For the Dressing
1/2 c. red wine vinegar
1/4 c. olive oil
2 tbsp. Dijon mustard
1 tsp. sugar
For the Salad
1/4 red onion, thinly sliced
1 lb. rotini pasta
1 orange bell pepper, sliced
1 pt. grape tomatoes, halved
3/4 c. chopped marinated artichokes
1/3 c. pitted kalamata olives, chopped
4 oz. cured salami, such as Soppressata, chopped
2 tbsp. chopped fresh flat-leaf parsley, plus more for serving
1 tbsp. chopped fresh oregano
2 tbsp. chopped capers
14 oz. fresh mozzarella, torn

Steps:

  • Bring a large pot of salted water to a boil. Add pasta and cook according to package directions.
  • Meanwhile, whisk together vinegar, oil, mustard, and sugar in a bowl. Transfer half of dressing to a large bowl and add onions; toss to coat. Let stand while pasta cooks.
  • Drain pasta and add to onion mixture; toss until liquid is absorbed. Cool to room temperature.
  • Add bell pepper, tomatoes, artichokes, olives, salami, parsley, oregano, capers, and remaining dressing, toss to coat. Fold in mozzarella. Serve sprinkled with additional parsley.

8 ounces rotini pasta (Barilla is best)
1 large tomatoes, chopped
1 medium green pepper, chopped
1 medium red pepper, chopped
1 small onion, chopped (optional)
1 (2 1/4 ounce) can black olives, drained and sliced
1 (8 ounce) bottle Kraft sun-dried tomato salad dressing
1/4 cup parmesan cheese

Steps:

  • Cook pasta according to directions, about 8 minutes, stirring occasionally.
  • While pasta is cooking, chop tomato, peppers and onion into very small pieces. Add olives and mix.
  • Drain Rotini; rinse with cold water for about 3 minutes.
  • Mix pasta with tomato, peppers, onion and olives.
  • Refrigerate for about 1/2 an hour.
  • Add salad dressing; mix well.
  • Add Parmesan cheese; mix well.
  • Serve immediately.
  • If you have left overs, you will have to "re-wet" salad by adding a little more salad dressing the next day, especially if you substitute the dressing with a fat-free dressing.

  • In a large cast-iron skillet, add the walnuts over low heat. Allow the walnuts to toast until golden and fragrant, a few minutes or so. Transfer the walnuts to a cutting board, let cool slightly, roughly chop, and set aside.
  • Wipe out the skillet so it’s free of crumbs. Heat over medium. Add enough olive oil to just coat the bottom of the skillet. Add the asparagus. Season with a pinch of salt. Let cook until caramelized and tender, flipping often. Transfer the asparagus to the cutting board, let cool slightly, and slice into 1” pieces.
  • To the same skillet, add a little more olive oil. Add the leeks and repeat the process. Transfer the leeks to a plate.
