Steps:
- Heat bacon drippings in a cast-iron skillet over medium heat. Add the greens. Stir-fry, I suppose, since you are stirring and frying, for 1 to 4 minutes (depends on how tough the greens are) or until greens are limp, tender, and have greatly reduced in size. Pork fat is good because it helps cover the bitterness of greens while bringing out their great flavor.
- At this point, you have a choice. Either serve them straight from the pan with a sprinkling of salt, or add 3 to 4 cups of water and salt to taste, and boil the greens 1 hour for extra tender, probably-won't-even-have-to-chew greens. If you don't have teeth, clearly you see which way to go here.

- Blanch. Blanching greens involve dunking them quickly in salted boiling water and then cooling them down just as quickly with cold water. There are a few advantages to doing this.
- Braise. Braising means to cook something slowly in liquid. Tougher, heartier greens like kale and collard greens respond extremely well to some long slow heat in an enclosed environment.
- Sauté. Cooking greens in a frying pan over medium-high to high heat with a bit of butter or oil is a quick and tasty way to serve them. Sprinkle them with sea salt and cook, stirring frequently, until the greens are wilted and tender to eat.
- Soups. When using greens in soups, you get to cook them down until quite tender, but all their nutrients stay right there in your bowl. This works best with sturdier leaves, like turnip greens, kale, and chard.
- Stir-Fry. Stir-frying is like sautéing, but at a higher heat and with more stirring. While you're free to experiment, add flavors more common in Asian cuisines, like soy sauce, fermented black beans, and ginger.

- When the butter foams, add the green beans, stir to coat them in the butter and leave them to heat until they're no longer frost coated, about 5 minutes.
- Add the salt and pepper. Reduce the heat to medium-low so that you can still hear them sizzling and stir the beans intermittently until they shrink, wrinkle and about half of them are darkly colored, about 30 minutes more.
- Add the shallots and mushrooms for the last 10 to 15 minutes of cooking until the mushrooms brown and the shallots soften.
HOW TO COOK KALE AND 9 TASTY WAYS TO SERVE KALE
From thespruceeats.com
- Add It to Soups. When adding kale to soups, the greens are cooked down until they're supremely tender while all the nutrients stay right there in your bowl.
- Crisp It. It's surprisingly easy to make your own crisp kale chips. All you need is a tiny bit of oil and a hot oven. You can add salt if you like and top them with Parmesan cheese.
- Blanch It. Blanching kale softens its tough texture and its infamous bitterness. It also sets the green color, allowing you to cook it further without losing as much green as happens otherwise.
- Braise It. Braising means to cook food slowly in a bit of liquid. Kale's natural tough texture responds extremely well to long, slow heat in an enclosed environment.
- Roast It. A brief fling in the oven warms and wilts kale with very little effort. Cut it, spread it on a tray, and roast it in a very hot oven for about 5 minutes.
- Sauté It. Cooking kale in a frying pan over medium-high to high heat with a bit of butter or oil is a quick and tasty way to serve it. Season it with salt and pepper or add garlic or sweet or chile peppers for extra flavor.
- Steam It. Steaming kale is a wonderfully gentle way to handle this tough green. Cut the kale as you want to serve it, set it in a colander or steamer over a pot of boiling shallow water, cover and cook until the kale is tender (about 5 to 10 minutes).
- Toss It in Salads. Kale salads can, indeed, be delicious. For those who like to chew a lot, just treat chopped kale like lettuce. If you find raw kale a bit too intense, give the leaves a nice massage first.
- Put It in a Smoothie. A handful or two of kale adds tons of nutrients to a smoothie. Green smoothies offer many flavor possibilities and you can take the bite out of kale with sweet fruits like avocado, blueberry, mango, and pear.
