps:

  • To prepare the flan, bring a saucepan of water to a boil. Add the calabaza and cook until tender, about 30 minutes. Drain the calabaza and let cool. Transfer to a food processor, add the condensed and evaporated milk, eggs, and the 3 tablespoons of sugar and purée until smooth. Set aside.
  • Preheat the oven to 375°F.
  • To make the caramel, place the cup of sugar in a heavy-bottomed saucepan and cook, stirring constantly, over medium heat until the sugar is a light amber color, about 20 minutes. Pour the caramel into a 9 by 4-inch loaf pan or into 6 individual 8-ounce ramekins or molds. Pour the reserved flan mixture on top of the caramel and place in a water bath. Bake for 15 minutes.
  • Reduce the oven temperature to 350°F, and bake until set (a knife inserted will come out clean), about 30 minutes. Remove from the oven and let cool completely.
  • To prepare the crust, place the cookies and butter in a food processor and process until well blended. Pack the crust mixture on top of the cooled flan, and transfer to the refrigerator to chill overnight.
  • To serve, run a knife around the inside edges of the loaf pan or molds and invert onto a serving platter or individual plates.

1-1/2 cups finely crushed gingersnaps (about 32 cookies)
1/4 cup butter, melted
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
FILLING:
2 packages (3.4 ounces each) instant vanilla pudding mix
1-1/3 cups cold milk
1 can (15 ounces) solid-pack pumpkin
1-1/2 teaspoons ground cinnamon
1/2 teaspoon each ground ginger, cloves and nutmeg
2 cups whipped topping
TOPPING:
1-1/2 cups evaporated milk
1 cup packed brown sugar
1 cup chopped pecans
2 teaspoons vanilla extract

Steps:

  • Combine the first four ingredients; press onto the bottom of a greased 13-in. x 9-in. baking pan. Bake at 350° for 8 minutes; cool completely. For filling, beat pudding mixes and milk in a bowl. Add pumpkin, cinnamon, ginger, cloves and nutmeg; mix well. Fold in whipped topping. Pour over crust. Chill for at least 4 hours. For topping, in a heavy saucepan, bring milk and brown sugar to a boil over low heat, stirring occasionally. Continue to cook and stir over low heat for 6-8 minutes or until mixture thickens. Cook and stir for 6-8 minutes or until mixture thickens. Remove from the heat; stir in pecans and vanilla. Cool to room temperature. Cut dessert in squares; drizzle with topping.

1 1/2 cups cooked prepared pumpkin
1/2-1 cup sugar (or to taste) or 1/2-1 cup Splenda granular (or to taste)
2 tablespoons cornstarch
1/2 cup milk
1 egg
2 -3 teaspoons pumpkin pie spice, to taste
1/2 teaspoon salt (optional)
1 cup soft tofu

Steps:

  • Preheat oven to 400F; Prepare pie crust and bake for 5-7 minutes; Remove from oven and cool; Reduce oven temp to 350°F Combine all other ingredients in a blender or food processor, blend until very smooth.
  • Pour into prebaked pie shell; Bake for 1 hour or unti a knife blade inserted in the center comes out almost clean.
  • Cool on a rack and serve at room temperature; store unused portions in the refrigerator.
  • VARIATION: You can also serve this as a custard; spray 8 custard cups and divide the blended mixture equally; set cups in 9x13 pan in the oven and add hot water to custard line; bake at 325F for 45 minutes or until blade of knife comes out clean.

1 (15 ounce) can pumpkin (or 1-3/4 cups cooked fresh pumpkin)
2/3 cup brown sugar, packed
1 teaspoon rum extract
1 1/2 teaspoons cinnamon
3/4 teaspoon ginger
1/2 teaspoon clove
3 egg whites
8 gingersnap cookies
1 teaspoon white sugar
2 teaspoons light margarine

Steps:

  • Preheat oven to 350°F.
  • Spray six 6-ounce ramekins with nonstick vegetable spray.
  • To make the gingersnap topping: In a small bowl, stir together the gingersnap crumbs and sugar.
  • Using a grater, shred the light butter and add it to the gingersnap mixture.
  • With a pastry blender or two knives, cut in the light butter until the mixture resembles coarse crumbs.
  • Set aside.
  • To Make the Custards-------------.
  • In a food processor or blender, purée the tofu until smooth.
  • Add the pumpkin, brown sugar, rum extract, cinnamon, ginger and cloves.
  • Purée until blended.
  • Add the egg whites and mix just until blended (do not overmix).
  • Divide the pumpkin mixture among the six custard cups.
  • Bake for 20 minutes.
  • Remove the custard cups from the oven and sprinkle the gingersnap topping over the pumpkin mixture.
  • Return to the oven and bake an additional 20 minutes, until the edges of the custard separate from the cups.
