1 pizza dough, refrigerated or from your favorite pizzeria
1 tablespoon extra-virgin olive oil, 1 turn of the pan, plus some for drizzling
1 teaspoon dried oregano, lightly crushed in the palm
1 tablespoon butter
1 pound ground chicken or turkey breast
1/2 red onion, chopped
2 cloves garlic, chopped
1 tablespoon grill seasoning, a palm full (recommended: Montreal Steak Seasoning by McCormick)
2 (10-ounce) boxes, frozen spinach, defrosted
1 cup feta crumbles
Salt and freshly ground black pepper
2 cups shredded mozzarella cheese or shredded provolone
2 jars roasted red peppers, drained
1/4 cup (10 to 12) pitted kalamata olives
1 cup arugula, coarsely chopped or shredded or 1/4 cup chopped flat-leaf parsley
1/3 seedless cucumber, thinly sliced lengthwise
Hot pepper rings or pepperoncini, optional

Steps:

  • Heat oven to 425 degrees F.
  • Stretch out your dough on to a pizza stone or into a pizza pan. Pierce the dough with a fork, drizzle the dough with a touch of extra-virgin olive oil and sprinkle it with oregano. Bake dough 10 minutes.
  • While the pizza dough bakes, heat a tablespoon of extra-virgin olive oil (1 turn of the pan) in a large nonstick skillet over medium to medium-high heat. Add butter to the warm oil, then the chicken or turkey. Lightly brown the meat 3 to 4 minutes, then add the chopped red onion, garlic and grill seasoning and cook 5 minutes more. Wring the defrosted spinach dry by twisting it in a clean kitchen towel over your sink. Add it to the meat, separating it with your fingers. Add in feta crumbles.
  • Once the pizza has cooked 10 minutes, remove dough and top evenly with meat and spinach mixture. Cover the pizza with shredded mozzarella or provolone, roasted peppers and olives. Bake pizza another 13 to 15 minutes until cheese is bubbly and crust is crisp.
  • Remove pizza from oven, top with chopped parsley or arugula, cucumbers and hot peppers and serve.

MUSHROOM RAVIOLI AND SAUSAGE CASSEROLE



Mushroom Ravioli and Sausage Casserole image

Kosher salt
3 tablespoons unsalted butter
1 onion, finely chopped
10 ounces white mushrooms, thinly sliced
Freshly ground pepper
6 ounces mild Italian sausage, casings removed
3 cloves garlic (2 thinly sliced, 1 grated)
2 teaspoons fresh marjoram, chopped
1 28-ounce can crushed tomatoes
2 10-ounce packages refrigerated mushroom ravioli
1 cup shredded mozzarella cheese
1/4 cup breadcrumbs
1 tablespoon chopped fresh parsley

Steps:

  • Preheat the broiler. Bring a large pot of salted water to a boil. Melt 2 tablespoons butter in a large skillet over medium-high heat. Add the onion, mushrooms, 1/4 teaspoon salt and a few grinds of pepper. Cook until the vegetables are beginning to brown, 5 to 8 minutes. Add the sausage and cook, breaking up the meat, until no longer pink, about 4 minutes. Add the sliced garlic and marjoram and cook until softened, 1 more minute. Add the tomatoes and 1/4 cup water, bring to a simmer and cook until the vegetables are tender and the sauce has thickened slightly, about 6 minutes.
  • Meanwhile, cook the ravioli in the boiling water as the label directs. Reserve 1/4 cup cooking water, then drain. Add the ravioli and the reserved cooking water to the sauce; stir to coat. Transfer half of the ravioli and sauce to a 9-by-13-inch broiler-proof baking dish. Sprinkle with 1/2 cup mozzarella. Top with the remaining ravioli, sauce and mozzarella.
  • Meanwhile, microwave the remaining 1 tablespoon butter in a small microwave-safe bowl until melted. Stir in the grated garlic and breadcrumbs; season with salt and pepper. Sprinkle over the baked ravioli and broil until browned on top, about 2 minutes. Top with the parsley.

1 can (16 oz) Old El Paso™ traditional refried beans
1 lb lean (at least 80%) ground beef
1 cup chopped onions
1 medium jalapeño chile, seeded, finely chopped
1 package (1 oz) Old El Paso™ original taco seasoning mix
1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, undrained
2 cups shredded Cheddar cheese (8 oz)
1 bag (32 oz) Ore-Ida™ Tater Tots™ frozen potatoes
1/2 cup pickled sliced jalapeño chiles
1 can (2.25 oz) sliced ripe olives, drained
1/2 cup sliced green onions
1 cup sour cream

Steps:

  • Heat oven to 400°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Spread refried beans evenly in bottom of baking dish.
  • In 12-inch nonstick skillet, cook beef, onions and jalapeño chile over medium-high heat 7 to 9 minutes, stirring frequently, until beef is brown; drain, and return to skillet. Stir in taco seasoning mix and tomatoes; cook and stir until heated through.
  • Spoon beef mixture on top of beans. Sprinkle 1 cup of the cheese over beef. Top with frozen potatoes.
  • Bake 35 to 40 minutes or until heated through and potatoes are golden brown. Top with remaining 1 cup cheese. Bake 3 to 4 minutes or until cheese is melted. Let stand 10 minutes. Garnish with pickled jalapeños, olives and green onions. Serve with sour cream.

  • Preheat oven to 375 degrees.
  • Brown ground beef in a skillet, drain off fat. Add 1-1/2 cups tomato sauce and the taco seasoning; mix well.

4 ounces breakfast sausage
4 ounces sliced cremini mushrooms
1 small leek, cleaned and chopped
1 clove garlic, grated
1/2 red bell pepper, seeded and diced
1/4 teaspoon hot paprika
Pinch of ground mustard
Kosher salt and freshly ground black pepper
8 ounces frozen chopped spinach, thawed and squeezed out
4 large eggs
1 to 2 dashes hot sauce
3 ounces Gruyere cheese, grated
Nonstick cooking spray, for the ramekins

Steps:

  • Preheat the oven to 375 degrees F.
  • Heat a medium skillet over medium-high heat. Add the oil to heat, then add the sausage and cook until browned and crispy, breaking up any big clumps with the back of a wooden spoon, 5 to 6 minutes. Remove the sausage to a large bowl, leaving behind any rendered fat. Add the mushrooms and leeks to the skillet with the fat and cook until they are softened, 2 to 3 minutes. Add the garlic and red bell peppers. Sprinkle in the paprika, mustard, 1/2 teaspoon salt and 1/4 teaspoon pepper and cook for 5 to 8 minutes more. Add the mushroom mixture to the bowl with the sausage. Stir together and taste for seasoning.
  • In a blender, add the spinach, eggs, hot sauce, 1/4 teaspoon salt and 1/2 teaspoon pepper. Blend until smooth. Stir the spinach mixture and Gruyere into the sausage mixture a little at a time.
  • Spray four 5-ounce ramekins with nonstick cooking spray. Pour the mixture into the ramekins. Bake until the casseroles are entirely set, 35 to 50 minutes. Let the casseroles cool slightly before eating. Serve warm or at room temperature.
