KILLER CHICKEN THIGH MARINADE

8 bone-in, skin-on chicken thighs ((about 4 lbs))
2 Tbsp olive oil
1 Tbsp sesame oil
4 Tbsp low sodium soy sauce
1 Tbsp Worcestershire sauce
2 Tbsp lemon juice ((or lime juice))
5 Tbsp maple syrup ((or honey))
6 cloves garlic ((minced))
½ tsp black pepper ((freshly ground))
2 tsp kosher salt ((plus more to taste))

Steps:

  • Mix all ingredients for the marinade together in a large bowl or a plastic Ziploc bag. Add the chicken and make sure that every piece is covered evenly. Marinate in a fridge for at least 30 minutes to 2 hours or, better yet, overnight.
  • Preheat oven to 450 degrees F.
  • Place the chicken and all of the marinade in a baking dish. Bake uncovered at 450 degrees F for 25-30 minutes with the skin side up, until the internal temperature reaches 165°F. To make sure the chicken tops are nicely browned and do not dry out, baste the chicken thighs in the juices and marinade about 15-20 minutes into baking.
  • To get a nicely browned, crisped up skin, turn on the broiler for 2-3 minutes when the thighs are almost done cooking. Monitor broiling very closely as the tops may burn if broiled for too long.

1/2 teaspoon paprika (smoked or sweet to taste)

Steps:

  • Season chicken thighs with salt and pepper.
  • Combine paprika, thyme, basil, and rosemary in a small mixing bowl; rub the prepared seasoning around each chicken thigh.
  • Transfer chicken thighs to a 9x13 baking dish. Set aside.
  • In a small mixing bowl combine soy sauce, maple syrup, Worcestershire sauce,

  • Pour marinade over chicken thighs.
  • Cover the chicken thighs and set in the fridge for 1 hour, or up to 8 hours.
  • Preheat oven to 425°F.
  • Remove chicken from fridge and let stand on the counter while oven preheats.
  • Remove the cover and bake chicken for 35 minutes, or until internal temperature

  • Turn on the broiler and continue to cook for 3 to 4 more minutes, or until golden brown on top.
  • Remove from oven and let stand 5 minutes on the counter.

4 boneless chicken breasts
4 boneless chicken thighs
Salt and freshly ground black pepper
3 cups buttermilk
1 liter canola, approximately, as needed for deep-frying
2 cups all-purpose flour, approximately, as needed for breading stage
3 to 5 eggs beaten, as needed for egg wash
3 cups cornmeal, approximately, as needed for breading stage
1 tablespoon paprika (you may need more if you use more cornmeal in breading)

Steps:

  • Rinse chicken breasts and thighs to remove any residue and pat dry with paper towels. Season with salt and pepper and place in a nonreactive bowl. Pour buttermilk over, cover, and let marinate, preferably overnight, refrigerated, but at least 2 hours.
  • Heat oil in deep-fryer to 350 degrees F, or as directed in the manufacturer's instructions of your deep fryer for chicken pieces.
  • Set up your breading station: in separate bowls put flour; beaten eggs; and cornmeal which has been seasoned with the paprika and salt and pepper, to taste. Remove the chicken 1 piece at a time from the buttermilk and dredge in flour, allowing any excess flour to fall away. Dip the floured chicken in the egg wash and then coat with the cornmeal mixture. Deep-fry coated chicken pieces in batches until they are cooked through, about 13 to 20 minutes. (Use the manufacturer's instructions for your deep-fryer for basic reference for chicken pieces, then test the chicken see that it is fork tender.) Allow to drain on paper towels and serve.

Juice and zest of 4 lemons, plus 2 whole lemons
5 sprigs fresh rosemary, finely chopped
5 sprigs fresh sage, finely chopped
3 cloves garlic, smashed and finely chopped
1/2 teaspoon crushed red pepper
Extra-virgin olive oil
8 chicken thighs, trimmed of excess fat
Kosher salt

Steps:

  • In a small bowl combine the lemon juice and zest, chopped herbs, garlic, crushed red pepper, and 1/2 cup of olive oil. Whisk to combine.
  • Place the chicken thighs in a wide flat dish so they are in a single layer. Add the herb mixture. Massage the thighs to coat with the herb mixture. Cover and refrigerate overnight. Note: If doing a quick marinade, leave the chicken out of the fridge for up to 1 hour.
  • Preheat grill. Brush and oil the grill to clean.
  • Remove the chicken from the marinade and brush off any excess herbs and oil. Season the chicken generously with salt and drizzle with a little bit of fresh olive oil.
  • Cut the 2 whole lemons in half and cut the tips off the ends; this will allow the lemons to stand up without rolling around. Place the chicken, skin side down, on the preheated grill. Place the lemons, flesh side down, on the preheated grill. Grill the chicken for 3 to 4 minutes and then rotate the chicken 90 degrees to create the lovely crosshatch pattern. Grill the chicken for another 3 to 4 minutes. Turn the chicken over and grill for another 4 to 5 minutes. Check for doneness (the chicken should be well cooked). Check the lemon halves to see if they are beautifully caramelized. Turn over to grill on the bottom for 2 to 3 minutes.
  • Serve the chicken with grilled lemon.

