Steps:

  • Prepare grill for indirect heat. Combine the rice, onions, red pepper and basil; place on a greased double thickness of heavy-duty foil (about 15 in. square). Top with the tilapia, snow peas and peanut sauce. Fold foil around mixture and seal tightly. , Grill, covered, over indirect medium-hot heat for 8-10 minutes or until fish flakes easily with a fork. Open foil carefully to allow steam to escape.

Steps:

  • In 12-inch nonstick skillet, heat 2 teaspoons oil over high heat. Add frozen vegetables; cook 4 to 5 minutes, stirring frequently, until crisp-tender. Divide vegetables among 4 dinner plates; cover to keep warm.
  • Add 1 tablespoon oil to same skillet; reduce heat to medium-high. Add fish fillets; cook 3 minutes. Turn fish; spoon and spread 1 tablespoon peanut sauce over each fillet to cover. Cook about 4 minutes longer or until fish flakes easily with fork. Serve fish with vegetables.

4 tilapia fillets
2 tbsp cornflour
2 tbsp sunflower oil
4 spring onions , sliced
2 garlic cloves , crushed
small piece fresh ginger , finely chopped
2 tbsp soy sauce
1 tbsp brown sugar
juice 1 lime , plus 1 lime chopped into wedges, to serve
1 red chilli , deseeded and sliced
handful Thai basil leaves or coriander leaves

Steps:

  • Coat the fish fillets in the cornflour, then set aside. Heat the oil in a large non-stick frying pan, sizzle the fillets for 2-3 mins on each side until crisp, then remove and keep warm. In the same pan, briefly fry the spring onion, garlic and ginger, then add the soy sauce, brown sugar and lime juice and simmer until slightly syrupy. Spoon the sauce over the fish, scatter with chilli, Thai basil or coriander, then serve with the lime wedges.

Steps:

1 1/4 cups yellow onions, diced
1 cup carrot, diced
1 cup celery, diced
1/2 cup red bell pepper, diced
cooking spray
1 tablespoon garlic, minced
1 1/2 teaspoons chili powder
1/2 teaspoon red pepper flakes
6 cups chicken broth
2 cups cooked chicken breasts, diced
1 (14 1/2 ounce) can diced tomatoes
2/3 cup peanut butter
1/3 cup couscous
4 cups fresh spinach leaves
1/2 cup scallion, chopped (optional, for topping)

Steps:

  • In a microwave safe plate or bowl, add onions, carrots, celery and red bell pepper.
  • Cook in microwave for about 4 minutes until vegetables are softened.
  • 2. Coat a large nonstick pan or soup pot with cooking spray. Add cooked vegetables, garlic, chili powder and red pepper flakes. Sauté for about 1 minute. Stir often.

1 1/2 cups light coconut milk
4 teaspoons canola oil (or your favorite oil for cooking fish)
1 1/2 lbs tilapia fillets
1 (6 ounce) package spinach, washed andstemmed

Steps:

  • In a large measuring cup combine peanut sauce and coconut milk. Set aside.
  • In a large skillet (I used two skillets) heat oil.
  • Add tilapia and cook for 3-5 minutes and then turn fish and cook for 3-5 more minutes or until done.
  • Season fish with salt and pepper and then remove to a plate and keep warm.

1/4 cup Thai fish sauce

1 egg, beaten
1 teaspoon sweet soy sauce
2 green onions, stems only, diced
1/4 cup roasted peanuts, ground
1 cup bean sprouts
1/2 cup bean sprouts
1/2 cup green onion, stems only, diced
1/2 lemon, cut into wedges
1 tablespoon red chili paste
1 cup coconut milk
1 tablespoon fish sauce
1/2 cup crunchy peanut butter

Steps:

  • Pad Thai:.
  • Soak rice noodles in cold water for 30 minutes or until soft. Drain and set aside.
  • Heat oil in skillet or wok over medium heat. Stir-fry garlic for 3-4 minutes. Add the noodles and stir-fry until the noodles are translucent. Reduce heat if the noodles begin to stick together.
  • Add fish sauce, sugar, vinegar and paprika. Continue to stir-fry until combined.
  • Stir in egg. Increase heat to high and cook, until egg sets. Reduce heat to medium-high and continue to stir-fry for 2 minutes until most of the liquid is reduced.
  • Stir in soy sauce, green onions, peanuts and bean sprouts. Mix well and plate.
  • Peanut Butter Sauce:.
  • Combine chili paste, coconut milk, fish sauce and peanut butter in sauce pan and bring to a boil.
  • Add sugar and boil for approximately 2 minutes. Remove from heat.
  • Pour approximately 2 tablespoons of sauce over individual servings of Pad Thai.
