This is a very simple apple pie recipe, and one that I have always had success with, it is the one I always choose when I want to make a perfect apple pie. Of coarse you can use your favorite pie crust recipe if desired. Remember, use only Granny Smith or Pippin for this pie otherwise you will end up with a mushy filling. This pie can also be made with a crumb topping instead of a top pastry crust see recipe below. Once you try this recipe for apple pie you will always come back to it! The amount of apple filling is enough for one large 10-inch deep-dish pie or divide in half and make two 8-inch pies, also the crumb topping for this recipe is enough for two small pies.

1 double crust pie crust (for a 10 inch deep-dish pie, my butter pie crust Kittencal's No-Fail Buttery Flaky Pie Pastry/Crust works great for this or use your fav)
8 tart green apples, peeled, cored and cut into no larger than 1/2-inch slices (use Granny Smith or Pippin apples for this only)
2 tablespoons fresh lemon juice (or juice of half lemon)
1 cup sugar (if you prefer a sweeter filling increase the sugar by a couple tablespoons)
1/4 cup light brown sugar
1/4 cup all-purpose flour
1 1/2-2 teaspoons cinnamon
1 pinch nutmeg (optional)
1/8 teaspoon salt or 1/4 teaspoon kosher salt
2 tablespoons butter (no subs)
1 egg white, lightly beaten
1 tablespoon sugar (preferably coarse sugar)

Steps:

  • Prepare a double pie crust as directed.
  • Roll out one disk on a lightly floured surface into a 12-inch circle and place the pastry in the pie plate.
  • Gently press the dough into sides pie plate leaving an overhang of crust.
  • Refrigerate while preparing the apple filling.
  • Set oven rack to the second-lowest position and heat to 425 degrees.
  • Peel, core and slice the apples into 1/2-inch slices (no larger than 1/2-inch).
  • Place in a bowl and gently toss the apples with the fresh lemon juice.
  • In a small bowl combine sugar, flour, cinnamon, salt and nutmeg (if using).
  • Add the sugar mixture to the apples and toss well to coat.
  • Transfer the apple mixture into the chilled prepared crust and mound the apples slightly in the center.
  • Dot with 2 tablespoons butter.
  • Roll out the second pastry, and place over filling.
  • Flute the edges together.
  • Make several slits in the top crust to allow steam to escape (if the pie dough is too soft, place in the freezer for 10 minutes).
  • Whisk an egg white with a fork, and brush onto top of crust.
  • Sprinkle with sugar.
  • Place on a cookie sheet to catch any spills.
  • Bake for 25 minutes.
  • Reduce oven temperature to 375 degrees (leave the pie in the oven and do not open the oven door) continue baking for about another 30-35 minutes, or until the crust is deep golden brown and the fruit is bubbling.
  • Transfer to a wire rack and cool for at least 4 hours before slicing the pie.
  • TO MAKE PIE WITH CRUMB TOPPING: in a bowl combine 1 cup flour, 1/2 cup brown sugar, 1-2 teaspoons cinnamon; mix well with a spoon.
  • Add in 1/2 cup COLD butter (no subs) cut into small chunks and mix together with your fingers to combine well.
  • Add in some chopped walnuts if desired.
  • Place in the fridge while preparing the pie.
  • Make the pie filling exactly as directed, and dot with 2-3 tablespoons of butter before sprinkling on the topping.
  • Bake as directed, but cover with foil the least 15 minutes of baking.

2¾ cups all-purpose flour, spooned into measuring cup and leveled with a knife
3 tablespoons sugar
1 teaspoon salt
¼ teaspoon baking powder
14 tablespoons cold unsalted butter, sliced into 1-inch pieces
¼ cup cold vegetable shortening, in 4 pieces
7 tablespoons ice cold water
3½ pounds baking apples (see note), peeled, cored, sliced ¼-inch thick
1 teaspoon lemon zest and 1 tablespoon lemon juice, from 1 lemon
½ cup granulated sugar
6 tablespoons packed dark brown sugar
Heaping ¼ teaspoon salt
¼ teaspoon cinnamon
2 tablespoons all-purpose flour
2 tablespoons cornstarch
A beaten egg, cream, or milk, for brushing over crust
2 tablespoons granulated sugar, for topping the pie

