ITALIAN TUNA BALLS



Italian tuna balls image

A superhealthy twist on a family favourite that can be served with spaghetti or squashed flat and cooked as burgers

2 160g cans of tuna in sunflower or olive oil, drained (reserve a little oil)
small handful of pine nuts
freshly grated zest 1 lemon
small handful parsley leaves, roughly chopped
50g fresh breadcrumb
1 egg , beaten
400g spaghetti
500g jar pasta sauce

Steps:

  • Flake the tuna into a bowl, then tip in the pine nuts, lemon zest, parsley, breadcrumbs and egg. Season and mix together with your hands until completely combined. Roll the mix into 12 walnut-size balls. Put a large pan of salted water on to boil, then cook the spaghetti according to pack instructions.
  • Heat a little of the tuna oil in a large non-stick frying pan, then fry the tuna balls for 5 mins, turning every minute or so until completely golden. Drain on kitchen paper. Heat the tomato sauce, then toss together with the pasta and tuna balls.

1 6.5-oz can(s) water packed tuna, drained
1/4 -1/2 c fine dry bread crumbs
2 Tbsp minced onion
2 Tbsp chopped parsley
2 Tbsp chopped almonds
3 Tbsp mayonnaise
1 Tbsp lemon juice
1 tsp mustard
1 egg
3 Tbsp butter, melted
1 c crushed potato chips or crushed corn flakes

Steps:

  • 1. Pre-heat oven to 350 degrees.
  • 2. In bowl, thoroughly mix together the tuna, bread crumbs, onion, parsley, almonds, mayonnaise, lemon juice, mustard, and egg. Shape into 1-inch balls.
  • 3. Dip each ball in the melted butter. then roll to coat in the chips or corn flakes. Place in shallow baking pan. Bake about 10 minutes, or until light brown.

200g can tuna in oil
85g fresh breadcrumbs
50g cheddar , finely grated
1 large egg , lightly beaten
1 tbsp chopped fresh chives
2 tbsp sunflower or olive oil , for frying
tomato ketchup , to serve
100g small pasta shapes
a handful of frozen peas
half a can creamed-style corn

Steps:

  • To make the tuna balls, tip the tuna and its oil into a large bowl and stir in the breadcrumbs and grated cheese. Add the beaten egg and chives, then season with a pinch of salt and stir again until everything is well mixed.
  • Form into 12 balls the size of ping-pong balls, then chill until you're ready to cook.
  • Cook the pasta according to packet instructions, dropping in the peas for the last couple of minutes. Meanwhile, heat the oil in a non-stick frying pan over a medium heat and fry the balls for 8-10 minutes, turning often, until they're golden brown. Drain them on kitchen paper and keep warm.
  • Drain the pasta, return to the pan and add the corn. Heat gently for a minute, stirring occasionally, until heated through. Serve with ketchup.

4 cans tuna in water (drained)
1 1/4 cups bread crumbs (divided)
1 tablespoon garlic powder
1 tablespoon onion powder
1/4 teaspoon kosher salt
1/4 teaspoon ground black pepper
zest of 1 lemon (optional)
2 tablespoons fresh parsley (chopped)
2 large eggs (beaten)
1 1/2 cups shredded cheddar cheese
1/3 cup mayo
2 eggs (beaten)
1 cup bread crumbs
Vegetable oil for frying

Steps:

  • Add one cup of bread crumbs to a medium bowl and set aside.
  • Making Tuna Balls:
  • Open the cans of tuna, scoop tuna chunks into a colander and drain.
  • Add drained tuna to a large bowl.
  • Add 1/4 cup of bread crumbs, garlic powder, onion powder, salt, pepper, lemon zest, chopped parsley, 2 beaten eggs, cheese and mayo to a large bowl. Using a spatula stir to combine all the ingredients.
  • Using a cookie scoop (I used the 2 tablespoons one), take a scoop of the tuna mixture, dump it into the prepared bowl with bread crumbs. Cover in bread crumbs, roll gently into a more perfect ball and place on a cutting board. Repeat with the remaining tuna mixture.
  • Refrigerate tuna balls for at least 1 hour before frying, otherwise they won't hold their shape.

180g can tuna in can
1 cup all-purpose flour
½ cup cornstarch
2 teaspoons baking powder
1 small carrot, minced
1 small onion, minced
1 stalk spring onion, chopped
½ teaspoon chili powder, optional
1 teaspoon salt
½ teaspoon ground black pepper
2 teaspoons sugar
water (as needed)
oil for frying

Steps:

  • In a medium bowl, combine tuna flakes, flour, cornstarch, baking powder, minced carrots, minced onion, chopped spring onions, chili powder, pepper, salt and sugar.
  • Mix all the ingredients well until incorporated. If the mixture is a bit dry, add a little water at a time. Start with about 1 tablespoon and stir it in.
  • Using a spoon, scoop around 2 teaspoons of the mixture and form into balls, making about an inch size. Make the balls as uniform as possible.
  • In a deep pan, heat oil over medium heat. Fry the fish balls for about 3-5 minutes or until golden brown.
  • Remove from the pan and transfer to a plate lined with paper towels.
  • Serve while hot with your favorite fish ball sauce.

Steps:

  • Preheat the oven to 350F. Lightly grease or line a baking sheet.
  • In a medium bowl, work the tuna with a fork, breaking apart the chunks.
  • Add the bread crumbs and dressing. Mix thoroughly until the tuna is moistened and smooth enough to roll.
  • Using your hands, roll the tuna into 1-inch diameter balls, then place them on the baking sheet.
  • Bake for about 20 minutes (Check for doneness around 15 minutes because oven temperatures vary.) Flip once in the middle, to keep one side from browning more than the other.
  • Serve warm in a thermos with mac and cheese or at room temperature in a lunch container.
