THERESA'S CHICKEN SALAD WITH MANGO CHUTNEY MAYONNAISE

Steps:
- Mix the celery, mayonnaise, onions, chicken and some salt and pepper until well incorporated. Chill until ready to use.
- Slice the croissant in half lengthwise, then slather with butter and grill the croissant in a small pan or on a griddle to crisp it up.
- Spread the Mango Chutney Mayonnaise on each side of the croissant. Add the tomato slices to the bottom half of the croissant and season with salt and pepper. Place the shaved lettuce on the tomatoes and add the chicken salad. Add the cheese if using. Place the top of the croissant on the sandwich and cut in half to serve.
- Mix together the chutney, mango if using and the mayonnaise; refrigerate until ready to use.
PERFECT SPINACH SALAD

- Place the eggs in a saucepan, cover with water and bring to a boil. Then turn off the heat and allow to sit in the water for 20 minutes. Drain off the water and add ice on top of the eggs.
- Fry the bacon in a skillet until crispy/chewy. Remove to a paper towel. Drain the fat into a bowl and reserve. Give the skillet a wipe with kitchen paper.
- Slice the red onion very thinly, and then add to the skillet. Cook slowly until the onions are caramelized and reduced. Remove to a plate and set aside.
- Slice the mushrooms and add them to the same skillet with a little of the reserved bacon fat if needed. Cook slowly until caramelized and brown. Remove to a plate and set aside. Chop the bacon. Peel and slice the eggs.
- Make the hot bacon dressing:
- Add 3 tablespoons of the reserved bacon fat, vinegar, sugar, Dijon and salt to a small saucepan or skillet over medium-low heat. Whisk together and heat thoroughly until bubbly. Add the spinach to a large bowl. Arrange the onions, mushrooms and bacon on top. Pour the hot dressing over the top; toss to combine. Arrange the eggs over the top and serve.

SPINACH SALAD WITH GARLIC DRESSING

- In a medium skillet, cook the bacon over medium-high heat until just crisp. Drain on paper towels and crumble when cool enough to handle. Set aside.
- In a small bowl, whisk together the oil, vinegar, salt, pepper and garlic.
- Wash the spinach leaves very well and spin dry. Tear the leaves into small pieces and place in a medium salad bowl. Add the mushrooms and bacon, and toss to combine. Pour 2/3 cup of the dressing over the salad (reserve the rest for another use) and toss again. Serve immediately.

THERESA 'S SPINACH SALAD WITH LYCHEE MANGO DRESSING
This is named after my sister Theresa because she left a bunch of lychee' at my house. I ate a couple then thought a dressing made out of these would be really good. And it is! If you never had fresh lychee 's before I highly suggest you give them a try. Just peel the skin and enjoy the juicy fruit. It 's very sweet, refreshing just like her! You can use the rest of the dressing as a really good cold soup or just cut the recipe in 1/2.

Steps:
- Toss onion slices and spinach together.
- Plate spinach and place 4-5 lychees in center.
- Arrange 6-8 mango slices in circle on spinach.
- Sprinkle cashews on salad.
- In a blender blend peeled and seeded lychee`s, remaining mango, lime juice, olive oil, salt and ginger.
- Blend till smooth.
- Pour some over salad.
- Refrigerate the rest for an other use.

- In a large bowl whisk together cocoa powder, sugar and vinaigrette. Add spinach and toss to coat. Add mango, cranberries and walnuts. Toss together and transfer to a serving dish.

- In a jar or sealable container, combine vinaigrette and 2 tablespoons reserved lychee juice, scallion, red pepper flakes, and sesame seeds. Shake vigorously; set aside.

- Arrange almonds in a single layer on a baking sheet. Bake 5 to 10 minutes, stirring occasionally, until fragrant and lightly toasted.

SPINACH SALAD WITH MANGO CHUTNEY DRESSING
I got this recipe with a jar of "Oak Hill Mango Chutney" in Sacramento, CA, about 12 years ago. I've since moved and can't get that brand, but it works just as well with any other mango chutney. This is a great "whole meal" salad for a light dinner or a brunch item. People love the unusual combination of ingredients. Interestingly, there is no oil in the dressing, but it has a rich mouth-feel. Can't call it low-fat, though!

- Wash and dry spinach, if needed, and remove stems.
- Combine the spinach with the mushrooms, bacon, cheese and onion in a large salad bowl.
- Dissolve the sugar in the vinegar and combine with the chutney and its liquid; garlic and mustard.
- Do NOT put the dressing on until just before serving or you will have a soggy mess!
- Toss the dressing with the salad just befor serving.

Steps:
- Start by making the dressing, in a shaker (such as a jar) dissolve the sugar, salt, pepper and English mustard in vinegar.
- Add in oils, lemon juice, Worcestershire, garlic, Tabasco and white pepper.
- Cover and shake jar vigorously.
- Set the jar aside or chill until needed.
- For the salad, remove stems and wash spinach leaves in several changes of water until there is no trace of sand, dry well.
- Clean mushrooms and cut off stems, thinly slice mushrooms.
- Combine the red wine vinegar and Worcestershire sauce with the French dressing in a cup.
- Place the spinach in a large bowl, tear the large leaves into smaller pieces.
- Add the mushrooms, dressing and bacon.
- Toss to mix, sprinkle with freshly ground pepper.
- Serve on chilled plates.
- Serve with Chasen's cheese toast.