Steps:

  • Combine the flour, sugar, salt and baking powder in the bowl of a food processor fitted with the metal blade. Pulse a few times to combine. Add the pieces of butter and shortening and pulse until the mixture is crumbly with lots of pea and chickpea-size clumps of butter and shortening within.
  • Add the water and pulse until the mixture is evenly moistened and very crumbly. Dump the dough crumbles onto a work surface and divide into two piles, with one pile about 15% bigger than the other (13 oz and 11.5 oz). Make two balls of dough and pat each one into a 5-inch disc. Wrap the discs in plastic and refrigerate for at least 45 minutes.
  • Take the larger disc of dough out of the refrigerator. Dust your work surface lightly with flour and place the dough on top; sprinkle a little flour over the dough. Use your hands to quickly knead the dough into a soft and malleable disc (don't overwork it; you want it just supple enough to roll).
  • Roll the dough, adding more flour as necessary under and on top of the dough so it doesn't stick, into a 13-in circle. Carefully drape the dough over the rolling pin and transfer it to a 9-in deep-dish pie pan (it should be at least 1½ in deep). Gently fit the dough into the pan, easing it inwards rather than stretching it outwards. Trim the edges to ½ inch beyond the lip of the pie pan. Turn the edges under to create a rim on the crust. Press the rim against the lip of the pan, forming it into an even edge. Use any scraps to patch in any tears or thin areas. Place the crust in the refrigerator for 30 minutes while you heat the oven.
  • Preheat the oven to 375°F. Set an oven rack in the middle position.
  • Remove the pie crust from the refrigerator and place on a baking sheet (this makes it easy to move in and out of the oven). Cover the crust with a piece of parchment paper and fill it with dried beans or pie weights. Bake for 20 minutes. Take the crust out of the oven; remove the parchment paper and beans/pie weights and tent the edges with a few strips of aluminum foil. (The foil will protect the edges from getting too dark.) Bake for another 15 to 20 minutes, until the dough is dry and golden. Don't worry if the bottom puffs up; just press it down gently with a flat spatula, such as a pancake turner, taking care not to puncture it. Let the crust cool to room temperature.
  • Increase the oven temperature to 425°F.
  • Meanwhile, combine the apples, lemon zest, lemon juice, granulated sugar, brown sugar, salt, and cinnamon. Toss until the sugar is dissolved and the apples are evenly coated. Let sit for at least 30 minutes.
  • Drain the apples, collecting the syrupy juice in another bowl. Pour the syrupy juice into a 2-cup microwave-safe liquid measuring cup. Take note of the quantity and then heat on high power in the microwave, checking frequently, until the syrup is reduced by half. This will take about 4 minutes but keep a close eye on it as all microwaves are different. You don't want to cook it for too long, or it will turn into sticky caramel (see note below on how to correct this if it happens). The syrup should be just slightly thickened and still pourable. (Alternatively, you can boil the juices in a small pan on the stove.)
  • Add the syrup back to the apples, along with the flour and cornstarch; toss to combine.
  • Take the other piece of dough out of the fridge and roll into an 11-inch circle, using the same process described above. If necessary, use a little dough to patch up any holes in the bottom crust. Add the apple filling to the baked pie shell, compacting the apples as tightly as possible. (Too many air pockets will cause the crust to dome, creating a gap between the apples and the crust.) Place the rolled dough over top. Crimp the edges with a fork or flute with your fingers, sealing the top and bottom crust together. Work quickly, dusting your fingers with flour as necessary, so the dough doesn't get too warm.
  • Brush the top crust with the beaten egg (or cream or milk). Sprinkle the remaining 2 tablespoons sugar over the top crust. Cut a few slits in the top crust to allow the steam to escape.
  • Bake for 15 minutes, then reduce the heat to 375°F, and bake for an additional 45 minutes, or until the top is golden and the filling is bubbly. Let the pie cool completely on a wire rack before cutting, about 4 hours.
  • Note: Be sure to use baking apples that hold their shape when cooked, such as Honeycrisp, Jonagold, Fuji, Granny Smith, or Golden Delicious. And use a mix of different varietals for the best flavor.
  • Note: If you accidentally over-reduce the syrup and it seizes up when you pour it over the apples, transfer the apple mixture to a large sauté pan and cook over high heat until the caramel melts. Let cool completely in the fridge before proceeding with the recipe.
  • Freezer-Friendly Instructions: The pie can be frozen for up to 3 months before or after baking it. (If freezing it unbaked, hold off on brushing the top crust with the beaten egg and sprinkling it with sugar; you can do that right before baking.) If baked, let it cool completely and place it in the freezer uncovered. When fully frozen, wrap the pie securely in foil and freeze. If the pie is unbaked, wrap it securely in foil and freeze. When ready to serve, proceed with baking instructions above (pie is likely to take a bit longer in the oven).

