Peanut butter, ginger and fresh basil bring out the Thai character of this tasty rice-and-chicken salad

Number Of Ingredients 14

1 1/2 Tbsp. grated ginger
2 cucumbers
1/3 cup vegetable oil
1 1/2 Tbsp. sugar
1 1/2 Tbsp. garlic minced
1/2 cup red onion finely chopped
6 oz. fresh spinach cut into strips
3 cups cooked chicken cut into 1/2" cubes
1/2 cup fresh basil cut into strips
3/4 cup peanut butter
1/2 cup rice vinegar
1/2 Poblano chilies seeded and chopped
1/3 cup lite soy sauce
1 1/2 cups UNCLE BEN'S® Natural Whole Grain Brown Rice (uncooked)

Steps:

  • Cook the rice according to package directions, set aside and chill.
  • Whisk the peanut butter, vinegar, oil, soy sauce, sugar, ginger, garlic, and poblano peppers in a small bowl, set aside.
  • Cut the cucumbers in half lengthwise before cutting them into 1/2-inch slices.
  • Combine the rice with cucumber, dressing, chicken, and onion. Cover and chill.
  • Just before serving, toss the salad with the spinach and basil.

2 pounds boneless chicken breast
3 cups water
1 tablespoon kosher salt
2 stalks lemongrass, minced
1 tablespoon minced garlic
2 teaspoons Thai chili powder
3 tablespoons canola oil
4 stalks celery, finely chopped
2 red onions, finely chopped
2 tablespoons coarsely chopped fresh mint
1 tablespoon coarsely chopped Thai basil leaves or regular fresh basil
1 tablespoon coarsely chopped cilantro leaves
1 teaspoon honey
2 tablespoons lime juice
1 head romaine lettuce, washed and chopped* see note

Steps:

  • Place chicken breast into a 2 quart saucepan with water (the water should cover the chicken breasts), the kosher salt and half of the lemongrass. Bring to a boil and lower to a simmer for 20 minutes. Remove chicken and cool completely. When cooled chop into 1/2 inch cubes and reserve in refrigerator.
  • Saute garlic, remaining lemongrass and chili powder in oil for 3 minutes. Remove from heat and cool completely. Next, toss together the celery, onions, mint, basil and cilantro. Combine chicken with sauteed garlic mixture and the salad components, Add salt, lime juice and honey to taste and place on the lettuce to serve.

3/4 cup orange juice
1/4 cup lime juice
1/2 cup fresh Thai basil leaves, chopped (substitute regular basil or mint leaves if needed)
1 cup fresh cilantro leaves
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 heaping tablespoon honey
1/2 cup canola oil

Steps:

  • Combine rice and vegetables in a large bowl. Add the vinaigrette and stir to combine. Let the salad sit at room temperature for 30 minutes before serving. Garnish with desired herbs.
  • Combine all ingredients in a blender and blend for 1 minute

4 large garlic cloves
1/4 cup soy sauce
1/3 cup fresh lime juice
2 tablespoons sugar
1 tablespoon smooth peanut butter
2 teaspoons chopped peeled fresh ginger
1 1/4 teaspoons hot chili paste (such as sambal oelek)*
1/4 cup vegetable oil
3 purchased roasted chicken breast halves, boned, skinned, shredded
3 cups shredded Napa cabbage
1 cup coarsely grated carrot
1 cup red bell pepper strips
1/2 cup thinly sliced red onion
2 medium cucumbers, halved lengthwise, thinly sliced crosswise
1/3 cup coarsely chopped roasted salted peanuts

Steps:

  • Cook noodles in small pot of boiling salted water until tender, about 3 minutes. Drain; cut noodles in several places with scissors. Spread out on platter.
