PARMESAN CHEESE DIP / SPREAD
This yummy recipe comes from my friend Elaine. She brought it to a party and after only one bite everyone was asking for the recipe. It is very good with your favorite crackers but is even better w/ sliced fresh bread. I think it would even be good over steamed broccoli as well. The next time I make it I plan to bake some in bite sized pastry shells and see how that turns out.

Steps:
- Mix all ingredients together until well blended.
- Bake in a small ungreased covered casserole dish for 20 minute @ 400 degrees.
- Allow to cool a little before serving. Serve warm with your favorite crackers/bread.
- A note about the Mayonnaise. She didn't give me a measurement but I would say start with about a 1/4 cup and add more if it still seems too thick. The mayonnaise adds flavor but it can make the dip too thin if you use to much.

TODDLER TUNA SPREAD
My son and I share this for lunch twice a week. I'm so glad to get him to eat meat that is good for him instead of mystery-meat chicken bits! This would probably work well toasting in the oven, but with an infant and a toddler, I don't have the time for that!

Steps:
- Mix tuna, cream cheese, and shredded cheese in microwave-safe bowl.
- Heat through in microwave (about 1 minute.) Be sure to stir as you go to help the cheese melt evenly.
- Toast the bread in the toaster. Cut off crusts (if necessary!).
- Spread the tuna mix on the toast and enjoy.

- *NOTE: If you wish, you can coarsely chop the raisins before adding to the other ingredients. I preferred the texture better when the raisins were chopped.
- In a medium bowl, combine the cream cheese, maple syrup, lemon zest, cinnamon and nutmeg. Mix until creamy and smooth.
- Stir in the raisins and nuts. Cover well and refrigerate until ready to serve.
- Taste and adjust seasonings before serving.
