SMOKY COLLARD GREENS

Smoky Collard Greens image

Provided by Claire Robinson

Categories     side-dish

Time 45m

Yield 4 servings

Number Of Ingredients 7

3 tablespoons olive oil
1 medium yellow onion, sliced
1 teaspoon sweet smoked paprika
1/4 teaspoon cayenne pepper
Kosher salt and freshly cracked black pepper
1/2 cup water
2 1/2 pounds collard or mustard greens, about 2 large bunches, woody stems removed and washed

Steps:

  • Heat the oil in a large Dutch oven over medium-high heat. Add the onions, paprika, and cayenne and season with salt and pepper, to taste. Cook stirring occasionally, until the onions are softened, about 5 minutes. Add 1/2 cup water to the pot and once the water is simmering, add the greens (you may have to pack them in). Season generously with salt and pepper, cover with a lid and cook for 10 minutes. Remove the lid, toss the greens well with tongs, and continue simmering on low heat, until the greens are completely cooked and nearly all of the liquid has evaporated, about 10 minutes more.
  • Taste and adjust seasoning. Transfer to a serving bowl and serve warm.

VEGAN SOUTHERN COLLARD GREENS

Vegan Southern Collard Greens image

Favorite family recipe for collard greens made WITHOUT chicken broth and smoked meat. It's healthier but don't expect to have to sacrifice taste!

Provided by Divas Can Cook

Time 1h20m

Number Of Ingredients 8

1/2 small yellow onion (diced)
3 cloves garlic (minced)
2-3 cups vegetable broth (I only used 2 cups)
1 teaspoon applewood smoked salt (or any kind of smoked salt)
1/2 teaspoon red pepper flakes
2 lbs collard greens
black pepper
hot sauce

Steps:

  • Coat a large deep skillet or pot with vegetable oil.
  • Saute onions until almost tender over medium heat and then add in garlic.
  • Cook until onion and garlic are fragrant, about 2-3 minutes.
  • Add in vegetable broth.
  • Season broth with smoked salt and red pepper flakes.
  • Taste and adjust the seasonings if needed. Make sure it's to your liking because this is how your greens will taste.
  • Bring to a simmer and reduce heat.
  • Add in the greens. Green will wilt down as they cook.
  • Simmer for 1 hr to 1 hr 30 mins. Do not boil. Add more vegetable broth if needed. May need more or less time so be sure to check them after 30-45 minutes. When done, greens will be dark green, tender and will not have a raw taste.
  • Add in more smoked salt, black pepper, red pepper flakes and hot sauce, if desired. ( I always do!)
  • Enjoy!
  • Add hot sauce or vinegar if desired.

EASY VEGETARIAN COLLARD GREENS

Easy Vegetarian Collard Greens image

This is a wonderful way to make delicious, tender, vegan collard greens. The smoked sweet paprika in these greens imparts a wonderful smoky flavor without the traditional but decidedly non-kosher and non-vegetarian smoked ham hock. Make sure the paprika you buy is smoked, as the regular kind won't give you that smoky flavor. Whatever you do, don't discard the pot liquor! It is full of the nutrients and flavor that have leached out of the greens during cooking, and makes a very full-bodied and rich broth you can use as a replacement for water when making rice (my favorite), as the base for soups or stews, or in any other savory dish that requires broth or water.

Categories     Collard Greens

Time 1h5m

Yield 10 serving(s)

Number Of Ingredients 8

2 lbs collard greens
4 -5 garlic cloves, minced
1 large onion, chopped
3 cups vegetable stock
1 teaspoon salt (to taste)
1 teaspoon smoked sweet paprika
1/2 cup apple cider vinegar
hot sauce (optional) or red pepper flakes (optional)

Steps:

  • Wash greens well, submerging in a sink full of cold water to remove any dirt and grit. Drain well. Cut off the stems right where the leaf starts. Stack about 5-8 leaves on top of eachother, then roll lengthwise. Cut rolled up leaves into 1" slices widthwise. Repeat until all the greens are done, and add to a large pot.
  • Add all other ingredients. Cover and bring to a boil over high heat, then reduce heat to a simmer. Simmer for 45 minutes or until greens are extremely tender. Serve hot, using a slotted spoon to drain the liquid from the greens.

BRAISED COLLARD GREENS

Braised Collard Greens image

Adding hard cider to smoky ham stock (a trick from the recipe developer Grace Parisi) builds a foundation of tangy, tart flavors in this recipe. It takes about 2 hours for the hocks to become tender, but once your kitchen fills with the smell of ham bubbling away in a pot of vinegary cider, you'll never want that slow simmer to end. If you like really sour collards, add a splash of apple cider vinegar once the greens have finished braising.

