SIMPLY GRILLED CHICKEN BREASTS

1/4 cup vegetable oil
2 cloves garlic, smashed
Kosher salt and freshly ground black pepper
4 boneless, skinless chicken breast halves
Roasted Tomato and Onion Dipping Sauce, recipe follows, optional
5 Roma tomatoes, halved (about 1 pound)*
1 yellow or white onion, quartered
3 cloves garlic, unpeeled
1/4 cup extra-virgin olive oil
2 teaspoons dried thyme
1 to 2 tablespoons water
Kosher salt and freshly ground black pepper

Steps:

  • In a small bowl, mix the vegetable oil with the smashed garlic, using a fork to help release the garlic flavor into the oil. Season the garlic mixture with salt, and pepper, to taste. Let sit for at least 15 minutes.
  • Meanwhile, prep the chicken breasts. Rinse and dry the chicken thoroughly. Find the ridge along the side of the chicken breast, and carefully pull off the tender. Take each breast and pound gently to an even thickness. Do not pound too thin; the breast will not be completely uniform. If there is a skinny little triangular tip, go ahead and cut off and discard. Prep the tenders by slicing off any jagged edges. Liberally salt and pepper the chicken and allow to sit at room temperature for at least 15 minutes.
  • Preheat the grill to hot.
  • Once the chicken has rested, brush liberally with the garlic-infused vegetable oil. Place the chicken breasts on the hot grill, with the thicker portion facing the hotter part of your grill (usually the back). Allow the chicken breasts to cook undisturbed until char marks are made, about 4 minutes. Flip the chicken, keeping the thick part of the chicken toward the hot part of the flame, and cook until an instant-read thermometer inserted in the chicken reads 155 degrees F, about 3 more minutes. Place the chicken tenders on the grill and cook for 3 to 4 minutes total, turning halfway through. Allow the grilled chicken to rest for 5 minutes, covered, before serving.
  • Serve with Roasted Onion Tomato and Onion Dipping Sauce, if using.
  • Preheat the oven to 275 degrees F.
  • Place the halved tomatoes, onions, and garlic cloves on a baking sheet. Drizzle with half the olive oil and sprinkle with thyme, salt and pepper. Toss to coat well. Place the tomatoes cut-side down, and cook for 2 hours turning the tomatoes after 1 hour. After the second hour, remove the baking sheet, and set aside the unpeeled garlic. Place the rest of the vegetables and the pan juices in a food processor or blender. Add a tablespoon or two of water to the pan to scrape up any bits of flavor stuck onto the baking sheet and add to the food processor. Squeeze out the soft flesh of the roasted garlic into the food processor and add the remaining olive oil. Pulse the mixture until chunky, or puree until smooth, depending on desired consistency. Taste the sauce and season with salt, and pepper, if necessary.
  • Yield: about 1 1/4 cups
  • *Cook's Note: The tomatoes do not have to be "good" tomatoes.

  • Heat grill to medium-high. Season chicken breasts with salt and pepper. Clean and lightly oil hot grates. Place chicken on grill (if using skin-on chicken, place skin side down on grill).
  • Grill chicken, without turning, 6 to 10 minutes for boneless chicken and 10 to 14 minutes for bone-in. Flip and grill until cooked through, or a thermometer inserted in the thickest part of meat (avoiding bone) registers 160 degrees, 8 to 10 minutes more.
  • About 1 minute before chicken is done, brush with barbecue sauce.

1 4-5-pound package bone-in chicken thighs from ALDI (see Recipe Notes)
kosher salt, to season
2 cups Burman's BBQ sauce of choice (found at ALDI)
for serving, as desired: extra Burman's BBQ sauce of choice, freshly snipped chives, grilled corn, potato salad, macaroni salad, coleslaw, cornbread, etc.
1 16-ounce beer of choice (see Recipe Notes)
1 tablespoon kosher salt
3 tablespoons firmly packed brown sugar
1 1/2 teaspoons chili powder
1 1/2 teaspoons ground cumin
1 1/2 teaspoons garlic powder
1 1/2 teaspoons mustard powder
1 1/2 teaspoons onion powder
1 1/2 teaspoons smoked paprika
1/2 teaspoon ground black pepper
optional: 1/8-1/4 teaspoon cayenne pepper

Steps:

