VEGETABLE THAI FRIED RICE



Vegetable Thai Fried Rice image

Thai fried rice prepared using colorful vegetables and aromatic jasmine rice. Make it using white rice or brown rice for a wholesome lunch or dinner.

Number Of Ingredients 18

2 cup jasmine rice
3 cup water
2 tbsp oyster sauce
1 tbsp soy sauce
1 tsp fish sauce
½ tsp honey
1 tbsp rice vinegar
1 small onion ( finely chopped)
2 medium carrots (peeled and sliced)
½ red bell pepper (diced)
½ cup green peas
1 cup sliced shitake mushroom
1 Thai red chili
3-4 whole garlic cloves (peeled)
1" ginger (peeled )
1 tbsp cooking oil
salt to taste
1 cup fresh Thai basil chopped

Steps:

  • Cook rice according to instructions given on the package. Let it cool.
  • In a small mixing bowl, combine oyster sauce, soy sauce, fish sauce, honey, and vinegar. Mix well and keep it aside.
  • In a molcajete, mash Thai red chili, garlic cloves, and ginger (or finely chop them or use a mini food processor).
  • Heat oil in a large frying pan or wok on medium to high heat. Add mashed chili, garlic, ginger, and cook for a min or so.
  • Then add onion and cook until translucent.
  • Add diced carrot, pepper, green peas, and mushroom and cook them for 2-3 min.
  • Then add prepared sauce blend and mix well.
  • Now add cooked rice and combine well with veggies and sauce. Add salt if necessary.
  • Finally, add chopped fresh Thai basil leaves and serve warm.

1 C (145g) Raw Cashews
1 1/2 lb (680g) Cauliflower
4 Tbs Toasted Sesame Oil
1 1/2 C (150g) Purple Onion (Medium dice, about 1 medium onion)
5 oz (135g) Shiitake Mushrooms (stems removed, sliced thin)
1 C (250g) Red Bell Pepper (medium dice, about 1 medium bell)
1 Tbs Fresh Garlic (microplained)
1 Tbs Fresh Ginger (microplained)
1/4 tsp Red Pepper Flakes (this is about a spicy 2 - increase to 1/2 tsp for spicy 4)
1 Tbs Brown Sugar
3 Tbs Tamari (divided)
1 1/2 Tbs Liquid Aminos* (see note - or more tamari)
3 C (250g) Broccoli Florets (cut into bite size pieces, don't throw out the stems! see notes)
6 oz (180g) Snow or Sugar Snap Peas (sliced on the bias into bite size pieces)
1 Tbs Thai Basil (chopped - cilantro is fabulous too)
Lime, Sesame Seeds, Thai Basil or Cilantro, Green Onions Sliced Thin, Sriracha
Fried Egg or Prepared Tofu (on the top! )

Steps:

  • For the Cashews: Preheat oven to 350F (180C). Place the cashews in a baking pan and bake for about 12-14 minutes until fragrant and golden. Set aside to cool. Rough chop.
  • For the Cauliflower: In the bowl of a food processor fitted with the S blade, and working in batches, add about 1/2 the head of cauliflower in large chunks. Pulse 8-10 times to break the cauliflower down into 'rice'. Scrape the work bowl down as needed. Transfer to a bowl and set aside.
  • To Make The Cauliflower Fried Rice: In a large Dutch oven, add the sesame oil and heat until shimmering. To test to see if the oil is hot enough, toss in a piece of onion. If it starts frying, it's ready! Add the onions and saute for two minutes on medium heat. To the onions, add the mushrooms and stir fry for two minutes. Add the bell peppers to the onions and mushrooms and stir fry for two more minutes. Add the garlic, ginger and red pepper flakes to the vegetable mixture and saute for one minute on medium-low. The garlic and ginger will start sticking to the bottom of the pan.. Add two Tbs Tamari, Liquid Aminos (or more Tamari) and sugar, stir to deglaze while scraping the garlic and ginger off the bottom. To the Dutch oven, spoon in the cauliflower rice and broccoli. Stir fry for about three to four minutes, scraping the bottom of the pan as needed, until all the cauliflower rice is coated with the oil, the broccoli is tender and the veggies are evenly distributed. During the last minute of cooking, stir in the snow or snap peas, stir to warm through for about a minute. Keep an eye on it at this point because the veggies can go from tender crisp to mush quickly. You may notice a bit of moisture form in the bottom of the Dutch oven. This is normal and it typically tends to steam off as the recipe cools.
  • Work quickly here because the 'rice' is still cooking at this point. Remove from heat and stir in about one Tbs of chopped Thai basil. Taste the rice for seasoning adjustment, adding one more tablespoons of Tamari (or more) if desired. This will also help deglaze the Dutch oven. Squeeze in 1/2 lime juice and stir in the cashews and fresh basil or cilantro. Add more herbs to taste. Serve immediately.
  • Spoon the Fried Cauliflower Rice into big bowls, sprinkle or serve with green onions, sesame seeds, more herbs and lime wedges. If serving with tofu or fried eggs, add to the bowls now. For those that love even more spicy, serve with Sriracha.
  • Store in a lidded container for up to three days in the refrigerator. This recipe does not freeze well.

