1 1/2 cups firmly packed light brown sugar
1 cup unsalted butter
2 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon fine salt
2 large eggs
1 teaspoon vanilla extract
About 1 1/2 cups butterscotch, semisweet chocolate, peanut butter, or white chocolate chips, optional

Steps:

  • Preheat the oven to 375 degrees F. Butter and flour a 9 by 13-inch glass baking dish.
  • Put the sugar in a large bowl. Melt the butter in a small skillet or in the microwave in a glass measuring cup. Stir the butter into the sugar until smooth, cool to room temperature.
  • Meanwhile, in another medium bowl, whisk the flour, baking soda, and salt together.
  • Beat the eggs and vanilla into the sugar mixture. Add the flour mixture a bit at a time and mix until a smooth thick batter forms. Fold in the chips, as desired.
  • Spoon the batter to the prepared dish and spread to evenly fill the dish. Bake until the blondies are light brown around the edges and a toothpick inserted in the center comes out clean, about 20 to 25 minutes.
  • Remove from the oven and let cool slightly. Invert onto a rack and cool completely. Cut into squares and serve.

2 cups unbleached all-purpose flour
1 teaspoon salt
3/4 cup unsalted butter, softened to room temperature
3/4 cup sugar
3/4 cup packed brown sugar
3 eggs
2 teaspoons pure vanilla extract
1 cup semi-sweet chocolate chips
1 cup butterscotch chips
1 cup coarsely chopped pecans

Steps:

  • Position a rack in the center of the oven; preheat oven to 325°.
  • Grease a 13 x 9 inch baking pan or heatproof glass dish.
  • Line the pan with parchment paper, leaving about 1 inch of paper overhanging the two long sides.
  • In a bowl, whisk together the flour and salt to blend; set aside.
  • In the bowl of an electric mixer set on medium speed, cream the butter, sugar, and brown sugar.
  • Beat in the eggs one at a time, blending thoroughly and stopping to scrape down the sides of the bowl after each addition.
  • Mix in the vanilla.
  • Stir in the flour mixture until well combined.
  • Stir in 1/2 cup of the chocolate chips, 1/2 cup of the butterscotch chips, and 1/2 cup of the walnuts.
  • Spread the batter evenly in the prepared pan with the back of a spoon or a rubber spatula.
  • Sprinkle the remaining chocolate chips, butterscotch chips, and walnuts evenly over the top.
  • Bake for 30 minutes, or until a pick comes out clean.
  • Set the pan of a wire rack to cool for 15 minutes.
  • Grasp the edges of the parchment and carefully lift the blondies out of the pan.
  • Cut into bars.
