SPAGHETTI WITH SARDINES

This storecupboard supper is super quick and superhealthy to boot

400g spaghetti
1 tbsp olive oil
2 garlic cloves , crushed
pinch chilli flakes
227g can chopped tomato
x cans skinless and boneless sardines in tomato sauce
100g pitted black olives , roughly chopped
1 tbsp capers , drained
small handful parsley , chopped

Steps:

  • Cook the spaghetti in a large pan of boiling salted water according to pack instructions. Meanwhile, make the sauce. Heat the oil in a medium pan and cook the garlic for 1 min. Add the chilli flakes, tomatoes and sardines, breaking up roughly with a wooden spoon. Heat for 2-3 mins, then stir in the olives, capers and most of the parsley. Mix well to combine.
  • Drain the pasta, reserving a couple of tbsp of the water. Add the pasta to the sauce and mix well, adding the reserved water if the sauce is a little thick. Divide between 4 bowls and sprinkle with the remaining parsley.

100g wholewheat spaghetti
2 large ripe tomatoes , finely chopped
1 red onion , very finely chopped
15g pitted black Kalamata olive , quartered
½ tsp finely chopped red chilli
zest and juice ½ lemon , to taste
4 tbsp shredded basil or 1 tsp chopped fresh oregano
2 x 120g cans sardines in olive oil, drained, oil reserved (optional)

Steps:

  • Boil the spaghetti following pack instructions. Meanwhile, mix the tomatoes with the onion, olives, chilli, lemon zest and basil or oregano. Heat the sardines either in the microwave or in a pan.
  • Drain the pasta, return to the pan and toss well with the tomato mixture. Add the sardines in chunky pieces. Season with lemon juice, pepper, and a little oil from the can, if you like.

400g spaghetti
1 tbsp olive oil
1 onion , sliced
1 garlic clove , crushed
2 tbsp caper
1 x 400g can chopped tomato with paprika (we used Waitrose own brand)
100g frozen roasted pepper
16 black olives , pitted
parmesan , to serve, optional

Steps:

  • Cook the pasta according to pack instructions. Meanwhile, heat the oil in a large frying pan, then fry the onion over a medium heat for 5 mins until soft. Add the garlic and cook for another min.
  • Rinse the capers and add to the pan with the tomatoes, peppers and olives. Check for seasoning, then cook for a few mins more until heated through. Drain the pasta and toss with the sauce. Serve with lots of grated parmesan, if you like.

  • Cook the spaghetti according to pack instructions. Heat the oil in a frying pan and fry the garlic with the fennel seeds and chilli flakes, if using, for a minute, then add the chopped tomatoes with a splash of water. Simmer for 7-10 minutes until thickened and saucy. Season, then stir in the sardines and capers. Break the fish up a little, but you still want chunks.
  • Drain the spaghetti, reserving a cupful of water. Add the pasta to the tomato pan with a splash of the water. Toss everything together to coat the pasta in the sauce, then scatter with the chopped herbs.
