1 pound bulk pork sausage
1 medium onion, chopped
2 medium carrots, grated
1 medium green pepper, chopped
3 cups diced cooked potatoes
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large cast-iron or other heavy skillet, cook the sausage over medium heat until no longer pink; drain. Add the onion, carrots and green pepper; cook until tender. Stir in the potatoes, salt and pepper. Reduce heat; cook and stir until lightly browned and heated through, about 20 minutes.

4 tablespoons canola or vegetable oil, divided
3/4 (1-pound) package Jimmy Dean Premium Pork Sausage
4 cups frozen hash brown potatoes, thawed
½ cup diced white onion
1 cup diced green bell pepper
2 teaspoons salt
1 teaspoon ground black pepper
4 fried eggs
1 avocado, sliced

Steps:

  • In a large skillet, heat 1 tablespoon of oil over medium-high heat for about 30 seconds. Add Jimmy Dean sausage and cook for 8 to 10 minutes until browned, stirring frequently to break up the sausage into small pieces, then drain. Remove the sausage and set aside.
  • In the same skillet, heat the remaining oil for 30 seconds. Carefully add the potatoes and fry until they begin to turn golden brown, 10 to 15 minutes. Stir occasionally so that the potatoes do not stick or burn.
  • Add onions, peppers, salt, and pepper, and cook for an additional 5 minutes. Add the sausage and stir well.
  • Serve with the fried eggs and avocado slices on top to get more nutrition from the meal.

AIDELL'S SAUSAGE HASH

A recipe that I found on the label of Aidell's cajun style andouille sausage. If you can't find Aidell's sausage any pre-cooked sausage would work. Also, if you don't have red potatoes, you can use any that you have on hand (but it is better with red potatoes instead of white potatoes). This makes four hearty servings.

1/2 cup green bell pepper, chopped into a 1/4-inch dice
1/4 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon cayenne
1/4 cup green onion, finely chopped

Steps:

  • Over medium heat, sauté the potatoes and onions in butter for 10-15 minutes, stirring occasionally.
  • Add the sausage, bell peppers, salt, black pepper and cayenne, and continue frying until the sausage is browned, about 5 minutes.
  • Add more salt and pepper to taste and serve garnished with green onions.

2 cups potatoes, cubed
1 onion, chopped
1 cup red pepper, chopped

3 garlic cloves, chopped
1 tablespoon olive oil
1 teaspoon black pepper, ground
1 tablespoon italian seasoning
1/4 teaspoon crushed red pepper flakes

Steps:

  • Begin my heating olive oil in a very large pan over medium-high heat. Crumble sausage into pan and brown completely.
  • Add potatoes and onion, cooking approximately 10-15 minutes and stirring frequently.
  • Add peppers and cook an additional 5 minutes occasionally. Potatoes and vegetables should begin to brown.
  • Add garlic and zucchini. Cook an additional 5 minutes until zucchini is just tender.
  • Season with pepper, Italian seasoning, red pepper flakes, and salt.
  • Top with Parmesan if desired.

450g white potatoes , peeled and cut into 2cm cubes
30g butter
olive oil , for frying
2 small Cox's apples , cored and cut into wedges
4 herby pork sausages , cut into chunks
2 tsp wholegrain mustard
3 thyme sprigs , leaves picked
watercress salad , to serve

Steps:

  • Bring a large pan of salted water to the boil. Add the potatoes and cook for 4 mins. Drain and leave to steam dry in a colander.
  • Heat half the butter and 1 tbsp olive oil in a large frying pan or shallow casserole dish over a medium-high heat. Add the apple wedges and fry on each side for 5 mins or until golden brown and starting to caramelise. Remove with a slotted spoon and set aside on a plate.
  • In the same pan, heat the remaining butter and a little more oil over a medium heat and add the potatoes and sausage chunks. Fry for 10-15 mins, turning every so often until the potatoes and sausage are crisp and golden brown. Season to taste. Stir through the mustard and the apple wedges, then scatter over some thyme leaves, and serve with watercress salad.

1 tbsp olive oil
6 plump sausages
6 cooked potatoes , sliced
350g cooked, sliced leeks (or broccoli or cabbage)
1 tbsp creamed horseradish sauce, more if you want to heat things up
100g mature chedder or gruyère , grated

Steps:

  • Heat the oil in a large heavy-based frying pan. Add the sausages and fry for 8-10 minutes until well browned. Remove the sausages, then slice them on the diagonal and set aside.
  • Turn the heat to high, then add the potatoes and leeks and give them a good stir. Continue to cook on a fairly high heat until the potatoes begin to brown and turn crisp. Toss the sausage slices back in along with the creamed horseradish and heat for a further 2-3 minutes. Take the pan off the heat, sprinkle in the cheese, season well and gently stir to combine.

Steps:

  • Peel the potatoes (if necessary) and chop into cubes. Chop the bacon and sausage.
  • Fry bacon and then onions in the bacon fat.
  • Add chopped sausage and fry until it's browned slightly, move to the side of the pan.
  • Fry the potatoes in the middle of the pan until brown, add white pepper. Mix everything.
  • Add in eggs, fry without stirring until the whites have solidified.
  • Serve with pickles.

1 1/2 lbs bulk italian sausage meat (spicy or mild)
1 (2 lb) bag frozen hash browns, thawed (do not use the shredded frozen hash browns)
1 (10 3/4 ounce) can cream of mushroom soup, undiluted
2 cups sour cream
1/2 cup melted butter
1/4 cup milk
1 teaspoon garlic powder
1/2 teaspoon seasoning salt
1 teaspoon fresh ground black pepper (or to taste)
1 pinch cayenne pepper (optional or to taste)
1 small onion, chopped
2 cups grated cheddar cheese, divided (can use more if desired)

Steps:

  • Set oven to 350 degrees F.
  • Grease a 13 x 9-inch baking dish.
  • In a skillet cook the bulk sausage meat until browned; set aside (if using ground beef cook beef for extra flavor brown with a chopped onion and 1-2 tablespoons fresh minced garlic).
  • In a bowl combine soup with sour cream, melted butter, milk, garlic powder, seasoned salt, black pepper and cayenne; mix vigorously until well combined.
  • Mix in onion, hash browns, and 1 to 1-1/2 cups cheddar cheese.
  • Spread just under half of the hash brown mixture into the bottom of the pan.
  • Sprinkle the cooked sausage mixture over hash brown mixture.
  • Spoon the remaining hash brown mixture over the sausage (does not have to cover completely).
  • Bake uncovered for about 40-45 minutes.
  • Sprinkle the remaining 1 cup grated cheddar over the top, then place back in oven for about 2-3 minutes to melt the cheese.
