- Place all of your ingredients into a high-powered blender or food processor - firm tofu, pure maple syrup, lemon juice, vanilla extract, sea salt, and almond extract.
- Blend the sweet cream ingredients until they reach a smooth, creamy consistency.
- If the mixture is too thick, add soy milk 1 tsp at a time, and blend for 5 secs. Continue until your soy whip cream reaches your desired thinness.
- Place the vegan whipping cream in a sealed container in the fridge.
- Once fully chilled, serve and enjoy your vegan whipped cream; no coconut required!

Vegan tofu whipped cream isn't quite the same as the dairy version, but this Vegan Tofu Whipped Cream recipe makes a fairly good substitute.

CRISPY TOFU
Fry tofu in a coating of smoked paprika, garlic and seasoning to make these crispy tofu bites. Eat as a snack or as a starter or side dish in a veggie feast

Steps:
- Drain the tofu, wrap in 4-5 sheets of kitchen paper, put on a plate and put something heavy over the top, like a wooden chopping board, or a tray with a few tins on it. Leave for 20 mins to drain the excess moisture from the tofu.
- Mix the cornflour, garlic, paprika, salt and pepper in a small bowl. Unravel the tofu from the paper, cut in half through the centre, then cut into triangles, cubes or strips.
- Toss the tofu pieces in the spiced cornflour to coat all over. Heat the oil in a large non-stick frying pan over a medium-high heat. Fry the tofu for 2-4 mins on each side until golden, crunchy and browned at the edges. Smaller cubes will take 2 mins each side, larger triangles will take 4 mins. Cook in batches if you need to, adding a little more oil if the pan gets dry.
- Drain the cooked tofu on kitchen paper and season with a pinch more salt before serving.

This is a light delicious fruit whip salad that goes over well at gatherings. I use the lowest calorie/fat whipped topping I can find and sugarfree pudding and pineapple in it's own juice (no sugar added). Cooking time is for chilling.

- Peel, core and chop apples & place in large bowl.
- Clean strawberries, remove stems and cut in pieces about the same size as apple pieces and add to bowl with apples.
- Add crushed pineapple (do not drain) and pudding (dry) to bowl. Mix together.

- Refrigerate at least an hour. Serve.

- Chop the fruit into a food precessor or blender.
- Process until it forms a fairly smooth puree'.
- Crumble in the tofu and process for about a minute, until very smooth, before gradually adding enough orange juice or wine and water to thin the mixture to the consistency you want.
- Add sugar to taste. Add the vanilla.
- Serve immediately or refridgerate.