5 Tbs (55g) Toasted Sesame Oil
1 1/2 C (150g) Yellow or Purple Onion (large dice - about 1 medium onion)
1 C (60g) Shiitake or Crimini Mushrooms (sliced or large dice, stems removed)
1 C (140g) Red Bell Pepper (large dice - about 1 medium pepper)
1 Tbs Fresh Garlic (microplaned)
1 Tbs Fresh Ginger (microplaned)
2 tsp Red Chili Pepper Flakes (this is spicy(ish) around spicy 3! )
4 Tbs Tamari (divided, plus more for serving)
2 Tbs Liquid Aminos* (see note) (or more Tamari)
1 Tbs Brown Sugar
4 C (475g) Jasmine Rice ** (see note) (cooked, and chilled (day old works best here - see note)*)
4 C (300g) Broccoli Florets (cut to bite size)
1 C (105g) Sweet Peas (frozen)
1/2 Lime
2 Tbs Thai Basil (chopped, or to taste )
lime wedges
green onions
sesame seeds
Sriracha
plenty of chopped thai basil or cilantro
fried egg or prepared tofu (on the top)

Steps:

To the Dutch oven, spoon in the rice and stir fry for about four to five minutes, scraping the bottom of the pan where needed, until all the rice is coated with the oil and the veggies are evenly distributed. If the rice begins to stick, add a few tablespoons of water to deglaze.
  • To the rice mixture, add the broccoli and sweet peas. Stir until vegetable are evenly distributed. Cook on low heat stirring occasionally for 5-8 minutes until broccoli is tender crisp (or until desired tenderness). Taste the rice for seasoning adjustment, adding two more tablespoons of Tamari (or more) if desired. This will also help deglaze the Dutch oven. Squeeze in 1/2 lime juice and stir in the cashews and fresh basil or cilantro. Add more herbs to taste.
  • Spoon the rice into big bowls, sprinkle or serve with green onions, sesame seeds, more herbs and lime wedges. If serving with tofu or fried eggs, add to the bowls now. For those that love even more spicy, serve with Sriracha.

Here's a meatless recipe that doesn't suffer from the lack of it. It's nice and spicy for those who like a "kick" to their palates. For extra kick you can add 1 tablespoon of Asian hot chili oil reducing the Canola oil by that much. Chefs Note: Be sure the cooked rice is COLD to the touch or else the dish will come out soggy.

6 cups cooked jasmine rice, cold to the touch
1 cup peas, frozen and thawed
2 garlic cloves, chopped
1/2 red pepper, chopped
4 tablespoons canola oil
2 teaspoons fresh ginger, minced
2 large eggs, lightly beaten
1 medium tomatoes, fresh, rough chopped
2 tablespoons hot chili paste
2 tablespoons light soy sauce
1 tablespoon fresh lime juice
scallion, chopped for garnish

Steps:

  • Heat oil in a large skillet or wok.
  • Add ginger and garlic and stir fry for 1-2 minutes.
  • Remove with a slotted spoon and set aside.
  • In the same pan add peas and red pepper.
  • Stir fry for 2 minutes until slightly softened.
  • Remove and set aside.
  • Add the cold rice to the skillet and heat thoroughly.
  • With a spoon make a hole in the center of the rice pushing the rice to the sides.
  • Add the beaten eggs into the center without touching the rice.
  • Stir the eggs until pretty well set then start incorporating the rice into them.
  • Add the chopped tomatoes.
  • Return the reserved ginger, garlic, peas and red pepper to the pan.
  • Mix in the chili paste, soy sauce and lime juice.
  • Serve with chopped scallions as a garnish.

3 tablespoons vegetable oil or 3 tablespoons peanut oil
1 piece gingerroot, peeled and finely chopped
4 garlic cloves, finely chopped
3/4 cup broccoli floret
1/2 cup snow peas
1 carrot, peeled and cut in match sticks
1 green pepper, deseeded and cut in strips
1 red pepper, deseeded and cut in strips
1 tablespoon soy sauce
1 tablespoon hoisin sauce
1 teaspoon sugar
1/8 teaspoon salt
1/8 teaspoon fresh ground black pepper
4 scallions, trimmed and shredded (to garnish)
1/2 teaspoon white pepper

Steps:

  • Heat wok, add oil when hot, add the garlic and giger and stirfry for one minute.
  • Add broccoli and stir-fry for 1 minute, then add snow peas, carrots and the green and red peppers.
  • Stir-fry for an additional 3-4 minutes or until tender but still crisp.
  • Blend the soy sauce, hoisin sauce and sugar in a small bowl. Stir well, season to taste with salt and pepper and pour into the wok, stirring well to distribute.
  • Transfer to a serving dish.
  • Garnish with scallions.