  • Heat oven to 425°F.
  • Place one pie crust in a 9" pie place. Press firmly against the side and bottom.
  • In a large bowl, gently mix filling ingredients; spoon into crust-line pie plates. Top with second pie crust. Wrap excess top pie crust under the bottom crust edge, pressing edges together to seal; flute. Cut slits of shapes in several places of top crust.
  • Bake 40 - 45 minutes, or until apples are tender and crust is golden brown. Cover crust with 2-3 inch wide strips of foil 15 - 20 minutes of baking to prevent excessive browning. I bought one of those round crust shields that really works here. Cool on cooling rack at least 2 hours before serving.
  • Variation short cut: One 21 oz can of apple pie filling and one 21 oz can of sliced apples can be substituted for the filling - still use the spices.
  • Add- on - Caramel Apple Pie - immediately after removing pie from the oven, drizzle 1/3 cup (or less) of caramel sundae toppng (like Smuckers) on top of the pie and sprinkle with @ with two tablespoons of chopped pecans. I have done this and it is wonderful both in taste and appearance.

FILLING:

1 unbaked pastry for double-crust pie
8 tablespoons unsalted butter
4 1/2 lbs golden delicious apples
1 lemon, juice of
1 cup dark brown sugar, packed

Steps:

  • Peel, halve and core the apples. Cut them into 3/4 inch wedges. Toss the apples in a large bowl with the juice of the lemon.

Lately, I've been on an apple pie binge and I've made it so many times that they're all starting to blur together. I started out simple, with just a recipe I found somewhere, but then I started tweaking, and I think that this recipe is almost perfect, well, for me anyway. This recipe can also be made gluten free!! Now I have been trying to make this pie all organic (which makes it taste 10x better!! highly recommend it!) but I've run into a problem with the apples. They're just too juicy to make the filling come out gooey, if you have any suggestions please leave a comment!

7 xl granny smith apples (non organic)
1 cup sugar
4 1/4 tablespoons cornstarch
1 1/2 tablespoons organic cinnamon
1/4 tablespoon freshly grated nutmeg
1 tablespoon lemon zest

3 cups flour
2 tablespoons sour cream, gluten free only
1 cup of cold butter or 2 sticks butter flavor shortening

Steps:

  • Making the Crust:.
  • Combine flour and salt in a large bowl. Cut in cold butter/shortening with flour salt mixture until it starts balling up to the size of a pea or smaller.
  • Knead the cold water into the flour mixture by spoonful until the bowl starts to clean itself or the dough start to feel slightly wet (make sure not to over knead!). Pack your dough carefully into a ball and put into a zip-lock bag and refrigerate it for at least 30 minute.
  • Making the Filling (Preheat the oven to 450 F).
  • Split the dough into halves, flour a flat surface, roll out into circle until 1/4 inch thick, and put into the pie pan. Place the pie pan back into the fridge along with the.
  • Combine sugar, cinnamon, nutmeg, and cornstarch in a small bowl. Peel, core, and slice Granny Smith's to desired thickness (prefer 1/4 inch) and place inside large bowl. Add lemon zest and sugar mixture to the apples until evenly distributed.
  • Place apples into into pie crust one layer at a time. In between layers add drops of softened butter, about 5 small drops on each layer. Once apples are all in, add the extra juice from the bottom of the bowl.
  • Roll out your top crust on a floured surface, Place your top crust on the pie (if not lattice, make sure to cut about 3 finger length slits in the top for the steam to escape).
  • Beat 1 egg and brush over the pie crust. Sprinkle cinnamon sugar mixture to the crust until completely covered.
  • Bake for 10 minutes at 450 F (put a cookie sheet a rack beneath your pie in case it dribbles over).Turn oven down to 350 F and bake for 50 minutes.
  • Take it out and set on cooling rack. Let it cool completely and then enjoy!

