Steps:
- Heat a medium skillet over medium heat and fry the pepperoni until crisp. Transfer on a paper towel to drain.
- Brush each tortilla with a thin layer of pizza sauce (so thin that if you turned it over, none would drip).
- Sprinkle cheese on top of the sauce on the bottom tortilla. Top with pepperoni and other toppings, if desired. Sprinkle with another layer of cheese and place the other tortilla on top (sauce side in).
- Pre-heat a medium cast-iron skilled over medium heat.
- Lay quesadilla in the pan and cook for 3-5 minutes on each side, until cheese is melted and tortillas are crispy.
- Slice into quarters and serve with a little bowl of pizza dipping sauce.

- Lay flatbread on work surface and spread pizza sauce evenly over entire flatbread.
- On one half of flatbread, sprinkle about 2 tablespoons cheese and basil. Lay pepperoni slices evenly on top, and then sprinkle the remaining cheese evenly on top of the pepperoni.
- Fold quesadilla in half, bringing the sauce-only half of the flatbread on top of the side with toppings.
- Preheat a medium nonstick skillet over medium heat. Cook quesadilla, covered, for about 3 minutes on the first side, just until toasty golden-brown.
- Flip quesadilla over and continue cooking on the second side, covered, for about an additional minute, until cheese is melty and the second side of the flatbread is a light, toasty golden-brown.
- Remove from heat, cut into wedges, and serve with additional pizza sauce for dipping, if desired.

- Place one flour tortilla on a baking sheet or pan. Place 2 tablespoon's of pizza sauce or spagetti sauce (bertolli is great) on tortilla and spread evenly over surface of tortilla.
- Place 4-6 pepperoni slices on top of sauce, then sprinkle with parmesean cheese.
- Take one slice of provolone cheese and tear it into four equally sized pieces. Place the four pieces on top of tortilla surface.
- Sprinkle mozzerella cheese (not very much) over all ingrediants.
- Place 4-6 more pepperoni slices over mozzerella, then sprinkle minced garlic over the mozzerella.
- Put second flour tortilla over top of your now tortilla pizza. Place one more whole slice of provolone directly in middle of toritlla, put just sprinkle of mozzerella cheese, then some crushed red pepper.
- Place in oven (set for 450 degrees) and wait about 10 minutes.
- Check on your quesidilla and see if it is done (the tortillas need to be a little brown on the outside to give it a crust like texture). If its done take it out.
- Cut into four triangles, and enjoy!
4 CHEESE PEPPERONI PIZZADILLA

- Preheat the broiler.
- Heat the butter and oil in a large, oven-safe skillet over medium-high heat. Place one flour tortilla in the skillet. Spread a few tablespoons pizza sauce on the tortilla, leaving a little room around the edges. Sprinkle half of the provolone and half of the fontina over the sauce. Sprinkle a third of the mozzarella next, followed by 1 tablespoon Parmesan and 1/2 teaspoon oregano.
- Top with the second tortilla and press it down gently. Once the underside is perfectly toasted, carefully flip the quesadilla to the other side.
- Spread a few more tablespoons pizza sauce on the toasted side of the tortilla, being sure to leave a little bit of the edges exposed so it looks like a pizza. Sprinkle with another third of the mozzarella and the remaining provolone, fontina, Parmesan and oregano.
- Arrange the red bell pepper and red onion on top of the cheeses like you would on a pizza. Do the same with the pepperoni slices and the olives. Top with the remaining mozzarella.
- Transfer the pan to the broiler and let cook to melt the cheese on top, about 2 minutes. Carefully transfer the pizzadilla to a cutting board using a large spatula or two smaller spatulas.
- Warm up the remaining pizza sauce and serve in a bowl for dipping. Cut the pizzadilla into wedges and garnish with the torn basil.

GLUTEN FREE PEPPERONI PIZZA QUESADILLA
In my quest for gluten-free, yeast-free pizza, I'm always trying different things to get that pizza taste that I crave but can't have. One day a few months ago I was really craving pizza while I was at the grocery store, so I bought some pizza sauce, turkey pepperoni and mozarella cheese and this is what I came up with. Not quite the same thing as the pizza I remember, but a pretty close second and it's ready in a pinch! Note: I've also made this with Italian turkey sausage or just plain cheese depending on my mood.

I threw this together for lunch because I was tired of making sandwiches. It was really easy to make and my kids loved it. You can substitute different toppings or cheeses with whatever you have around the house.

- Preheat oven to 350 degrees.
- Lay 2 tortillas side by side on a greased cookie sheet.
- Mix shredded cheddar and monterey jack and cover tortillas. Then place the other two tortillas on top.
- Spread tomato sauce on.( I recommend Ragu Chunky Mushroom spaghetti sauce).
- Cover with mozzerella and toppings.

- Place tortillas on a plate and put 3 tablespoons pizza sauce on half of each one.