2 cups fresh parsley leaves, chopped
8 large sprigs fresh thyme, chopped
4 large sprigs fresh rosemary, chopped
3 cloves garlic, minced
1 small shallot, diced
2 tablespoons cracked black peppercorns
2 tablespoons cracked pink peppercorns
1 1/4 cups extra-virgin olive oil
8 skin-on chicken thighs
Flaky salt, such as Maldon, for seasoning

Steps:

  • Mix the parsley, thyme, rosemary, garlic, shallots, black peppercorns and pink peppercorns together in a bowl. Add the olive oil to cover the herbs/spices. Set aside 2 tablespoons of the marinade.
  • Place the chicken thighs in a resealable plastic bag. Add the marinade and marinate overnight in the refrigerator.
  • Preheat the grill to medium.
  • Remove the chicken thighs from the marinade, pat with a paper towel and place, fleshy-side down, on the hot grill. Grill until cooked through, turning once, 7 to 8 minutes per side. Finish with the reserved 2 tablespoons of marinade and some flaky salt. Serve on top of your favorite salad.

½ cup soy sauce
½ cup dark brown sugar
cup 1/4 cup hot honey (such as Mike's Hot Honey®)
1 large shallot, finely chopped
6 cloves garlic, minced
1 tablespoon chili powder
3 pounds boneless, skinless chicken thighs
2 teaspoons cornstarch
2 teaspoons water
2 teaspoons kosher salt
2 teaspoons ground black pepper

Steps:

  • Whisk together soy sauce, brown sugar, hot honey, shallot, garlic, and chili powder in a medium bowl. Combine hot honey mixture and chicken thighs in a gallon-sized resealable plastic bag. Seal bag and gently massage to work marinade into thighs. Chill in a refrigerator, at least 2 hours, or up to 8 hours.
  • Prepare a smoker according to manufacturer's instructions, bringing internal temperature to 225 to 250 degrees F (107 to 120 degrees C); maintain temperature for 15 to 20 minutes. Remove chicken thighs from marinade, and pat dry with paper towels; do not discard marinade.
  • Stir together cornstarch and water in a small metal bowl until combined.
  • Strain marinade through a fine-mesh strainer into a small saucepan; whisk in cornstarch mixture. Bring marinade mixture to a boil over medium heat, whisking frequently. Reduce heat to low and cook, whisking occasionally, until sauce is thickened, about 3 minutes. Set sauce aside to cool at room temperature.
  • Sprinkle chicken thighs evenly with salt and pepper.
  • Smoke chicken thighs, maintaining temperature inside smoker, until a thermometer inserted into the thickest portion registers 165 degrees F (74 degrees C), about 1 hour 45 minutes to 2 hours, brushing chicken thighs with reserved sauce every 15 minutes after the first hour of smoking. Transfer chicken thighs to a plate or platter and serve immediately.

This is a quick and easy grill recipe from the July 2008 Cooking Light. I thought it would be posted here somewhere but I just don't see it. This is such a yummy and easy recipe...perfect for a lazy summer evening. Prep time includes marinating time.

  • Mix together 2 tbsp honey, 2 tbsp white wine vinegar, 1 tbsp ketchup, juice of ½ lime, 4 tbsp olive oil and a pinch each of chilli powder and ground cumin.
  • Remove 2 tbsp of the marinade then pour the rest over 6 chicken thighs and leave for at least 30 minutes.

8 skinless chicken thighs, with bones
1 (8 ounce) can tomatoes, drained
6 teaspoons tomato paste (really)
2 tablespoons chili sauce
2 teaspoons sugar

2 inches fresh ginger, grated
2 cloves garlic, crushed
1 lime, juice of
1 lemon, juice of
lemon slice, to garnish

Steps:

  • Slash through the meaty part of the thighs with a knife 2 or 3 times, then set into a shallow non-metal casserole (such as a glass pyrex baking dish).
  • Combine marinade ingredients (except garnish) in a blender or fodd processor and blend until smooth.
  • Pour marinade over chicken, turn to coat, cover and let marinade in the fridge 2-3 hours.
  • Preheat oven to 375 F (190C) and bake uncovered, basting occasionally, until cooked through and juices run clear, approximately 45-50 minutes.

I've watched many episodes of Grandpa's Kitchen and finally decided to put together something similar with the ingredients I (mostly) had on hand! I'd been very cautious of using yogurt in the past but I finally went with it and I am now a huge fan. Feel free to exchange other citrus fruits for what I used. It imparts a subtle citrus flavor which went well with the garlic and ginger.

4 large boneless, skinless chicken thighs, trimmed of fat
1 ½ cups plain yogurt
1 tablespoon orange marmalade
1 tablespoon red pepper flakes
1 tablespoon ground paprika
1 teaspoon onion powder
1 teaspoon salt
1 teaspoon ground black pepper
½ medium lemon, juiced
2 cloves garlic, or more to taste, minced
1 (1/2 inch) piece fresh ginger, finely chopped
2 cups peanut oil, or as needed

Steps:

  • Use a sharp knife to slice a criss-cross pattern (#) into the top of each chicken thigh. Place chicken, hatched-sides up, into a large glass or ceramic bowl.
  • Add yogurt, marmalade, pepper flakes, paprika, onion powder, salt, pepper, lemon juice, garlic, and ginger to the chicken. Mix with a spatula until all ingredients are well mixed and chicken is completely covered in the marinade. The paprika will give the marinade a light red color; don't be alarmed. Cover the bowl with plastic wrap and marinate in the refrigerator for 1 to 4 hours.
  • Remove chicken from the marinade and let sit for 1 hour before frying.
  • When ready to fry, heat 1 inch oil in a large frying pan to 375 degrees F (190 degrees C).
  • Shake excess marinade off chicken; don't shake off too much though! Discard the remaining marinade. Add chicken to the hot oil with the hatched-sides down. Fry until chicken is no longer pink in the center and the juices run clear, 4 to 5 minutes per side. A little black is good, it adds tons of flavor. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Remove from the oil and allow to rest for 5 minutes before serving.