My perfect apple pie, this has always been my favorite pie which I am often asked to baked for family get togethers. The recipe is actually one that has been in our family for years and is my personal favorite. I like the level of cinnamon spicyness it has as well as the perfect crust which is my grandmothers recipe. This recipe is a sure thing for the perfect apple pie. I am from Texas originally, but have lived in Australia for 3 years now, since I cannot find the shortening here that the crust requires I substitute this with soft margarine spread. It works great as well, just keep all crust ingredients as cold as possible for a light flaky crust.

3/4 cup white sugar
1 -2 teaspoon flour
1 teaspoon cinnamon
1/4 teaspoon nutmeg

  • For Pie Crust:.
  • Sift flour, add salt & sift again.
  • Using two butter knives, cut in half of the shortening thoroughly or until mixture resembles course corn meal.
  • Cut in remaining shortening until roughly the size of peas.
  • *The secret to flaky crust is Ice Cold Water and very cold shortening.
  • Sprinkle water, 1 tablespoon at a time over small portions of the mixture, with a fork press the flour particles together as they absorb the water, do not stir.
  • Push aside pieces of dough in bowl as formed and sprinkle remaining water over dry portions, use only enough water to hold the pasty together. It should not be wet or slippery.
  • Press all together lightly with your fingers or wrap dough in waxed paper & press all together gently.
  • Bear in mind, the less the dough is handled the better the crust.
  • Place dough in refrigerator to chill while peeling & slicing apples.
  • Apple Pie filling:.
  • Pre-heat oven to 425f
  • Peel, Core and slice apples - 4-5 cups is about 5-6 apples.
  • Prepare pastry and roll out undercrust, fit into a 9 inch pie pan.
  • In a bowl: combine sugar, flour, cinamon, nutmeg, allspice and salt.
  • Spread half of this mixture over the pastry lined pan.
  • Add apples and sprinkle remaider of mixture over the apples.
  • Sprinkle apples with lemon juice and dot with butter.
  • Roll, fit and seal upper crust over the top of the apples, I like to cut little hearts and X's in the top crust too for air.
  • Bake on the lower shelf of a hot oven (425 f) 30-40 minutes.
  • * I also cover the very edge circle of the crust with foil to keep the edges from browning too much more than the rest of the pie while baking.

4 lbs cooking apples, such as Fuji (about 12 cups) or 4 lbs granny smith apples, cored and cut into 1/4-inch thick slices (about 12 cups)

  • Preheat oven to 475°F.
  • In very large bowl combine butter and cinnamon; add apples and toss gently to coat.

  • 1.In a food processor, pulse 2 1/2 cups of the flour with the salt and 1 teaspoon of sugar. Add 8 tablespoons of the butter and the shortening; pulse until the mixture resembles small peas. Add 1/3 cup of ice water and pulse until evenly moistened. Squeeze some of the mixture with your hand; it should come together. If it crumbles, add 1 tablespoon of ice water and pulse again.
  • Turn the dough out onto a work surface and gently press with the heel of your hand, then gather into a ball with a few quick strokes. Divide in half and form into disks. Cover with plastic wrap and refrigerate for at least 30 minutes or for up to 2 days.
  • On a lightly floured surface, roll 1 disk into a 13-inch round 1/8 inch thick. Fit the round into a 9-inch glass pie plate and trim the overhang to 1/2 inch. Refrigerate the pie shell. Roll out the second disk into a 12-inch round 1/8 inch thick; transfer to a parchment-lined baking sheet. Cover with plastic wrap and refrigerate.
  • 4. Peel, halve and core the apples, then cut into 3/4-inch wedges and toss with the lemon juice in a large bowl. In a 12-inch skillet, melt the remaining 8 tablespoons of butter over low heat; stir in the brown sugar. Add the apples and turn to coat. Increase the heat to high and cook, turning occasionally, until most of the wedges are tender but not mushy, 15 minutes. Do not overcook.