  • If you'd like to make BBQ chicken without the skin, tear the skin off of each chicken thigh. If you'd like to make skin-on BBQ chicken, simply trim off any excess skin or fat.
  • Add all listed ingredients to a small bowl or jar. Stir to combine. Set aside, or store on your spice rack in an airtight container for up to 2 months.
  • Add the beer (or buttermilk) to a large bowl or ziptop bag. Add in the kosher salt and stir to combine. Add the chicken, submerging all the parts in the beer mixture. Set aside to brine for at least 20 minutes or up to 2 days. If brining longer than 1 hour, be sure to store the chicken in the brine in an airtight container or ziptop bag in the refrigerator. If I have the time, I usually try to brine for at least 12 hours.
  • Prepare your grill for indirect cooking, creating a zone of direct high heat & a second zone of indirect heat. If using a gas grill, begin preheating at least 15 minutes before grilling. If using charcoal, light the charcoal at least 30 minutes prior to grilling. (To learn more about zone grilling, be sure to check out this post.)
  • Once the grill is hot, remove the chicken from the brine, patting off any excess moisture with a paper towel. Season generously with salt & the BBQ chicken dry rub. If using skin-on chicken, work your fingers under the skin to season both sides of the skin.
  • Place the seasoned chicken on the indirect side of the grill (skin side up, if using skin-on chicken), as close to the fire as possible without being over the direct heat. Cook the chicken, rotating the pieces 180 degrees every 15 minutes, until an instant-read thermometer inserted in the thickest part of the chicken (without hitting the bone) registers a temperature of 150 degrees F. Depending on the size of your chicken & the temperature of your grill, this could take as little as 15 minutes or up to 40 minutes.
  • Move the chicken over direct heat. If using skin-on pieces, flip the chicken so the skin-side is down. Use a pastry brush to baste the BBQ chicken with BBQ sauce & cook for 2 minutes. Flip the chicken & cook for 2 minutes more. If using skinless chicken, baste the second side with BBQ sauce; if using skin-on chicken, I suggest not applying BBQ sauce to the skin to keep it nice & crispy. Repeat 2-3 times, until your chicken is as charred & saucy as desired and an instant-read thermometer inserted in the thickest part of the chicken (without hitting the bone) registers a temperature of 160 degrees F. Remove from the grill and set aside to rest for 5-10 minutes. Carryover heat will cause the internal temperature to continue to rise as it rests. The chicken will be ready to serve once an instant-read thermometer inserted in the thickest part of the chicken (without hitting the bone) registers a temperature of 165 degrees F.

2 split chicken breasts (AKA bone-in skin-on chicken breast)
1 tablespoon oil (for brushing)
1/4 cup BBQ sauce of choice

Steps:

  • Preheat a gas grill to a surface temperature of 425°-450°. That is medium to medium-high on most grills. Clean and oil the grill grates.
  • Pat dry chicken. Trim loose fat and rib section.
  • Cut the split chicken breasts into 2-3 equal pieces each.
  • A light brushing with oil, and you're good to go.
  • Place the chicken pieces skin side up and grill for 5 minutes. Flip over with skin down for 4 minutes. Continue cycles of 5 minutes when skin is up and 4 minutes when skin is down. You can also grill some with the cut sides down.If you only have two burners, turn one burner down at about 10-15 minutes into the cooking. If you have 3 or more burners, turn one end burner down at the beginning of cooking.
  • With smaller pieces and pieces browning too fast, move them to the lower temperature area as needed.When the chicken is near done, brush with BBQ sauce about 5 minutes before the end of cooking and then again the last few minutes. Grill until internal temp of 165°. The total cooking time is about 30 minutes.

¼ cup BBQ sauce
¼ cup apple cider vinegar
2 cloves garlic, minced
1 teaspoon onion powder
1 teaspoon paprika

2 cups buttermilk
2 tablespoons hot sauce
2 cloves garlic, chopped
2 teaspoons dried rosemary
1 teaspoon salt

1/4 cup barbecue sauce, use your favorite
1/4 cup apple juice
1 clove garlic, finely chopped
1 tablespoon mustard
1 1/2 tablespoons hot sauce

Steps:

  • For the Marinade: Combine all of the Marinade ingredients in a medium bowl, and whisk together until well mixed. Place Marinade in a large re-sealable plastic bag. (If necessary, split the marinade and chicken into two bags.) Add the split chicken breasts and squeeze any air out of the bag. Refrigerate at least 3 hours or overnight. For the BBQ Basting Sauce: Combine all of the BBQ Basting Sauce ingredients in a small bowl. Whisk together until well mixed; set aside. The paper suggests to make the breasts all uniform size for even cooking: pound between sheets of waxed paper with a rolling pin, meat pounder or bottom of a heavy pot. Prep. time does not include marinading time.

