THE BEST GARLIC BREAD
We went very classic with this garlic bread recipe-lots of butter and lots of garlic loaded onto warm, soft and pillowy French bread. You could make a light meal by rounding it out with a crisp green salad. Or serve it our favorite way-alongside your favorite red-sauce pasta.

Steps:
- Arrange a rack in the center of oven and preheat to 450 degrees F.
- Melt the butter in a small skillet over medium heat. Add the garlic and cook, stirring occasionally, until the butter is golden and the garlic is very fragrant, about 3 minutes.
- Slice the bread in half lengthwise. Liberally brush the crust with the garlic butter. Turn the bread cut-side up. Slice each loaf crosswise at 2-inch intervals without cutting all the way through, making "pull-apart" garlic bread. Liberally brush the cut sides of the bread with more garlic butter, spreading any remaining garlic evenly over top. You should use all the garlic butter. Carefully transfer the bread to a rimmed baking sheet.
- Sprinkle the loaves with the Parmesan and a pinch of salt and bake until the edges of the bread are a deep golden brown, 10 to 15 minutes. Top with the parsley. Serve warm.

Steps:
- Preheat oven to 350.
- Take a piece of foil and place whole garlic cloves in it, coating with a generous amount of olive oil.
- Wrap tightly.
- Bake until done, 20 min to 1/2 hour.
- Cloves will be done when sweet smelling, soft and golden brown.
- Split bread lengthwise.
- Remove excess dough.
- Mash roasted garlic with all other ingredients except cheeses.
- Spread cut surfaces of bread with butter mixture.
- Sprinkle with parmesan and layer bottom half with mozzarella.
- Press halves together and wrap tightly in foil.
- Bake at 350 degrees until outer crust is crispy and cheese is melted, about 15 minutes.
- Let cool slightly and cut into thick vertical slices.
- I like it just as it is, crispy outside, moist and chewy (and slightly saturated!) inside, but you could bake this open faced on a cookie sheet for a crisper texture.
- If you do this, put mozzarella on both sides.
- You can make the garlic butter ahead of time and refrigerate it.
- It's also to die for melted over hot pasta!

MOST DELICIOUS GARLIC CHEESE BREAD
This recipe is not going to help me keep my girlish figure, but it is soooo delicious! You can adjust the ingredient amounts to your liking and make it your own. I've always wondered why my garlic cheese bread at home never tasted quite as good as it does at a restaurant. I think it's the mayonnaise and the freshly minced garlic.

Steps:
- Slice or halve the bread and brush one side of slices, or cut side of halves, with olive oil.
- Place the bread under the broiler until it starts to look toasted.
- Remove.
- Mix the garlic, mayonnaise, Parmesan, and salt together.
- Spread over the bread.
- Place the bread back under the broiler until the tops are nice and bubbly and beginning to brown.
- Garnish with parsley flakes (or not).

- Heat 1 tablespoon of the olive oil in a skillet over low heat. Add garlic; cook and stir for a few minutes until fragrant.

AMAZING GARLIC BREAD
I've tried to copy the garlic bread from a neighborhood bakery back home, but I can't come close to the quality of bread that they bake. My grandmother and uncles would always buy 2 half loaves each Sunday morning, one for the ride home and one for Sunday lunch. I use fresh baked French loaves or a chewy Italian loaf.

- The trick with this recipe is to infuse the oil with the garlic. There are a couple of ways to accomplish this.
- Using a small skillet and over medium-low heat, heat the olive oil, butter, and garlic until butter melts. Make sure you add garlic to the cold pan and let it warm along with the oil and butter.
- Once butter is melted, reduce heat to low and let the oil/butter/garlic mixture cook for another 5 minutes.
- Make sure you do not brown the garlic. If it starts to brown, remove from heat alltogether and let sit for 5 minutes off-heat to further infuse the oil.
- You can also microwave the oil, butter, and garlic for 45 seconds to a minute to speed this up, but this doesn't give the mixture near the flavor as the skillet method.
- While oil infuses, cut loaf of bread length-wise so you have two long halves.
- Brush or spoon oil onto the cut-sides of the bread, making sure to cover all the way to the edges. It's okay to have some of the garlic from the mixture added as well, in fact it's preferred.
- Sprinkle the dry seasons on the loaves (basil, thyme, and chili).
- Salt and pepper the loaves.
- Spread the parm or romano cheese on both loaves (I've even used some mozzarela for the string effect).
- Bake incovered at 350 degress for 20 minutes or until cheese is completely melted and begins to brown.
- Slice in big chuncks and serve alongside your favorite pasta or lasagna.
