This is a green-curry based dish and is quite easy to make and equally tasty! I found the recipe in July 2008 edition of Good Housekeeping magazine. I made a full batch and it served me 3 very filling meals, 1 fresh and two leftovers that had kept in the fridge over several days. I really like this recipe because I'm a novice in the kitchen, but I love fresh, rich flavors. This recipe gives you both! Easy, yummy, fun! Note 1: I got frozen shrimp from the grocery store and thawed them overnight in the fridge and then shelled and rinsed them - it made no difference as far as I could tell. Note 2: If you're not particularly concerned about appearance, you need only 1 lime - just be careful that you grate it such that you can still slice it and use the wedges later - less wasteful that way. Note 3: I made my own rice that I had at home instead of buying the recommended pre-cooked kind; the amount and kind of rice you serve with the shrimp asparagus mixture is purely preference.

1 lb shelled and deveined shrimp
4 teaspoons green curry paste
1 tablespoon vegetable oil
1 lb asparagus, cut in 2-in pieces
2 limes
1 (13 1/2-14 ounce) can light coconut milk
2 tablespoons reduced sodium fish sauce
2 (8 7/8 ounce) packages precooked whole-grain brown rice

Steps:

  • In medium bowl, toss shrimp with curry paste to coat. In 12-inch skillet, heat oil on medium-high. Add shrimp; cook 3 minutes or just until pink, stirring. Transfer to large bowl.
  • To same skillet, add asparagus and 3 tablespoons water; cook 4 minutes or until asparagus is tender-crisp and water evaporates, stirring often. From 1 lime, grate 1 teaspoon peel; cut remaining lime into 4 wedges.
  • Add asparagus to shrimp in bowl. To skillet, add coconut milk and lime peel; heat to boiling on high. Reduce heat to medium and cook 5 minutes or until slightly thickened.
  • Return shrimp mixture to skillet. Stir in fish sauce; heat through. Heat rice in microwave as label directs; serve with shrimp and lime wedges.

2 tablespoons chili-garlic sauce
1 tablespoon minced garlic
1 tablespoon dark brown sugar
1 tablespoon fresh lime juice
3 teaspoons fish sauce, divided
1 lb large shrimp, peeled and deveined
1 lb thin asparagus
3 tablespoons oil
freshly cracked pepper
cooked jasmine rice
chopped cilantro (optional)

Steps:

  • In a medium size bowl add garlic chili pepper sauce, garlic, sugar, lime juice and 2 teaspoons of the fish sauce; mix well.
  • Add shrimp and mix until covered with sauce; set aside to season.
  • Diagonally trim asparagus into one inch pieces. *If thicker asparagus is used, boil in salted water 2-3 minutes.
  • Drain, and immediately cool down in ice water; drain well.
  • Heat oil in a large skillet over a high heat.
  • Add asparagus, remaining teaspoon of fish sauce, and fresh cracked pepper.
  • Stir-fry 3-5 minutes, or until asparagus is tender-crisp.
  • Add shrimp mixture to skillet.
  • Stir-fry until shrimp turns opaque (pink) and sauce is well mixed with ingredients.
  • Serve immediately with hot Jasmine rice & chopped cilantro(if desired).

1/2 cup Thai sweet chili sauce
1/4 cup chicken broth or 1/4 cup water
1/2 lb medium shrimp, peeled and deveined
1/2 lb asparagus
1 teaspoon soy sauce
1/4 cup fresh cilantro leaves
1 teaspoon toasted sesame seeds

Steps:

  • Pour the chile sauce and broth into a medium-size skillet and bring to a simmer over medium-high heat. Add the shrimp, reduce the heat to medium and cook, turning the shrimp, until they turn pink and opaque and are cooked through and the sauce thickens somewhat, about 3-4 minutes.
  • Add water to a large skillet to a depth of about 1 inch and bring to a boil over medium-high heat. Rinse the asparagus spears and snap off and discard their tough ends. Add the asparagus to the boiling water, reduce heat and simmer until the spears turn bright green, about 3 minutes. Drain the asparagus and cut them into 1 1/2-inch pieces, then add the soy sauce to them.
  • Spoon the shrimp onto plates; garnish the shrimp with asparagus, cilantro and sesame seeds.
  • I serve this with steamed jasmine rice.

