Inspired by the Mexican pastry, this easy Sopapilla Cheesecake Bar recipe is simple and quick with a crispy, cinnamony topping.

2 8-ounce cans refrigerated crescent rolls (divided)
4 8-ounce packages cream cheese (at room temperature)
3 teaspoons vanilla extract
2 large eggs
2 ½ teaspoons ground cinnamon (divided)
1 ¾ cups sugar (divided)
4 tablespoons unsalted butter (melted and cooled slightly)

Steps:

  • Preheat to 350°F.
  • Unroll one can of crescent roll dough and press it evenly into the bottom of a 9x13" baking dish pinching the seams together if necessary.
  • Using a hand mixer, beat together the cream cheese, vanilla, egg, ½ teaspoon cinnamon, and 1 ½ cups of the sugar in a medium bowl on medium speed until smooth and fluffy, approximately 2 minutes.
  • Spread the cream cheese mixture evenly over the dough with a rubber spatula.
  • Unroll the second can of dough and lay it on top of the cream cheese layer. Stretch the dough to cover the cream cheese and pinch the seams to seal.
  • Pour the butter over the top of the dough and spread to coat.
  • Whisk together the remaining sugar and cinnamon then sprinkle over the top of the dough to coat.
  • Bake until the dough is cooked through and puffed up, about 50 minutes.
  • Allow to cool for 30 minutes before cutting into 12 pieces.

1 can (16 oz) Old El Paso™ refried beans
1 cup sour cream
2 tablespoons Old El Paso™ taco seasoning mix (from 1-oz package)
1 1/2 cups shredded Cheddar cheese (6 oz)
1/2 cup sliced green onions (8 medium)
1/2 cup chopped green bell pepper
1 cup chopped seeded tomatoes
1/2 cup sliced ripe olives

Steps:

  • Heat oven to 375°F.
  • If using crescent rolls: Unroll both cans of dough; separate dough into 4 long rectangles. Place crosswise in ungreased 15x10x1-inch pan; press in bottom and 1 inch up sides to form crust. Firmly press perforations to seal. If using dough sheets: Unroll both cans of dough. Place crosswise in ungreased 15x10x1-inch pan; press in bottom and 1 inch up sides to form crust.
  • Bake 14 to 19 minutes or until golden brown. Cool completely.
  • Spread beans over crust to within 1/2 inch of edges. In small bowl, mix sour cream and taco seasoning mix. Spread sour cream mixture over beans. Sprinkle remaining ingredients evenly over sour cream mixture. Cover; refrigerate 1 hour.
  • To serve, cut into 8 rows by 6 rows. Serve with salsa, if desired.

Two 8-ounce cans refrigerated crescent rolls
Two 8-ounce packages cream cheese, at room temperature
1 1/2 teaspoons vanilla extract
1 large egg
1 1/3 cups sugar
4 tablespoons unsalted butter, melted and cooled slightly
2 teaspoons ground cinnamon

Steps:

  • Position an oven rack in the center of the oven and preheat to 350 degrees F.
  • Unroll one can of dough and lay it in the bottom of a 9-by-13-inch glass baking dish. Use your fingers to press the dough into the bottom of the dish as evenly as you can, pinching the perforations to seal as needed.
  • Beat together the cream cheese, vanilla, egg and 1 cup of the sugar in a medium bowl with an electric hand mixer on medium speed until smooth and fluffy, 1 to 2 minutes. Use a rubber spatula to spread the cream cheese mixture over the dough. Unroll the second can of dough and lay it on top of the cream cheese layer. Stretch the dough as needed to cover the cream cheese and use your fingers to pinch the perforations to seal. Do not worry if the dough is not perfectly even; that will happen as it bakes. Pour the butter on top of the dough and use a spoon to spread it out evenly. Stir together the remaining 1/3 cup sugar and the cinnamon in a small bowl and sprinkle all over the top of the dough.
  • Bake until the dough is baked through and the cinnamon sugar has formed a crust on top of the dough, about 30 minutes. Cool for 15 minutes before cutting into 12 pieces. The bars can also be cooled completely before cutting and serving.

2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1 tsp. vanilla
1 egg, beaten
3/4 cup sugar, divided
2 Tbsp. ground cinnamon

Steps:

  • Heat oven to 350°F.
  • Unroll 1 can of dough onto bottom of 13x9-inch pan sprayed with cooking spray; pat out to evenly cover bottom of pan, firmly pressing perforations and seams together to seal.
  • Beat cream cheese, vanilla, egg and 1/2 cup sugar with mixer until blended; spread over dough in pan.
  • Unroll remaining crescent dough onto large sheet of waxed paper; firmly press perforations and seams together to form 13x9-inch rectangle. Invert over cream cheese mixture; remove and discard waxed paper.
  • Bake 30 to 35 min. or until golden brown. Combine remaining sugar and cinnamon; sprinkle over dessert before cutting into squares to serve.

1 (4 ounce) can chopped green chilies, well-drained
1/2 teaspoon cayenne pepper or 1/2 teaspoon red pepper
1 lb sharp cheddar cheese, grated or shredded (4 cups)
6 eggs, slightly beaten or 1 1/2 cups egg substitute
2 tablespoons diced pickled jalapenos (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Spread green chilis (and jalapenos, if using) in bottom of pan.
  • Sprinkle with cayenne pepper.
  • Sprinkle cheese over green chili peppers.
  • Pour beaten eggs over all.

Black beans and fresh corn pair with enchilada sauce and a sprinkling of cotija cheese to make a truly delectable dish.

1 15-oz. can black beans, rinsed and drained
1 ear fresh corn
2 Tbsp fresh chopped oregano
1/2 cup enchilada sauce
1/2 cup grated cotija cheese
1 recipe pie dough

Steps:

  • Preheat your oven to 375°F. Shuck the corn and cut the kernels off the cob. Combine with the black beans and oregano.
  • Roll out half of your pie dough into a 1/8-inch-thick rectangle. Cut into a 3×3″ grid, as shown in the photos above.*
  • Spoon a heaping tablespoon of the corn filling onto the center of every other square. Add 1-2 teaspoons enchilada sauce and top with a sprinkling of cheese.
  • Gently peel up an empty square and place it on top of one with the filling. Press the edges together with your fingers, then seal with the tines of a fork.
  • Transfer to a silicone-lined or parchment-lined baking sheet and bake for 25-30 minutes, rotating the pan halfway through. They should be nice and golden. Remove from the oven and serve piping hot, topped with more enchilada sauce and cheese.

optional: 1/2 cup crumbled queso fresco or cotija cheese
3 tablespoons avocado oil or olive oil
1 tablespoon fresh lime juice (or red wine vinegar)

1/4 teaspoon freshly-cracked black pepper
