ULTIMATE BUTTER COOKIE

1 cup (2 sticks) unsalted butter, room temperature
1/2 cup sugar
1/2 teaspoon salt
1 large egg yolk
2 1/4 cups all-purpose flour

Steps:

  • In a large bowl of an electric mixer, cream the butter with the sugar, salt and egg yolk until smooth. Blend in the flour until the mixture blends into a smooth dough. Wrap the dough in a plastic bag and refrigerate 1/2 hour or up to two days.
  • Preheat the oven to 350 degrees. Roll out the dough on a lightly-floured surface to 1/8-inch thickness. Cut into desired shapes using cookie cutters. Place on lightly-greased cookie sheets. Sprinkle with decorating sugar. Bake for 12 to 15 minutes.

1 cup butter, softened
3/4 cup sugar
1 large egg, room temperature
1/2 teaspoon vanilla extract
2-1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
FROSTING:
1/2 cup butter, softened
4 cups confectioners' sugar
1 teaspoon vanilla extract
3 to 4 tablespoons 2% milk
Red food coloring, optional

Steps:

  • Preheat oven to 375°. Cream butter and sugar until light and fluffy, 5-7 minutes. Beat in egg and vanilla. In another bowl, whisk flour, baking powder and salt; gradually beat into creamed mixture., Using a cookie press fitted with a heart disk, press dough 1 in. apart onto ungreased baking sheets. Bake until set but not brown, 6-8 minutes. Cool on wire racks., For frosting, beat butter, confectioners' sugar, vanilla and enough milk to reach a spreading consistency. If desired, tint with food coloring. Decorate cookies as desired.

These cookies are so ridiculously easy and so very good! They are extremely buttery and crumbly and just melt in your mouth. They taste just like those Danish butter cookies that come in a tin, absolute winner!

8 ounce(s) unsalted butter
3/4 cup(s) sugar
1/4 teaspoon(s) salt
1 1/2 teaspoon(s) vanilla extract
1 large egg yolk
2 cup(s) all-purpose flour

Steps:

  • Beat the butter, sugar, salt, and vanilla together until smooth and creamy. Mix in the egg yolk until well incorporated.
  • Add the flour and mix just until incorporated.
  • Scrape onto a lightly floured board and knead a few times, just until the dough smooths out. Turn onto a sheet of plastic wrap and roll into a log, wrap up and refrigerate for several hours or freeze.
  • Before baking, preheat the oven to 325°F. Line your baking sheets with parchment. Slice the dough into slices about 1/8" thick and place them on the sheets about an inch apart.
  • Bake until JUST beginning to turn golden around the edges, about 16-20 minutes.
  • You can do many things with these cookies, roll the dough out and cut shapes, dip them in chocolate or make them thinner and sandwich them with jam, etc.

2 cups unsalted butter, softened (Kerry Irish Gold)
1 1/2 cups sugar
4 egg yolks
2 teaspoons vanilla
4 1/2 cups unbleached flour
1/2 teaspoon salt

Steps:

  • Preheat the oven to 350°.
  • With an electric mixer (even the hand-held kind), cream together the butter and the sugar.
  • Add egg yolks and vanilla and mix well.
  • Sift flour and salt together, shaking back and forth in a fine sieve.
  • Beat into the butter mixture until well-mixed.
  • When ready to bake, use an ungreased cookie sheet and place the cookies 1 inch apart.
  • Bake for about 10 minutes and DO NOT BROWN THEM.
  • Remove the cookies from the cookie sheet while still warm and cool on sheets of waxed paper.
  • Decorate if you like:.
  • Shape dough into a roll the width of a cookie.
  • Wrap in waved paper and chill.
  • Before baking, roll in chocolate shots.
  • Slice 1/2 inch thick and bake on ungreased cookie sheet at 350° for 10 minutes. Do Not Brown.

2 cups all-purpose flour (see Cook's Note)
1/2 teaspoon baking powder
1/2 teaspoon kosher salt
2 sticks (16 tablespoons) good-quality unsalted butter, at room temperature
3/4 cup granulated sugar
1 large egg yolk
1 teaspoon pure vanilla extract
1/4 cup turbinado sugar

Steps:

  • Whisk together the flour, baking powder and salt in a medium bowl. Add the butter and granulated sugar to the bowl of a stand mixer fitted with a paddle attachment. Beat on high speed for a full 2 minutes, scraping down the bowl halfway through the mixing; the butter should be very light and fluffy. Add the egg and vanilla and beat on medium speed until well combined. Add half the dry ingredients and beat on low speed to combine. Scrape down the mixing bowl before adding the remaining dry ingredients and beat to combine. Refrigerate for 1 hour in the bowl for drop cookies, or form into a 1-inch log for slice-and-bake cookies.
  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  • Place the turbinado sugar in a small bowl. For drop cookies, scoop the cookie dough with a 1 tablespoon-size cookie scoop and then dip the tops of the cookie dough balls into the sugar. Place onto the prepared baking sheet.
  • For slice-and-bake cookies, cut the log into 1/2-inch-thick rounds. Press the tops into the sugar and place on the prepared baking sheet.
  • Bake the cookies until slightly puffed and lightly golden on the bottom, about 15 minutes.
