I'm a vegetarian, and this is a tasty, quick and healthy lunch I could eat for every meal. At my house, we call these sandwiches HATS: hummus, avocado, tomato and shallots. These are ingredients I almost always have on hand. -Sarah Jaraha, Moorestown, New Jersey

1/2 medium ripe avocado, peeled and mashed
4 slices whole wheat bread, toasted
1 medium tomato, sliced
2 tablespoons finely chopped shallot
1/4 cup hummus

Steps:

  • Spread avocado over 2 slices of toast. Top with tomato and shallot. Spread hummus over remaining toast slices; place on top of avocado toast, facedown on top of tomato layer.

1 avocado, halved and pitted
2 tablespoons chopped fresh parsley
1 ½ teaspoons extra-virgin olive oil
½ lemon, juiced
½ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon onion powder
½ teaspoon garlic powder

Steps:

  • Toast bread in a toaster or toaster oven.
  • Scoop avocado into a bowl. Add parsley, olive oil, lemon juice, salt, pepper, onion powder, and garlic powder; mash together using a potato masher. Spread avocado mixture into each piece of toast.

Toasted Vegan Avocado and Tomato Sandwich image

Very simple and easy to make. I use a toaster oven to toast my sandwich but you could also grill it, put it in a skillet, or just toast the bagel or bread instead of the whole sandwich. You could easily add other ingredients depending on what you have on hand and your preferences.

Number Of Ingredients 4

1 bagels, of your choice or 2 slices of your favorite bread
1 tablespoon vegan margarine or 1 tablespoon hummus, enough to spread on both sides
3 -4 slices avocados, depending on size of the bread
1 1/2-2 slices tomatoes, again, depending on size of the bread

Steps:

  • Separate the bagel halves if using a bagel.
  • Spread evenly with vegan margarine or hummus.
  • Arrange the tomato and avocado slices on one side. I usually put the tomato on the bottom, it seems to stay together better.
  • Put the other side on top of the bottom half and place in the toaster oven until margarine melts or it's nice and crispy.