Steps:

  • Heat the oil in a large nonstick skillet or wok over high heat. Add the garlic and ginger and cook, stirring, until fragrant, about 30 seconds. Add the shrimp and stir fry until pink but still translucent in the middle, about 2 minutes. Transfer the shrimp to a medium bowl with a slotted spoon. Add the onions and peppers to the skillet and cook, stirring, until lightly browned, about 3 minutes. Return the shrimp to the skillet along with the Thai Style Sweet & Spicy Chili Cooking Sauce. 1 pound asparagus, peeled, trimmed and cut into 1/2-inch rounds
1 pound peeled and deveined shrimp, cut into 1/2-inch pieces
1 cup canned straw mushrooms or fresh enoki mushrooms or sliced domestic mushroom caps
3 to 4 tablespoons fresh lime juice
1/2 cup (packed) cilantro leaves, coarsely chopped
Salt and crushed red pepper

Steps:

  • Heat the oil and add the shallots and saute. Add the water, bouquet garni and bring to a boil and simmer, covered for 10 minutes. Add the asparagus and simmer 5 minutes or until tender; add the shrimp and simmer just until the shrimp turn pink. Add the mushrooms, and simmer to heat through (if too much liquid has evaporated, add more to keep level constant).
  • Remove the soup from the heat, remove the bouquet garni and stir in the lime juice to taste and cilantro. Adjust seasoning with salt and crushed red pepper.

Steps:

  • To prepare the sauce, simmer the chicken broth, onion, ginger, lemon grass, lime leaves, and lime juice together until the liquid is reduced by half. Then, add fish sauce, coconut milk, curry paste, and paprika; cook for 10 minutes.
  • Season the rice flour with salt and pepper, lightly dredge the shrimp in the flour; tap off excess. Heat peanut oil in a skillet until very hot. Add the coated shrimp to the hot oil and cook about 2 minutes each side. Add the mussels, asparagus tips, and shiitakes. Cook for 2 minutes just until heated through. Strain the sauce over the shellfish and vegetables. Poach the Udon noodles in hot salted water, drain and place in a warm bowl. Add the shellfish sauce. 8-ounces dried rice noodles (flat, fettuccine-shaped)
1 pound medium shrimp
Salt
Few drops sesame oil
2 quarts chicken stock, preferably fresh
6 thin slices fresh galangal or fresh ginger
6 garlic cloves, smashed
2 stalks lemongrass (bottom third only, sliced thinly on the bias)
5 shallots, sliced
4 small serrano chile peppers, coarsely shredded, including seeds
1/4 cup Thai or Vietnamese fish sauce
3 teaspoons sugar
1/4 cup whole fresh cilantro leaves
1/4 cup lightly chopped Asian basil leaves
1/3 cups freshly squeezed lime juice
1 teaspoon freshly ground black pepper

Steps:

  • Soak the noodles in hot water to cover and let stand, about 30 minutes, until soft.
  • Peel the shrimp, reserving the shells. Cut them in half lengthwise, then toss with 1/4 teaspoon salt and the sesame oil, and refrigerate.
  • Bring the stock to a boil with galangal, garlic, and lemongrass. Turn the heat to low and simmer for 35 minutes. Add the shrimp shells and simmer for another 15 to 20 minutes, skimming if necessary. Strain the stock and bring to a boil. Turn heat to low and simmer with the shallots and chiles. Simmer for 15 minutes and add 2 teaspoons of salt, the fish sauce, and the sugar. Continue to simmer.
  • Meanwhile, drain the noodles well and divide among four to eight bowls. Then add the shrimp to the simmering broth. Turn off the heat and stir in the fresh herbs and lime juice.
  • Divide the soup among the soup bowls, sprinkle over the black pepper, and serve.

