Time 25m

Number Of Ingredients 10

8 large eggs
1/3 cup whole milk or milk of choice
Pinch of fine sea salt
Freshly ground black pepper
1 tablespoon unsalted butter
3 cups baby spinach, roughly chopped
4 ounces goat cheese, crumbled (about 1 cup)
1/2 cup chopped green onion, mostly green parts
1/3 cup oil-packed sun-dried tomatoes, rinsed and roughly chopped
Optional, for serving: flaky sea salt for sprinkling on top, toasted whole-grain bread

Steps:

  • Crack the eggs into a large bowl. Add the milk, salt and about 10 twists of black pepper. Whisk until the mixture is thoroughly combined and pure yellow. Be sure to have your remaining ingredients prepped and ready, because this recipe comes together quickly once you start cooking.
  • Warm a medium skillet over medium heat. Add the butter and let it melt.
  • Add the spinach and cook, stirring with a silicone or rubber spatula, until the spinach is wilted and bright green, about 1 to 2 minutes.
  • Pour the eggs into the skillet and reduce the heat to medium-low. Use your spatula to gently stir and push the eggs around the skillet until the eggs are clumpy but still slightly wet, about 3 to 5 minutes.
  • Remove the skillet from the heat. Add the goat cheese, green onion and sun-dried tomatoes, and gently stir to combine. Divide the mixture into bowls. Sprinkle lightly with optional flaky sea salt, and serve with toast if you'd like. Serve promptly.

Time 5m

Yield 2 serving(s)

Number Of Ingredients 8

4 large eggs
2 tablespoons milk
1 tablespoon cornstarch
kosher salt & freshly ground black pepper
2 tablespoons butter
1 -2 tablespoon chopped herbs, such as dill, parsley or 1 -2 tablespoon chives
bacon, for serving (optional)
fruit, for serving (orange wedges) (optional)

Steps:

  • In a medium bowl, combine milk and cornstarch; whisk to combine. Add eggs, a pinch of salt and pepper, and whisk until well-combined.
  • In a medium nonstick skillet over medium heat, melt butter. When foaming subsides, add egg mixture. Let set, 15 seconds, and then, using a heat-proof rubber spatula, begin scraping the bottom and sides of the skillet in a continuous motion, gently folding the eggs to scramble. Remove skillet from heat when eggs begin looking fluffy and curdled but not entirely set, about 1-2 minutes; do not overcook. Continue folding and stirring for an additional 30 seconds off the heat.
  • Serve while eggs are hot and still slightly loose in places. Top with chopped herbs, season to taste with salt and pepper, and serve, with bacon, fruit, or on their own.

LIGHT & SIMPLE SPINACH SCRAMBLED EGGS WITH GOAT CHEESE

Light & Simple Spinach Scrambled Eggs With Goat Cheese image

I like to start the day with a flavorful and healthy breakfast. The best thing about this is it can be made in a matter of minutes.

Provided by AmateurCook

Categories     Breakfast

Time 5m

Yield 1 serving(s)

Number Of Ingredients 7

olive oil flavored cooking spray
1 full egg
2 egg whites
1 pinch dried garlic (to taste)
1 pinch black pepper (to taste)
1 1/2 cups fresh spinach leaves
3 tablespoons goat cheese

Steps:

  • Spray a pan with olive oil spray.
  • Crack one full egg into the pan, adding only the egg whites of 2 other eggs.
  • Sprinkle dried garlic and black pepper to taste (garlic salt can be added instead if you prefer that).
  • When the egg has just hardened on the bottom (the eggs on the top should still be in liquid form), scramble the eggs.
  • Squeeze any excess water from the spinach leaves and add them to the eggs. Let the spinach leaves cook until it's time to stir the scrambled eggs again.
  • Cook until the spinach leaves are wilted.
  • Add the goat cheese (you can use crumbles if you prefer) to the SIDE of the plate and use as a "dip". I find if you mix the goat cheese into the scrambled eggs, it dilutes the flavor of the goat cheese greatly.
  • Enjoy!

  • The first step is to get the oven pre-heated for the crispy prosciutto. Preheat to 425'F and line a baking sheet with parchment paperYou can lay the prosciutto out flat or form them in a half circle like I did. Bake for 10-15 minutes or until crispy (be careful not to burn) - remove from oven and let cool
  • Next add the eggs to a mixing bowl along with the milk and sea salt (I use nutpods) and whisk to combineMelt the ghee in a non-stick skillet over low heat and add in the egg mixture. Use a rubber spatula to gently move the eggs around the pan slowly as they cook (Cooking them slowly over low heat helps keep them rich and creamy)Once they are just cooked (about 5 minutes), remove from the heat and stir in the goat cheese and top with chivesServe alongside the crispy prosciutto and any other desired sides
