ROASTED GARLIC DIP

2 heads garlic
1 tablespoon extra-virgin olive oil
4 ounces pancetta, finely chopped
One 16-ounce container sour cream
4 ounces cream cheese, at room temperature
1/2 cup chopped fresh dill
Kosher salt and freshly ground black pepper
Crackers, for serving
Preheat the oven to 350 degrees F.

Steps:

  • Cut the top third off each head of garlic so the cloves are exposed and wrap in foil. Roast the garlic until the cloves are very soft and golden, about 45 minutes. Cool slightly and then pop the cloves from the skins and finely chop.
  • Meanwhile, heat the oil in medium skillet over medium heat. Add the pancetta and cook, stirring occasionally, until crisp, about 8 minutes. Using a slotted spoon, transfer the pancetta to paper towels to drain.
  • Mix together the sour cream and cream cheese in a large bowl until smooth. Add the pancetta, chopped garlic, dill, 1 teaspoon salt and 1/2 teaspoon pepper and stir to combine. Serve with crackers.

This is the most amazing dip that is also wonderful spread on grilled steaks and burgers and also wonderful served on the side with raw veggies --- fresh garlic may be used, but be cautious only to use a small amount 1 teaspoon minced or less of fresh will do fine as it will overpower the other ingredients, I use about 1 tablespoon roasted for this, start by adding in a small amount at a time, and increase the amount of roasted garlic (fresh or roasted) as this dip gets stronger when left left to chill for the full 24 hours, so you might want to start with a small amount of garlic and add in more the following day if desired --- this is a dip I created years ago and still serve it today at get togethers it is the first to completey go so I always make a double batch --- gorgonzola cheese can be replaced with blue cheese for a milder flavor --- plan ahead this dip needs to chill 8-24 hours before using, you may adjust all ingredients to taste, if you prefer a more creamy dip increase the sour cream slightly, but start with the stated amounts, you will love this dip! :)

1 (8 ounce) package cream cheese, room temperature
1 cup blue cheese, finely crumbled (can use Roquefort in place of blue cheese)
1 cup mayonnaise (use mayo not salad dressing for this)
1 cup sour cream
2 -3 green onions, finely chopped (yellow onions can be used, but green is better)
1 tablespoon roasted garlic (1 teaspoon fresh minced garlic can be used in place of the roasted, start with stated amounts and ad)
1/2 teaspoon celery salt
1 -2 drop Tabasco sauce (or to taste)
black pepper

Steps:

  • Mix all ingredients in a medium size mixing bowl.
  • Using an elctric hand mixer mix until well blended.
  • Cover and chill for 8-24 hours or up to 3 days.

1 cup low-fat mayonnaise
1 cup low-fat sour cream
4 ounces Gorgonzola cheese, crumbled
1 tablespoon chopped fresh dill
1 clove garlic, peeled
salt and pepper to taste
2 teaspoons unflavored gelatin

Steps:

  • In a food processor, place low-fat mayonnaise, low-fat sour cream, Gorgonzola cheese, dill, garlic, salt and pepper. Blend until smooth. Sprinkle gelatin into mixture. Allow it to soften for approximately 5 minutes. Blend to mix in gelatin. Cover and chill in the refrigerator until serving.

This is a recipe from my Mom. She found it inside a crock she brought for storing garlic. She tried it at a joint Christmas party for her and my Dad's coworkers. It was a huge hit and I asked for it at every party for me afterwards. Hope you enjoy it and let me know what you think.

- 1 large bulb of elephant garlic
4-6 ounce(s) gorganzola cheese
3/4 cup(s) good mayo
1/2 tablespoon(s) olive oil, extra virgin

Steps:

  • Cut off the top of the garlic,
  • Place on a piece of foil and drizzle with olive oil until it is completely filled and starting to run down the side. Sprinkle with salt and pepper.
  • Wrap tightly and place on a cookie sheet and in the oven at 325 for 35 minutes until fragrant.
  • Remove from oven and let it cool. Peel off the outside of the bulb, and gently squeeze out each clove.
  • In a mixing bowl mix together the mayo and cheese to desired consistency. Stir in the garlic and refrigerate for a couple of hours. Serve with toasted baguette or your favorite crackers.

1 large head of garlic
1/2 cup olive oil
1 cup heavy cream
1 cup gorgonzola, crumbled
1 baguette

Steps:

  • Make garlic oil: Preheat oven to 450°F Wrap garlic head in foil and roast in middle of oven until tender, about 45 minutes.
  • Carefully unwrap garlic and cool. Horizontally halve garlic head and arrange, cut sides down, in a small bowl with oil. Let mixture stand, covered and chilled, 2 to 3 days to infuse oil with garlic flavor.
  • Preheat broiler.
  • In a saucepan boil cream, stirring occasionally, until reduced to about 1/2 cup. Add Gorgonzola and cook over low heat, stirring constantly, until cheese melts and sauce is smooth. Remove pan from heat and keep sauce warm, covered.
  • Horizontally halve baguette and arrange, cut sides up, on a baking sheet. Broil bread 2 to 3 inches from heat until golden. (If crust is soft, you may broil crust side of baguette as well.) Brush cut sides of baguette with garlic oil and season with salt. Cut baguette crosswise into 1-inch-thick slices.
  • Pour warm Gorgonzola sauce onto center of a large plate and arrange roasted garlic bread slices around sauce.

1/4 t. garlic, minced
1/4 t. dried thyme
1/3 c. crumbled Gorgonzola cheese

Steps:

  • Combine cream, garlic and thyme in a small saucepan; bring to a boil over medium-low heat. Add cheese and whisk until cheese melts. Reduce heat to low, stirring occasionally. Simmer gently, until it is reduced by half. Sauce will thicken as it reduces. Serve with warm Garlic Cheese Bread. Serves 6. Garlic Cheese Bread: 1/2 c. butter, softened 1/2 c. grated Parmesan cheese 1-1/2 t. garlic, minced 3/4 t. dried basil 3/4 t. dried oregano 1 loaf French bread, halved lengthwise In a small bowl, combine all ingredients except bread. 1/2 teaspoon fresh rosemary, minced

Steps:

  • Cut garlic crosswise in half and spread some oil on cut surface, wrap in foil.
  • Roast in 375°F oven about 45-50 minutes.
  • Till soft and golden.
  • Squeeze the meat out of the skins season with salt and pepper add enough oil to taste while using a fork to smash till smooth and creamy. Mix in rosemary.
  • Can be frozen.
  • Just bring to room temperature and mix with a fork.
  • Use on whatever you like or do like me and use on everything!

This is my favorite, favorite! It keeps much better when we use Gorgonzola that comes in a wedge. The pre-crumbled kind makes the dip runny after two days. You can also thin this into a dressing with a little more milk.

1/2 cup mayonnaise
1/2 cup sour cream
milk (enough to thin to the consistency you like)
1 garlic clove, minced fine
1/2 teaspoon onion powder (or you can use minced fresh onion)
1/2 teaspoon lemon juice
1 teaspoon sugar
1/2 cup gorgonzola (chunked or crumbled)
salt and pepper

Steps:

  • In a mixing bowl, using a whisk, stir the cream cheese until smooth.
  • Add the remaining ingredients, in order, stirring well before you add the gorgonzola and gently after (this keeps it nice and chunky).
  • Refrigerate for 30 minute before you adjust the seasonings to your liking. Serve with crackers or crudites.
