THE WORLDS BEST BARBECUE SAUCE
This sauce is great for chicken or ribs, and can even be used in place of ketchup on your fries and burgers. It's really good for making chicken wings. I'm sure this sauce could be used in a lot of other dishes and recipes; just use your imagination. It is sweet with a bit of zip. It keeps well in the refrigerator.

- For the brine, in a mixing bowl combine the water, salt, sugar, garlic, and thyme. Transfer the brine to a 2-gallon sized re-sealable plastic bag. Add the chicken, close the bag and refrigerate 2 hours (if you've only got 15 minutes, that's fine) to allow the salt and seasonings to penetrate the chicken.
- Meanwhile, make the sauce. Wrap the bacon around the bunch of thyme and tie with kitchen twine so you have a nice bundle. Heat about 2 tablespoons of oil in a large saucepan over medium heat. Add the thyme and cook slowly 3 to 4 minutes to render the bacon fat and give the sauce a nice smoky taste. Add the onion and garlic and cook slowly without coloring for 5 minutes. Add the remaining ingredients, give the sauce a stir, and turn the heat down to low. Cook slowly for 20 minutes to meld the flavors. Once the sauce is done cooking, remove about 1 1/2 cups of the sauce and reserve for serving along side the chicken at the table. The rest of the barbecue sauce will be used for basing the legs.
- Preheat oven 375 degrees F.
- Preheat a grill pan or an outdoor gas or charcoal barbecue to a medium heat. Take a few paper towels and fold them several times to make a thick square. Blot a small amount of oil on the paper towel and carefully and quickly wipe the hot grates of the grill to make a nonstick surface. Take the chicken out of the brine, pat it dry on paper towels. Arrange the chicken pieces on the preheated grill and cook, turn once mid-way, and cook for a total of 10 minutes. Transfer the grill marked chicken to a cookie sheet and then place in the oven. Cook the chicken for 15 minutes, remove it from the oven and then brush liberally, coating every inch of the legs with the barbecue sauce and then return to the oven for 25 to 30 more minutes, basting the chicken for a second time half way through remaining cooking time. Serve with extra sauce.

- Heat the vegetable oil in a medium pot over medium heat. Add the onions and garlic and cook, until the onions are golden, 6 to 7 minutes. Stir in the ketchup, 1 cup water, the vinegar, brown sugar, steak sauce, Worcestershire sauce, molasses, mustard, celery seed and 1 teaspoon salt. Bring to a boil, then reduce the heat to medium-low and simmer until the onions are tender, about 15 minutes. Stir in the liquid smoke, if using. Strain the sauce, pressing on the solids to extract any liquid.

- Mix brown sugar, Emeril's Essence, salt, pepper, paprika, cumin, garlic and cayenne pepper thoroughly, and sprinkle on both sides of ribs to taste.
- For grilling, carefully wrap in aluminum foil and cook bone side down approximately 1 1/2 hours on low temperature.
- No need to turn.
- After ribs become tender, remove from foil and continue cooking on both sides to desired crispness.
- Apply barbecue sauce liberally to both sides and allow approximately 10 minutes for barbecue sauce to caramelize.
- Brush a second time if desired, and allow to caramelize.
- Remove from grill and enjoy!
- *For oven baking, wrap in aluminum foil and place on a cookie sheet in a 275°F oven for 4 hours.
- Place a pan with water in the oven also to keep them moist.
- Remove and discard foil and brush with barbecue sauce and allow 10 minutes to caramelize.
- Brush a second time if desired.
- Remove from oven and enjoy!

BEST BARBECUE IN THE WORLD
Best barbecue I have ever tasted, it even beats 'competition' Barbecue from Tennessee or Memphis. The amazing part was that it was cooked in the oven and not on a BBQ Grill. though you can cook on BBQ grill for better flavors. The sauce used in this recipe is ---- Select Pit Smoked Barbecue Sauce (from internet) it's sweet sauce with a spice notes and that never tasted "pit smoke flavor' which is the backbone of the taste.

- OUT DOOR GRILLING:.
- Heat Grill to low - medium heat.
- Lightly oil the grill.
- Grill ribs without sauce, turn to cook both side, till ribs are done.
- Baste both side of the ribs with the Pit Smoked Barbecue Sauce. Move ribs away from the heat on grill and cover long enough to heat the barbecue sauce.
- Serve.
- INDOOR OVEN RIBS.
- Wrap ribs tightly in a plastic (Saran) wrap and then aluminum foil.
- Place on large oven pan and bake at 225°F for 2 1/2 to 3 hours.
- Unwrap ribs, being careful to remove all plastic wrap and foil. Place on medium heated grill just long enough to brown.
