This recipe came to The Times in a 1999 article by Florence Fabricant in which she argued for replacing the ubiquitous Thanksgiving pie with a cobbler. Why? The pastry stays crisp, there's a greater fruit-to-crust ratio and perhaps most importantly, it's easier. Here, two Thanksgiving favorites - cranberries and pecans - are piled into a baking dish, topped with cornmeal biscuits then baked until golden. (This can be made early in the day and reheated to serve warm. Or it can be frozen, then defrosted and warmed, but is best if not refrigerated overnight.)

3 tablespooons melted unsalted butter
4 1/2 cups cranberries
1/2 cup coarsely chopped pecans
1 1/3 cups light brown sugar
1 1/2 tablespoons flour, plus flour for work surface
1/3 cup fresh orange juice
1/2 teaspoon ground cinnamon
Cornmeal biscuit dough (see recipe)
2 tablespoons granulated sugar
Whipped cream or vanilla ice cream for serving

Steps:

  • Preheat oven to 350 degrees. Use one tablespoon butter to brush a nine-inch square or 10-inch round baking pan one and a half to two inches deep.
  • Combine berries, pecans, sugar, one and a half tablespoons flour, orange juice, cinnamon and remaining butter in a bowl. Transfer mixture to baking dish.
  • On floured work surface pat dough into an eight-inch square about a half-inch thick. Use cutter or knife to cut small rounds, squares or one-inch wide strips of dough and arrange in pattern over cranberry filling. Dust with sugar.
  • Bake about 45 minutes, until topping has browned and filling is bubbly. Allow to cool until just warm before serving, or cool completely and reheat in oven to serve. Serve with whipped cream or ice cream.

2 cups fresh cranberries (could use frozen and no need to thaw)
1 cup sugar
1 1/2 cups all-purpose flour
1 cup old-fashioned rolled oats (could use quick-cooking oats)
1/4 cup brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 1/2 sticks butter or 12 tablespoons (melted)
1 teaspoon vanilla extract
1 cup chopped pecans (could use walnuts)

Steps:

  • Combine the cranberries and sugar in the bottom of a 2 quart sprayed baking dish.
  • Mix together with a spoon, the flour, oats, brown sugar, cinnamon, melted butter and vanilla extract. Drop on top of the cranberries and sugar.
  • Sprinkle on nuts. Bake in preheated 350 degree oven for 45 minutes until casserole is bubbling and browned on top.

1 1/2 cups leftover cranberry sauce
1 1/3 cups all-purpose flour
1 heaping tablespoon granulated sugar
3 teaspoons baking powder
Pinch kosher salt
6 tablespoons cold salted butter, cubed
3/4 cup buttermilk
Coarse sugar, to garnish

Steps:

  • Preheat the oven to 375 degrees F.
  • Mix together the cherry pie filling and cranberry sauce in a bowl. Transfer to a 9-inch pie plate.
  • Mix together the flour, granulated sugar, baking powder and salt in a bowl. Cut in the butter until it resembles tiny pebbles, about 1 1/2 minutes. Mix in the buttermilk until it just comes together (it will be lumpy).
  • Dollop 6 to 8 mounds of roughly 2 1/2-inch dough balls around the outside of the pie plate. Sprinkle the coarse sugar over the top.
  • Bake until the biscuits are golden, 30 to 35 minutes. Cool for 10 minutes before serving.

Steps:

  • Sprinkle pecans in ungreased skillet. Cook over medium heat 5 to 7 minutes, stirring frequently until nuts begin to brown, then stirring constantly until nuts are light brown. Cool.
  • Meanwhile, place cranberries in heatproof bowl; add enough boiling water to cover. Let stand 15 minutes; drain. Pat dry with paper towels.
  • In large bowl, beat butter, cheese and salt with electric mixer on medium speed until blended. Gradually add flour, beating just until combined. Stir in cranberries and toasted pecans. Shape dough into 4 (12-inch) logs; wrap each in plastic wrap. Refrigerate at least 8 hours or up to 3 days.
  • Heat oven to 350°F. Line cookie sheets with cooking parchment paper. Unwrap logs; cut into 1/4-inch slices. Place on cookie sheets. Bake 13 to 15 minutes or until lightly browned. Remove from cookie sheets to cooling racks; cool completely.

Steps:

  • Preheat the oven to 350 degrees F.
  • Peel the pears and cut them in 1/2 through the stem end. Use a melon baller to scoop out the cores. Put the pear halves in a large bowl. Sprinkle over the vanilla; toss. Then sprinkle over the brown sugar, flour, cinnamon, and nutmeg and toss to coat the pears with the flavorings. Line the pears up in a buttered, sugared baking dish, rounded sides up.
  • In the same bowl, mash together the butter, brown sugar, flour, and salt with your hands for the topping. Toss in the cranberries. Crumble the topping mixture over the pears in the baking dish and bake until the topping is crunchy and browned and the pears are very tender, 35 to 40 minutes. Serve with whipped cream.

  • Preheat an oven to 375 degrees F (190 degrees C). Sift the flour, baking soda, and salt together in a bowl.
  • In a large bowl, beat together the butter, white and brown sugars, and vanilla extract with an electric mixer until the mixture is creamy and well blended.
