Baked Flounder with Lemon Garlic and ButterThis dish will only take you a total of 30 minutes so it's a great idea if you want a delicious taste that won't take all night. The lemon garlic and butter sauce add a freshness to the dish while still keeping it savory.

4 Tablespoons of melted butter
2 1/2 Tablespoons Lemon Juice
2 Teaspoons Garlic
3/4 Teaspoon Salt
1/4 Teaspoon Pepper
1/4 Teaspoon Onion Powder
1 Pound Flounder Fillets
3/4 Teaspoon Smoked Paprika

Steps:

  • Go ahead and preheat the oven to 325 degrees.
  • Grab a baking dish big enough for the fillets and start to butter the entire inside then set the pan aside.
  • Get a small bowl and whisk together your melted butter with garlic, lemon juice, onion powder, salt, and pepper until everything is thoroughly mixed together.
  • Pat your flounder filets with paper towels and place them evenly in the baking dish. Pour over the lemon garlic butter mixture and then sprinkle some smoked paprika on top of everything.
  • Bake the fillets in the oven for about 15-20 minutes depending on how thick your filets are or until the fish flakes easily with a fork. You can also use a thermometer to measure the internal temp. You want it to reach 140-145 degrees.
  • Remove your fish from the oven and garnish them with some fresh cut parsley and lemon wedges. The parsley is optional but it does give the fish a nice freshness and taste.
  • When it's ready, serve it with a side dish of your choice.

My variation on an already fantastic fish recipe. I just tweaked it to make it easier for myself. I'm all about ease when it comes to cooking these days.

2 pounds flounder fillets, rinsed and patted dry
¼ teaspoon salt
3 tablespoons lemon juice, divided
½ cup grated Parmesan cheese
¼ cup butter, melted
3 tablespoons mayonnaise
3 tablespoons chopped green onions

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Prepare a 9x13-inch baking dish with nonstick cooking spray.
  • Season both sides of flounder fillets with salt. Place into the prepared baking dish. Brush 1 tablespoon lemon juice over fillets.
  • Mix remaining lemon juice, Parmesan cheese, melted butter, mayonnaise, and green onions in a bowl; spoon over the fillets.
  • Bake flounder in preheated oven for 10 minutes. Switch oven to broil; broil fillets until the tops are just browned, 3 to 5 minutes.

4 skinless flounder-fillets
Salt and pepper, to taste
Flour, for dredging fish
2 tablespoons vegetable oil
3 tablespoons butter, divided
1 lemon, juiced
1 small bottle capers

Steps:

  • Wash fillets in cold water and pat dry. Sprinkle with salt and pepper. Dredge fillets in flour. Place oil and 2 tablespoons butter in flat, heavy-bottomed skillet and heat on medium-high until butter melts. Keeping heat at medium-high, cook fish on 1 side about 3 minutes (more or less, depending on size of fillets), until deep brown and crispy. Turn fish and cook on second side, about 3 minutes. Turn fish only once.
  • Remove fish to serving platter. Turn off heat. Into hot skillet, whisk in remaining 1 tablespoon butter. Add lemon juice. Pour in capers, liquid and all. Whisk. Pour thin sauce over fish fillets. serve at once.
