Oven-Roasted Vegetables image

This is an excellent side dish to almost any meal. It is healthy, and you can tailor it to fit any vegetables that are in season (grape tomatoes are good, but they do tend to explode, though). I find that this recipe is great for large groups, because, aside from the prep (a bunch of cutting and chopping), it is easy to make a lot of food with minimal effort. Be creative, and enjoy!

2 sweet potatoes, cubed
3 new potatoes, cubed
1 red onion, quartered and pieces separated
2 zucchini, sliced 1-inch thick
2 summer squash, sliced 1-inch thick
1 (8 ounce) bag baby carrots
8 ounces button mushrooms, ends of stems cut off
1 tablespoon fresh thyme, chopped (1 tsp. dried)
2 tablespoons fresh rosemary, chopped (2 tsp. dried)
1 teaspoon dried basil (optional)
3 teaspoons garlic, minced
1/4 cup olive oil
2 tablespoons balsamic vinegar
salt (a shake or two)
black pepper (a shake or two)

Steps:

  • Chop all the vegetables, as specified in the ingredient list.
  • Preheat oven to 450 degrees F.
  • Mix thyme, rosemary, basil (if using), garlic, olive oil, balsamic vinegar, salt, and pepper together in a bowl; set aside.
  • Put the chopped vegetables in a large bowl, then pour the oil/vinegar/herb mixture over the vegetables.
  • Stir until all the vegetables are coated evenly.
  • Line a baking sheet or roasting pan tray with aluminum foil, and lightly spray with cooking spray.
  • Spread the vegetables evenly on the pan and pour the remaining oil/vinegar/herb mixture on top (you can also put additional salt and/or pepper on now, if you want to).
  • Roast for 40 minutes, stirring every 15-20 minutes, or until potatoes are soft when poked with a fork.

5 cups broccoli florets
1 pound fresh asparagus, trimmed and halved
4 medium carrots, cut into matchsticks
1 medium red bell pepper, cut into matchsticks
1 medium red onion, sliced and separated into rings
½ cup olive oil
3 tablespoons lemon juice
3 cloves garlic, minced
1 tablespoon dried rosemary, crushed
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine cauliflower, broccoli, asparagus, carrots, bell pepper, and onion in a large bowl.
  • Whisk olive oil, lemon juice, garlic, rosemary, salt, and pepper together in a small bowl until blended. Drizzle over vegetables and toss to coat. Transfer to 2 rimmed baking sheets.
  • Roast in the preheated oven, tossing occasionally, until tender, 20 to 25 minutes.

1 (1 1/4 ounce) envelope Lipton Recipe Secrets savory herb with garlic soup mix
1 1/2 lbs fresh mixed vegetables (I typically use a combination of sliced zucchini, asparagus, red bell peppers, whole mushrooms, and)
1 -2 tablespoon olive oil or 1 -2 tablespoon vegetable oil

Steps:

  • Preheat oven to 450.
  • In large plastic bag or bowl, add all ingredients.
  • Close bag and shake or toss in a bowl until vegetables are evenly coated.
  • Empty vegetables into a 9X13 baking or roasting pan; discard plastic bag.
  • Bake, stirring once, 20 minutes or until vegetables are tender.

1 large zucchini
2 yellow squash
1 medium red onion
3 -4 carrots
1/4 cup extra virgin olive oil
4 garlic cloves, Pressed
1 tablespoon rosemary
1 tablespoon oregano
sea salt
pepper
1 dash nutmeg

Steps:

  • Preheat oven to 425.
  • Quarter and Chop Zucchini, Squash and Red Onion into 1/2 inch pieces. Peel Carrots and slice on a diagonal into 1/2 inch chunks. Place all vegetables in a roasting pan. Salt and pepper liberally.
  • In a bowl, combine olive oil, garlic, rosemary, oregano and nutmeg. Whisk until combined. Pour over vegetables in pan and stir them around until all the vegetables are completely coated with the olive oil mixture.
  • Cover pan in foil. Roast at 425 for 30 minutes Remove foil and roast for an additional 10 minutes.

1 large onion, cut into 1-inch pieces, or more to taste

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Spray a baking pan with cooking spray.

1 lb asparagus spear, trimmed and cut into 4-inch lengths (about 16 spears)
12 ounces small red potatoes, cut into 1/4-inch thick slices (about 10 potatoes)
2 medium zucchini, cut into 1/2-inch thick rounds
8 ounces baby carrots
1 1/4 cups grape tomatoes
1 small onion, thinly sliced (about 1 cup)
5 tablespoons prepared sun-dried tomato pesto, plus
1 teaspoon prepared sun-dried tomato pesto
1 tablespoon lemon juice
1 teaspoon basil
1 1/2 teaspoons oregano
1/4 teaspoon hot pepper sauce (Tabasco)
1/2 cup crumbled feta cheese (I use a little more because it's just good that way (4 oz.)

Steps:

  • Place large baking sheet ( I just use two cookie pans) in oven, and preheat to 450°F Cut 4 20-inch sheets of heavy-duty foil. Combine all ingredients except cheese in very large bowl. Toss to coat, and season with salt and pepper.
  • Divide vegetable mixture among foil sheets. Sprinkle cheese over top. Fold foil over, and crimp edges to seal.
  • Arrange packets in single layer on heated baking sheet. Reduce oven to 400°F and bake 30 to 45 minutes or until vegetables are tender. (Pierce packet with knife to test veggies). Let stand 5 minutes before serving.
  • To serve: Place packets on plates, slit tops, and fold back foil.

This is a variation on a vegetable recipe from "New Dieter's Cookbook" by Better Homes and Gardens. You can add Zucchini as I did, however, the zucchini cooks much faster so will not hold its shape. I still liked the added zucchini though. You can also add a little creol seasoning to give a zip. Makes 4 VERY generous servings!!