10 medium garlic cloves, peeled and dark ends removed
1 bunch Italian parsley, stems removed
3/4 cup olive oil, plus
2 teaspoons olive oil (divided)

  • To make chimichurri sauce: In food processor fitted with metal blade, puree garlic.
  • Add parsley and process until finely chopped.
  • Add 3/4 cup oil, vinegar, water or chicken broth, and seasonings, and process.
  • Taste for seasoning and adjust if necessary. It should be very flavorful and spicy.
  • For marinade: In small mixing bowl, combine 3 tablespoons of the chimichurri sauce, with remaining 2 tablespoons olive oil and mix until smooth; taste for seasoning.
  • Place chicken breasts in a sealable bag and pour in marinade, making sure marinade is evenly distributed.
  • Zip bag and refrigerate 1/2 hour to 4 hours.
  • Prepare barbecue for medium-heat grilling.
  • Remove chicken from marinade and grill about 3 inches from flame, 7 to 10 minutes on each side or until no pink color is showing.
  • Place on platter and serve with sauce on the side.

2 skinless boneless chicken breasts
2 tablespoon BBQ sauce of choice
3 cups water (cold )
1 1/2 tablespoons table salt
1 1/2 tablespoons brown sugar
1/2 to 1 teaspoon cayenne pepper (optional)

Steps:

  • Trim skinless boneless chicken breast of any trim-able fat. Try to use chicken breasts of about the same size. And if you get some that are very plump, flatten them down a little with a meat mallet or bottom of a pan to about 3/4 inch thick.
  • Optional Brine: Mix brine of 3 cups water,1 1/2 tablespoons table salt, 1 1/2 tablespoons brown sugar and 1/2 to 1 teaspoon cayenne pepper (optional.) Add chicken and submerge and refrigerate for 30 minutes (no more than 1 hour)
  • Clean and oil grill grates and preheat to a surface temperature of 450°-500° which is about medium-high on most grills. I recommend a surface thermometer to be able to control your grill well.
  • Remove chicken from brine and rinse lightly under running water. Pat dry. Please be careful and wash up the surrounding area and your hands.
  • Brush lightly with BBQ sauce of your choice.
  • Place over direct heat.
  • Flip about every 5 minutes. About 3-4 minutes before done, brush both sides with sauce. Remove from the grill at an internal temperature of 165°. About 30 minutes of total grill time. But total time will vary by the exact grill temperature and thickness of the breasts. The thinner breast may be in the 25-minute range, and those huge thick ones may take 35 minutes.
  • Allow to rest for about 5 minutes before serving.

1¾ pounds chicken tenderloins or boneless skinless chicken breasts
¼ cup vegetable oil
3 cloves garlic, minced
1¼ teaspoon salt
1 tablespoon packed light brown sugar
2 teaspoons smoked paprika
1 teaspoon ground cumin
1 teaspoon chili powder
⅛ teaspoon cayenne pepper
About 1 cup store-bought barbecue sauce or homemade BBQ sauce

Steps:

  • If using boneless skinless chicken breasts, place the chicken breasts one at a time in a 1-gallon zip-lock bag; using a meat mallet, pound the breasts to an even ½-inch thickness. (Skip this step if using tenderloins.)
  • In a large bowl, whisk together the oil, garlic, salt, brown sugar, smoked paprika, cumin, chili powder, and cayenne. Place the chicken in the bowl and, using tongs, toss until the chicken is evenly coated with the marinade. 1/2 cup BBQ sauce (your favorite)
4 chicken breasts (boneless, skinless)

Steps:

  • Preheat your grill by turning it on as high as it will go for a few minutes.
  • After it's heated, turn one side off and one side on medium low or low.
  • Clean the grates and lightly dip a paper towel in oil and brush the grate, holding the paper towel with tongs.
  • Using a pastry brush, brush one side of the chicken with a light layer of BBQ sauce and place that side down over the heated part of the grill.
  • Brush the top side with BBQ sauce.
  • Cook with the lid down until grill marks are just starting to appear, if your grill is the correct temperature this should take about 5 minutes.
