This filling casserole recipe made with beef and three types of beans is ready in just an hour!

1 pound lean ground beef
1 medium onion, chopped (1/2 cup)
5 slices bacon
1 can (15 to 16 ounces) lima beans, drained
1 can (15 to 16 ounces) butter beans, drained
1 can (15 to 16 ounces) kidney beans, drained
1 can (28 ounces) baked beans
1/3 cup packed brown sugar
1/4 cup ketchup
2 tablespoons Worcestershire sauce

Steps:

  • Heat oven to 350°. Cook beef and onion in 10-inch skillet over medium heat 8 to 10 minutes, stirring occasionally, until brown; drain. Place beef mixture in ungreased 3-quart casserole.
  • Cook bacon in same skillet over low heat 7 to 8 minutes, turning occasionally, until crisp and brown. Drain on paper towels; cool and crumble.
  • Stir beans, brown sugar, ketchup and Worcestershire sauce into beef in casserole. Top with bacon. Cover and bake 40 to 45 minutes or until hot and bubbly.

Steps:

  • Trim fat from roast. Place in a 3 1/2- to 4-quart slow cooker. Season with chili powder, cumin, oregano, and garlic powder. Top with onion, beans, tomatoes, and green chiles. Cover and cook on low-heat setting for 8 to 10 hours or high-heat setting for 4 to 5 hours
  • Just before serving, if slow cooker is on low, adjust the setting to high-heat. Remove roast and cut into 8 portions; return to mixture in slow cooker. Stir in barbecue sauce. Cover and cook about 5 minutes or until heated through.

2 pounds beef Stew Meat, cut into 1-inch pieces
1 package (12 to 14 ounces) dried bean soup mix with seasoning packet
1 can (14-1/2 ounces) beef broth
1 cup water
1/2 cup sun-dried tomato pesto sauce or spread

Steps:

  • Cover beans with water in large bowl. Cover and soak overnight in refrigerator. Reserve seasoning packet.
  • Drain beans; rinse and pick over to remove any grit or shriveled and broken beans. Place beans, beef, broth, water and contents of seasoning packet in 4-1/2 to 5-1/2-quart slow cooker. Cover and cook on HIGH 5 to 6 hours or on LOW 6 to 7 hours or until beans are tender and beef is fork-tender. (No stirring is necessary during cooking.)
  • Stir in pesto; mix well. Season with salt and pepper, as desired. Serve topped with additional pesto, if desired.
  • This recipe can be made in a 6-quart electric pressure cooker. Place beans and water in pressure cooker. Close and lock pressure cooker lid. Use beef, stew or high-pressure setting on pressure cooker; program 10 minutes on pressure cooker timer. Use quick-release feature to release pressure; carefully remove lid. Add beef, seasoning, and broth. Close and lock pressure cooker lid. Use beef, stew or high-pressure setting on pressure cooker; program 25 minutes on pressure cooker timer. 1 tablespoon vegetable oil
8 ounces ground beef
One 15-ounce can black beans, drained and rinsed
2 teaspoons chili powder
2/3 cup salsa
Kosher salt
8 flat-bottomed taco shells
1/3 cup sliced black olives, plus 4 black olive slices, halved for "eyes"
1/3 cup sour cream
2/3 cup finely shredded iceberg lettuce
1 plum tomato, diced
1 avocado, peeled, pitted, thinly sliced lengthwise and halved crosswise
1 green bell pepper, cut into strips for 16 "legs" and 4 "tails"

Steps:

  • Heat the oil in a large skillet over medium-high heat. Add the beef and cook, breaking up any clumps with a wooden spoon, until browned, 2 to 3 minutes. Lower the heat to medium and stir in the beans, chili powder, 1/4 cup of the salsa and salt to taste. Cook 2 minutes.
  • Heat the taco shells according to the package directions.
  • Fill the shells halfway with the beef-and-bean mixture. Top with some of the remaining salsa. Add the olives, sour cream, lettuce and tomato. Fan the avocado slices down the middle of 4 of the tacos, making sure the tips peek past the top.
  • Lay 1 taco with no avocado flat on a plate for the head. Place 2 halved olive slices on top for eyes. Put an avocado-topped taco upright and perpendicular to the head for the body. Add 4 green pepper legs and 1 tail.

3 teaspoons cornstarch, divided
1/8 teaspoon ground ginger
1/8 teaspoon garlic powder

1 pound boneless beef sirloin, cut into thin strips
1/2 cup cold water
1 tablespoon oyster sauce, optional
1/2 teaspoon instant chicken bouillon granules
1/4 cup vegetable oil, divided
1 cup sliced fresh mushrooms
1/2 cup sliced green onion (1-inch)
1 (14-ounce) can bean sprouts, drained
1/2 cup sliced water chestnuts
Hot cooked rice, for serving

Steps:

  • Blend egg white, 2 teaspoons soy sauce, 1 teaspoon cornstarch, ginger, garlic powder, salt and pepper in medium mixing bowl. Add beef and stir to coat. Cover and refrigerate 30 minutes.
  • Combine cold water, oyster sauce, if using, remaining 3 teaspoons soy sauce, remaining cornstarch, and bouillon granules in small mixing bowl. Combine well and set aside.
  • Heat 2 tablespoons oil in large skillet. Add beef mixture and stir-fry over medium-high heat until beef is browned. Remove mixture from the skillet and set aside. Heat remaining oil to the skillet and add the mushrooms and onions. Stir-fry over medium-high heat 1 minute. Add bean sprouts and water chestnuts and stir-fry for another minute. Stir in the cornstarch mixture and the beef and cook until thickened and bubbly. Serve with rice and additional soy sauce, if desired.

1 -2 potato, peeled & diced (if in a hurry you can use a 14.5oz. can of potatos drained)

Steps:

  • Cook ground beef and onion. Drain.

  • If one can of tomato sauce is not enough add another one depends on how saucy you like it.

Steps:

1 beef stock cube
2 large onions , roughly chopped
450g carrots , peeled and thickly sliced
1.25kg/2lb 12oz potato , peeled and cut into large chunks
2g cans baked beans
Worcestershire sauce or Tabasco sauce , to taste
large handful of parsley , roughly chopped

Steps:

  • Heat a large non-stick pan, add the beef then fry over a medium-high heat until browned, stirring often and breaking up any lumps with a spoon. Crumble in the stock cube and mix well.
  • Add the vegetables, stir to mix with the beef and pour in enough boiling water (about 1.3 litres) to cover. Bring to the boil, then lower the heat and stir well. Cover the pan and simmer gently for about 30 mins or until the vegetables are tender.
  • Tip in the baked beans, sprinkle with Worcestershire sauce or Tabasco to taste, stir well and heat through. Taste for seasoning and sprinkle with parsley. Serve with extra Worcestershire sauce or Tabasco, for those who like a peppery hot taste.
