Warm your belly with this rich, decadent and creamy Pumpkin Hot Chocolate. The perfect treat to enjoy while strolling around the neighborhood looking at the christmas lights.

- Into a medium sized saucepan add the pumpkin puree, coconut sugar, cocoa powder and vanilla extract. Slowly add in the milk, whisking as you go.
- Turn the heat to low and stir frequently until the mixture is smooth and there are no lumps of cocoa powder remaining.
- Bring the mixture to a gentle simmer, continuing to stir occasionally so that nothing sticks.
- Once the mixture is smooth and has reached the desired temperature, remove from the heat and ladle into mugs. Top with whipped cream, a sprinkle of cinnamon or some actual sprinkles.

- In a saucepan, combine the whole milk, evaporated milk and vanilla and warm up over low heat.
- Combine the cocoa powder, sugar, cornstarch and cinnamon in a bowl. Whisk the cocoa mixture into the warm milk mixture until smooth. Bring to a boil, whisking frequently to prevent it from scorching.
- Remove the hot chocolate from the heat just after it has come to a boil. The mixture should be super rich and thick!
CREAMY PUMPKIN HOT CHOCOLATE (VEGAN)
Seeing the popularity of Recipe #395033, I decided to make up my own vegan hot chocolate recipe-- a perfect fall or winter drink! It has just the perfect consistency and warming flavor without being too sweet. Feel free to add a little sugar if you think it needs it. Soymilk might do fine for this recipe too but vanilla ricemilk is what I had on hand.

- STOVETOP: Whisk all the ingredients together and heat gently.
- MICROWAVE: Put the pumpkin, cocoa powder, and spice in the bottom of the standard size mug first, mix together well. Pour on the vanilla ricemilk on until almost full then mix together, nuke it until hot. (Double recipe if using an extra tall or wide mug.).

So very rich, creamy and incredibly delcious. Just the thing to warm you up on a cold winter's night in front of the fire. It's up to you but it is rich enough with out the whipped cream........ but I use it !!!

Steps:
- Chop chocolate and melt over hot water.
- In another pan bring cream and all but 1/4 cup of milk to scalding point. Stir half scalded mixture into melted chocolate and mix well, then pour back into the saucepan and set over low heat. Mix in the reserved 1/4 cup milk with the cocoa, sugar and cornflour to make a smooth paste. Stir into the chocolate mixture and whisk or stir constantly until it comes to the boil and thickens slightly.
- Add vanilla, if desired and beat briskly with wire beater or hand rotary beater until mixture is foamy.
- Pour into cups and serve immediately topped with whipped cream.

- In a saucepan, combine the milk and 1/2 cup of Land O’Lakes® Buttercream Style Half & Half. Heat, over medium heat, until bubbles begin to form around the edges.
- Lower the heat to medium low, add the chopped chocolate and cocoa powder and whisk until the chocolate is melted. Then, add the maple syrup, pumpkin puree and pumpkin spice and whisk to combine. Mixture will be thick.
- Add the remaining half and half and vanilla extract and whisk to thin out the hot chocolate to drinking consistency.
- Remove from heat and pour into mugs. Top with whipped cream and a little pumpkin spice and serve immediately!
