WILD RICE PILAF
Steps:
- Melt 2 tablespoons of the butter in a medium saucepan, add the onion, and cook over low heat for 5 to 10 minutes, until translucent. Add 5 cups of water, 2 teaspoons of salt, and the wild rice. Bring to a boil, reduce the heat to very low, and simmer, covered, for 50 minutes to 1 hour, until the rice is tender. Drain well.
- Place the drained rice in a bowl, add the remaining tablespoon of butter, the scallions, 1 1/2 teaspoons salt, and the pepper. Taste for seasonings and serve hot.
THANKSGIVING WILD RICE
Steps:
- 1. In a large sauce pan, combine wild rice, 4 cups of stock and salt, to taste. Bring to a boil over high heat. Reduce heat to maintain a gentle simmer, cover, and cook until tender, about 1 hour. Drain and transfer rice to a large bowl.
- 2. In a medium skillet, heat 1 tablespoon butter over medium heat and add sausage meat. Cook, breaking it up with a wooden spoon, until it is lightly browned, about 10 minutes. Drain off excess fat, and stir sausage into rice.
- 3. Heat 2 tablespoons of butter in skillet over medium-low heat. Add onions, and cook until golden, about 15 minutes. Add thyme and cook 2 minutes more. Stir into rice mixture.
- 4. Preheat oven to 350 degrees F. Melt remaining butter in skillet over medium heat and add mushrooms. Cook until wilted and lightly browned, about 10 minutes. Stir into rice with parsley and the remaining 3/4 cup of stock. Season with salt and pepper, to taste. Transfer to a 9- by 13-inch casserole dish, cover with foil, and bake until heated through about 30 minutes.

Drain off excess fat, and stir the sausage meat with the rice. In the same pan, heat 2 tablespoons of the butter over medium-low heat, add the onions, and cook until golden, about 15 minutes. Add the thyme and cook 2 minutes more. Stir the onion mixture with the rice. Preheat the oven to 350 degrees F. Melt the remaining butter in the same pan, over medium heat, and add the mushrooms. Cook until wilted and lightly browned, about 10 minutes. Add to the rice. Add the parsley and 3/4 cup of stock. Season the rice mixture with salt and pepper to taste. Transfer the mixture to a 9- x 13-inch casserole dish, cover with foil, and bake until heated through about 30 minutes. Serve.

Steps:
- Preheat oven to 350 degrees.
- Prepare rice according to package directions.
- Combine rice, turkey, mushrooms, carrot, broccoli and 1/2 cup swiss cheese in a 2-quart baking dish.
- Combine half and half, sherry and pepper.
- Fold into turkey mixture.
- Cover with remaining swiss cheese.
- Sprinkle with parmesan cheese.
- Bake for 30 to 40 minutes or until hot and bubbly.

WILD RICE, ALMOND AND MUSHROOM STUFFING
Wild rice can be the base of a satisfying and refined Thanksgiving stuffing, particularly when it is combined with mushrooms, almonds, sherry and herbs, as it is here. Use this savory mixture to stuff a turkey to serve to the omnivores at your table, or bake it separately and serve it as a side dish, one that is especially good for vegetarians and vegans.

- Bring stock to a boil in a large saucepan, then add wild rice and salt to taste. When the liquid returns to the boil, lower heat, cover and simmer 40 minutes, until rice is tender and has begun to splay. Drain through a strainer, and set aside.
- Heat oil over medium heat in a large nonstick skillet, then add onion or shallots. Cook, stirring often, until tender, about five minutes for onions or three minutes for shallots. Add a generous pinch of salt and the garlic. Cook until fragrant, 30 seconds to a minute. Add mushrooms and celery and cook, stirring, until mushrooms have softened, about 10 minutes. Stir in rice and remaining ingredients. Cook, stirring, until sherry has evaporated. Taste and adjust seasonings.
- Remove from the heat, and allow to cool before stuffing your turkey. Or place in an oiled baking dish and cover, then warm for 20 to 30 minutes in a 350-degree oven.