Provided by Sarah Jampel

Categories     vegetables, side dish

Time 3h

Yield 8 servings

Number Of Ingredients 13

3 tablespoons olive oil
2 pounds smoked ham hocks
2 onions, thinly sliced into half-moons
2 garlic cloves, thinly sliced
1 teaspoon smoked paprika
1 teaspoon cumin
1 teaspoon cayenne
1 teaspoon kosher salt, plus more to taste
1 1/2 teaspoons light brown sugar
1 1/2 cups chicken stock
1 (650-milliliter/22-ounce) bottle hard apple cider (about 2 3/4 cups)
2 pounds collard greens (about 3 to 4 bunches), large stems removed, washed and cut into 1/4-inch ribbons
Hot sauce, for serving (optional)

Steps:

  • Heat the olive oil in a large, heavy-bottomed pot with a lid over medium-high. When hot, add ham hocks. When they're sizzling, flip and crisp the other side.
  • Add the onions and stir so they are coated in the fat and nestled under and around the hocks. Turn the heat down to medium and cook, stirring occasionally, until onions are soft, 6 to 8 minutes.
  • Add the garlic, paprika, cumin, cayenne, salt and brown sugar, and stir until fragrant, about 2 minutes.
  • Pour in the chicken stock and hard cider and bring to a boil. Reduce heat to low, cover, and simmer for 2 hours, until the ham hocks are very tender.
  • Remove the ham hocks and allow to cool slightly. Skim the fat off the surface of the stock. When cool enough to handle, remove the meat from the bone (discard the fat and the skin) and chop into 1/4- to 1/2-inch pieces and set aside.
  • Bring the stock back to a boil, then add the greens in large handfuls, pressing them down to wilt in the hot stock before adding more leaves. Add the reserved ham hock meat.
  • Reduce heat to low, cover the pot, and simmer for 25 to 30 minutes, until the greens are silky and tender. Season with salt and serve with hot sauce and a splash of apple cider vinegar, if desired.

BUTTERMILK FRIED TOFU WITH SMOKY COLLARD GREENS

Dipping tofu in buttermilk makes the coating stick for a crispy pan-fried tofu, reminiscent of fried chicken. Spicing up the collards with paprika coats them with smoky flavor while keeping this dish vegetarian. And this quick, easy and healthy dinner comes together in just 25 minutes, so it's great for busy weeknights.

Categories     Healthy Tofu Recipes

Time 25m

Number Of Ingredients 13

6 tablespoons grapeseed oil or canola oil, divided
1 (1 pound) package chopped collards
½ cup water
1 tablespoon cider vinegar
½ teaspoon smoked paprika
¾ teaspoon salt, divided
1 (14 to 16 ounce) package extra-firm tofu, drained
1 cup buttermilk
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon cayenne pepper
1 cup whole-wheat panko
Hot (spicy) honey for serving

Steps:

  • Heat 1 tablespoon oil in a large pot over medium heat. Add collards and water; cover and cook, stirring occasionally, until soft and wilted, about 8 minutes. Remove from heat and stir in vinegar, paprika and 1/2 teaspoon salt. Cover to keep warm.
  • Meanwhile, cut tofu crosswise into 8 equal pieces. Blot with paper towels to remove excess water. Whisk buttermilk, garlic powder, onion powder and cayenne in a 7-by-11-inch baking dish. Add the tofu and turn to coat. Let stand, turning once, for 5 minutes.
  • Place panko on a plate. Dredge the tofu in the panko, coating both sides.
  • Heat 3 tablespoons oil in a large nonstick skillet over medium-high heat. Add the tofu and cook until brown and crispy on one side, 4 to 5 minutes. Turn the tofu over and drizzle in the remaining 2 tablespoons oil. Cook until browned on the other side, about 4 minutes more.
  • Sprinkle the tofu with the remaining 1/4 teaspoon salt and serve with the collards and hot honey, if desired.

VEGAN COLLARD GREENS

Vegan Collard Greens image

Since becoming a vegetarian, there are somethings I crave often, and collard greens are one of those things. This vegan spin on a soul food classic that is typically made with hamhocks or bacon but these are pretty close to the way my mom makes hers, and honestly, I don't miss the meat in them. It can be used as a side dish or eaten as a meal on its own.

Provided by Cherise B.

