Super easy red skin mashed potatoes! These mashed potatoes are creamy, buttery, and rich. They come together in 30 minutes and are freezer-friendly.

2 pounds red skin potatoes
4 tablespoons unsalted butter
½ cup half and half, plus more if desired
Salt and pepper to taste
Chopped chives for garnish

Steps:

  • Scrub the potatoes clean and cut them into 1.5 inch chunks. Don't peel the potatoes.
  • In a medium pot, heat enough water to cover the potatoes and boil potatoes until tender, about 20-25 minutes. Drain the water and return potatoes to the pot.
  • In a medium bowl, microwave the half-and-half with the butter together for a few seconds, until warmed up and melted.
  • Mash the potatoes with a potato masher, adding the warmed up half-and-half and butter at the same time. Season with salt and pepper to taste. Garnish with chopped chives. Enjoy!

12 whole roasted garlic cloves
1/2 cup heavy cream
2 tablespoons butter
Salt and freshly-ground black pepper

Steps:

  • In a saucepan cover unpeeled potatoes with cold water and bring to a boil. Cook just until tender -- do not overcook or potatoes will be watery. Drain well, return pan with potatoes to low heat and shake to dry. Squeeze in garlic cloves, cream, butter, and salt and pepper to taste. Mash together with a potato masher until ingredients are combined but potatoes are still lumpy.

Thick, creamy, and buttery red skin mashed potatoes are so easy to make and don't require any peeling! The thin, tender skin on red potatoes adds nice texture and a pop of color. You'll love the incredible flavor that simple garlic infused butter adds to these red skin mashed potatoes!

3 pounds red skin potatoes, unpeeled and cut into 2" cubes
1/2 tablespoon + 1 teaspoon salt
2 garlic cloves, minced
6 tablespoons butter
1/2 cup milk ((whole or 2%))
1/2 cup heavy whipping cream
1/2 teaspoon black pepper
Optional garnish: fresh chopped chives

Steps:

  • Add the potatoes and 1/2 tablespoon of salt to a large pot and fill with enough water to cover the potatoes. Bring to a gentle boil and cook until the potatoes are fork tender, about 15-20 minutes.
  • When the potatoes are nearly done cooking, add the garlic, butter, milk and heavy whipping cream to a small saucepan. Bring to a gentle simmer over medium-low heat for about one minute (do not boil).
  • Drain the potatoes and return to the pot. Mash until mostly smooth. Pour in half of the garlic infused butter, milk and cream and mash until combined. Pour in the second half and sprinkle with 1 teaspoon of salt and 1/2 teaspoon black pepper; mash until desired consistency. Careful not to over mix the potatoes, or they can become sticky like glue.
  • Transfer to a serving bowl and garnish with more melted butter, flakey sea salt, black pepper and chives.

  • Cut potatoes into equal pieces. Add to pot filled with water. Swish around to release any dirt and excess starch. Drain potatoes in colander and rinse with fresh water. Add potatoes and fresh water back to pot.
  • Bring potatoes to a gentle boil over medium high to high heat. Depending on the size of your potatoes, they may take 10-25 minutes to cook through after they come to a boil. Once they look done check for tenderness. The best way to know if they are done is to pull one out and smash with a fork. Then taste it and see if it has any lumps. If so continue to boil until evenly tender.

  • Using hand held beaters that have not been turned on, manually mash the potatoes, mixing in the butter and seasonings. Taste mixture to see if it is well seasoned. If not adjust according to taste.