Thai Peanut Shrimp, Asparagus and Noodles image

I made up this recipe after experimenting with several different recipes from many different sources. I like to serve this with recipe #101790 (Oriental Cucumber Salad) and either potstickers or hot and sour soup. You can also make it with other meats like chicken or pork, or rice instead of noodles. This is one of my DH's favorite meals.

2 quarts water, cold
1/4 cup salt
1/4 cup sugar
1 lb shrimp, shelled and deveined
1/2 cup peanut butter, smooth
1/2 cup hoisin sauce
1/2 cup water
3 -4 tablespoons brown sugar
2 tablespoons sesame oil
2 tablespoons soy sauce
2 tablespoons lime juice
2 tablespoons red wine vinegar
1 teaspoon garlic salt (optional)
1 teaspoon ginger, minced
1 teaspoon garlic, minced
1 teaspoon chili-garlic sauce
1/2 teaspoon hot sauce (I like Cholula)
2 tablespoons cornstarch, mixed with 2 T Water (optional)
1 tablespoon canola oil
1 onion, diced
1 red pepper, diced
2 teaspoons garlic, minced
2 cups asparagus, cut into 1 inch pieces
3 cups noodles, cooked and drained

Steps:

  • Mix water, salt and sugar together with a whisk until salt and sugar are dissolved. Add shrimp and let it sit in the brine for at least 30 minutes. Longer doesn't hurt. Drain shrimp well and pat dry with a paper towel when ready to cook.
  • While shrimp is brining, combine all sauce ingredients except cornstarch and water slurry in a small saucepan. Heat over low heat for 30 minutes. Cornstarch/water slurry can be whisked in if sauce isn't thick enough after heating.
  • Pour canola oil into a large, hot, non-stick skillet over medium high heat. Add onion, red pepper and garlic. Stir-fry for 7 minutes, until veggies are softened. Add asparagus and continue stir-frying for about 5 more minutes. Pour veggies into a large bowl and set aside.
  • Re-heat skillet over medium high heat. Add additional canola oil if desired. Add drained shrimp and stir-fry until they are pink, about 5 - 7 minutes. Add reserved veggies and noodles and stir well. Pour peanut sauce over everything and combine.

3 cups rice, mix from a box prepare as instructed on box (I typically choose Near East's rice pilaf)
1 tablespoon olive oil
1/2 sweet onion, chopped
2 garlic cloves, minced
1/2 lb asparagus, tough roots discarded, cut into 1 inch pieces
1 lb shrimp, uncooked, shelled, and cut into bite size pieces
1/4 cup chicken broth
2 teaspoons dried dill
2 teaspoons basil
1 teaspoon salt
1 teaspoon pepper
1/3 cup feta

Steps:

  • In large saute pan, heat oil over medium high heat. Add onion and garlic, saute for about 2 minutes, until onions are translucent.
  • Add tougher asparagus pieces, continue to saute for about 1 minute. Add remaining asparagus and continue to saute for another minute.
  • Add shrimp, saute for 1 minute.
  • Add chicken broth, continue stirring. Cook until shrimp turn completely pink.
  • Add all spices, stir to coat.
  • Add prepared rice mix and feta. Stir to completely incorporate rice, feta, and shrimp/asparagus mixture.
  • Enjoy!

1 tablespoon minced fresh garlic

1 1/2 lbs asparagus, snapped, steamed, but slightly undercooked
2 tablespoons fish sauce (I use gluten-free) or 2 tablespoons soy sauce (I use gluten-free)
1 teaspoon dark soy sauce (I omit it) (optional)
1 tablespoon water
1 tablespoon sugar
1 cup basil, chopped
2 large chilies, of your chiles, slice diagonal into thin ovals

Steps:

  • Heat a wok or large, deep skillet over high heat.
  • Add oil, making sure bottom of pan is completely oiled.
  • Add garlic and minced chile, toss until garlic begins to turn golden; about 15 seconds.
  • Add the asparagus; stir-fry until coated with oil, about 15 seconds.
  • Add the soy sauces, sugar, basil, and 1 T water; stir-fry until basil starts to wilt.
  • Serve hot.
  • Garnish with sliced chiles.
  • For Vegetarian do not use the fish sauce, use the soy sauce.