Categories     Collard Greens

Time 3h50m

Yield 4 serving(s)

Number Of Ingredients 10

2 bunches collard greens
2 vegan bouillon cubes
1/2 white onion (or yellow)
1 garlic clove (crushed)
1 large tomatoes
1/2 jalapeno
1 tablespoon white vinegar (up to 1/4 cup)
6 cups water
1 tablespoon extra virgin olive oil
1 pinch salt, to taste

Steps:

  • Cut the stem off and devein each of the leaves then coarsely chop and rinse them thoroughly; set aside for now. Heat the oil in a pan. Chop the onion and add it to the pan along with the crushed garlic and cook until the onions are translucent. Add the greens to the pan just until the begin to wilt. In a separate container (I used a glass measuring cup) add the broth cubes along with two cups of hot water; hot enough to dissolve the cubes then whisk until dissolved. Place the greens mixture, along with the broth, and remaining ingredients in a crock pot on high for 3-4 hours.
  • If you don't have a crockpot this can easily be done on the stove using any pot as long as it stays covered for the duration of the cooking period. Season with salt as desired and enjoy.
  • *Note: the vinegar states 1 tbsp - 1/4 cup, this is just based on personal preference. I would start with 1 tbsp and add more if you feel like it isn't enough. The vegan bouillon cubes I used were Not Chick'n by Edward & Sons. They were purchased at Sprouts for relatively cheap, under $3, but there is also a brand called Imagine that makes a vegetarian No Chicken Broth in liquid form which I'm sure would work just fine. You would use 2 cups of that broth rather than dissolving the cubes into 2 cups of water.

  • Start by cleaning the collard greens. To do so, fill your sink or a large container with water. Add the collard greens and allow to soak for 5-10 minutes, to enable the dirt to settle at the bottom. You can also add about a third of a cup of vinegar to the water (this helps get rid of any small insects that may be hiding behind the leaves).Remove the leaves from the sink making sure they are all clean. You can clean any remaining dirt under running tap water.
  • First, separate the hard stems from the leaves. You can pull-off the leaves or simply use a knife to cut the stems off. Once you have a pile of collard green leaves (enough to fit in one hand), lay the leaves flat on a chopping board and use your knife to slice the collard greens into thin ribbons.
  • Press the SAUTE button on the Instant Pot and set it to saute for 4-5 minutes. Add olive oil to the inner pot of the Instant Pot and allow to heat. Stir in the sliced onion and fry until translucent. Next, stir in the garlic and fry until fragrant.
  • Pour in the vegetable broth, apple cider vinegar and honey and stir. Next, add in the sliced collard greens to the Instant Pot and mix.

Bring to a boil, turn down to low or to a low simmer and cook for 45 minutes to one hour, uncovered. The peas should be tender with just a slight tooth, not mushy. Add the worcestershire, and liquid smoke. Taste for seasoning adjustment.
  • In a large stockpot, bring the broth, liquid smoke, tamari sauce, and garlic to a boil. Add the collard greens, stir thoroughly using tongs, lid the pot and cook on med-low for between 10-15 minutes. Stir the greens at least twice while they cook down and become tender. Their color will darken a bit too. Add the apple cider vinegar and pinch of red pepper flakes. Taste for seasoning adjustment (add salt if needed).
  • In a medium saucepot bring water and salt to a boil. Turn down to low and whisk in the grits. Cook on low, covered, for 5 minutes. Adjust seasoning to taste. Stir in the cheese OR the nutritional yeast***. Grits can dry out pretty quick, so if needed, add a TBS of water at a time and stir after they're done cooking. Lid to keep warm.

  • In a large pot, cook the bacon on medium heat until crisp, turning once. Remove the bacon from the pot, leaving in the grease.
  • Add the garlic and cook while stirring for 30 seconds. Add the greens to the pot and cover with an inch of water. Chop the bacon and add it to the pot, along with the salt and vinegar.
  • Bring the pot to a boil then turn the heat down to low. Simmer uncovered for 1 1/2 hours or until the greens are slick and tender. Check on the pot occasionally and if the liquid gets too low, add more water. Taste the pot liquor when done and add more salt if desired.

  • Fill up a clean sink halfway with cool water. Add 2 Tbsp of white vinegar. Put the whole collard leaves into the water, stir them for a couple minutes with your hands or a big spoon - this removes any of the sand or dirt that may have stuck to the leaves.
  • Once the leaves are clean, take them out and remove the thick central stem: stack a few leaves on top of each other with stems aligned, then cut it out with a sharp knife.
  • After the stems are removed, chop all of the leaves into 1-inch squares or strips. Collards will wilt quite a bit during cooking, so there's no need to cut them smaller.
  • Spray the bowl of your slow cooker lightly with cooking spray, add all of the ingredients except the finishing ones, lightly mix and cover with a lid.
