EASY SLOW-COOKER TAMALE DINNER

Here is a quick and easy dinner, which is very satisfying. No need to fool with corn husks here! My parents and friends often request this for dinner. -Laurel Lawshae, Round Rock, Texas

1 pound ground turkey
1 large egg, lightly beaten
1-1/2 cups 2% milk
3/4 cup yellow cornmeal
1 can (14-1/2 ounces) diced tomatoes, undrained
1 cup frozen corn, thawed
4 teaspoons chili powder
2 teaspoons ground cumin
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon onion powder
Shredded cheddar cheese, sour cream and salsa
Chopped green onions, optional

Steps:

  • In a small skillet, cook turkey over medium heat until no longer pink, 6-8 minutes, breaking into crumbles; drain. In a large bowl, combine egg, milk and cornmeal until smooth. Add tomatoes, corn, seasonings and turkey. , Transfer to a greased 3-qt. slow cooker. Cook, covered, on low until edges are brown, 4-5 hours. Serve with cheese, sour cream and salsa. If desired, sprinkle with green onions.

I've been making this recipe for years because my family really likes it. It's great for busy days because you make it earlier in the day and let it cook.

1 pound ground beef
1 large egg, beaten
1-1/2 cups whole milk
3/4 cup cornmeal
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (2-1/4 ounces) sliced ripe olives, drained
1 envelope chili seasoning
1 teaspoon seasoned salt
1 cup shredded cheddar cheese

Steps:

  • In a skillet, cook beef over medium heat until no longer pink; drain. In a large bowl, combine the egg, milk and cornmeal until smooth. Add corn, tomatoes, olives, chili seasoning, seasoned salt and beef. , Transfer to a greased 3-qt. slow cooker. Cover and cook on high for 3 hours and 45 minutes. Sprinkle with cheese; cover and cook 15 minutes longer or until cheese is melted.

2 can(s) (15 oz. each) beef tamales
1 medium onion, finely chopped
1 can(s) (8 oz.) whole-kernel corn, drained
1 can(s) (8 oz.) tomato sauce
1 tsp chili powder
1 c grated sharp process cheese
1/4 c sliced, pitted ripe olives

Steps:

  • 1. Slice tamales in half crosswise and arrange in bottom of greased Crock-Pot. Sprinkle chopped onion over tamales. Add corn. Mix tomato sauce and chili powder; pour into Crock-Pot. Top with grated cheese and sprinkle with sliced ripe olives. Cover and cook on Low setting for 5 to 7 hours (on High setting for 2 hours)

1 cup of chopped onion
1 large very diced tomatoes
1 green bell pepper
1 red bell pepper
8 small tortillas (6-8 inch)
2 cups Mexican blend cheese ((cheddar, Monterrey, pepper-jack)
salt
pepper
garlic salt, to taste

Steps:

  • Brown ground beef and onion in skillet.
  • Drain grease.
  • mix peppers and tomato together.
  • cut 4 tortillas into bite size pieces.
  • i used a pizza cutter to slice into eights.
  • layer tortilla slices on bottom of crock pot make a layer of ground beef layer peppers and tomatoes repeat layers twice top with cheese cook on low 2-4 hours. I usually leave the cheese off until the last 30-45 minutes of cooking.
  • serve with sour cream, hot peppers (jalapeno), salsa and refried beans to garnish.

1 8-oz can(s) corn, drained
1 8-oz can(s) tomato sauce
1 tsp chili powder
1 c cheddar cheese, shredded
1/4 c olives, sliced

Steps:

  • 1. Slice tamales in half crosswise and arrange in bottom of greased crock-pot.
  • 2. Sprinkle chopped onion over tamales.
  • 3. Add corn.
  • 4. Mix tomato sauce and chili powder; pour into crock-pot.
  • 5. Top with shredded cheese and sprinkle with sliced ripe olives.
  • 6. Cover and cook on Low setting for 5 to 7 hours or on High setting for 2 hours.

1/2 lb chorizo sausage (Mexican sausage)
1 (14 1/2 ounce) can whole kernel corn
1 (14 ounce) can tomatoes, cut up (Mexican style for seasonings)
3 1/2 ounces sliced black olives
1 tablespoon seasoning salt
1 (1 1/4 ounce) package taco seasoning mix
1 egg, well beaten
1 1/4 cups milk
3/4 cup cornmeal
1/2 cup cheese, grated (pref. Monterey Jack and Cheddar)

Steps:

  • Brown the Ground Beef and Chorizo together.
  • Drain most of the fat off (but the chorizo has a lot of flavor, so reserve some of the fat for flavor).
  • Pre-mix the egg, milk and cornmeal.
  • Except for the cheese, put all the other ingredients into the crock pot (including the meats).
  • Mix them thoroughly.
  • Put the cornflour-egg-milk mix on top.
  • Set the Crock pot to high or low.
  • Cook for 5-6 hours on high or 10-12 hours on low.
  • 5 or 10 minutes before serving, cover the top with the grated cheese.

1 lb lean ground beef
1 onion, chopped
1 (6 ounce) package long grain and wild rice blend
1 3/4 cups water
5 tablespoons soy sauce
2 cups shredded cabbage
1 cup bean sprouts
1 cup carrot, sliced into thin strips
1 cup celery, cut into thin strips
1/2 lb fresh white mushroom, sliced

Steps:

  • In a large skillet brown beef and onion stirring occasionally until crumbly.
  • Drain off fat.
  • Put beef and onion into crock pot.
  • Stir in rice mix including dry seasoning packet, water and 4 TBS of soy sauce.
  • Cover and cook on high setting 2 hours.
  • Stir in vegetables and mushrooms.
  • cover and continue cooking on high about 30 minutes longer or until rice is tender and vegetables are crisp tender.
  • Stir in remaining 1 TBS soy sauce and serve at once.
  • Note: For more pronounce Asian flavor, stir in another tablespoon soy sauce before serving.

1 (10 ounce) can cream soup
1/3 cup milk
1 (6 ounce) package Stove Top stuffing mix, and seasoning packet
1 2/3 cups water
8 ounces mushrooms (optional)
1 medium onion, diced or sliced (optional)

Steps:

  • If using, put mushrooms and onion in bottom of crock pot.
  • Place frozen chicken in crock pot.
  • Combine soup (use 2 cans if you want to have more gravy) and milk and pour over chicken.
  • Combine the stuffing mix, seasoning packet and water and spoon mixture over chicken.
  • Cover and cook on low 8- 10 hours.
  • Enjoy!
