Steps:

  • Wash and pat dry the pork. Slice into large pieces--about 1inch thick. Poke both sides of each piece with a fork or skewer and place in a flat bottom container with lid. Blend oyster sauce, sugar, the two soys and whiskey well. Pour over the pork and mix. Cover and marinate in the refrigerator at least 1 hour. Overnight for best result. Soak sticky rice in water for 30 minutes and drain well. Pour rice in a wet-paper towel lined steamer and steam over high heat for 40 to 45 minutes. Place cooked rice in a container and mix with the oil to coat well. Cover and set aside. Charcoal grill the pork over medium heat until well done. Drizzle some of the marinating liquid on each side halfway through the cooking time. In a small sauce pan, bring the rest of marinating liquid to a boil and pour into a gravy bowl. Slice pork into 1 X 1½ inch pieces and about ¼ inch thick. Spread the rice onto a platter. Cover with the pork pieces and pour the marinating liquid over the pork. Sprinkle cilantro, green onions and chilies. Garnish with sliced cucumbers and tomatoes.

2 lbs boneless pork loin
1/2 teaspoon red food coloring
1 tablespoon fish sauce
1 tablespoon soy sauce
2 tablespoons hoisin sauce
1 tablespoon dry sherry
1 tablespoon brown sugar
3 cloves garlic, minced
1 tablespoon minced fresh gingerroot
1 teaspoon five-spice powder
1 tablespoon sesame oil
3 tablespoons cilantro leaves
hot steamed rice

Steps:

  • Pat the pork loin dry; mix the food coloring with 2 tbsp water, and rub the pork with this solution.
  • To prepare marinade, combine fish sauce, soy sauce, hoisin sauce, sherry, brown sugar, garlic, ginger, five spice, and sesame oil in a blender and mix on high for about 30 seconds.
  • Marinate pork in a large ziplock bag or shallow dish, working marinade all over meat, for at least 2 hours, turning meat occasionally.
  • Preheat oven to 450 degrees F.
  • Line a baking dish with heavy foil; place a meat rack in the dish (to elevate roast); oil rack to prevent sticking; place roast on rack in dish and place in preheated oven.
  • After 15 minutes, reduce heat to 350 degrees F.
  • Meanwhile, place marinade in a small saucepan and bring to a boil; boil for 3-5 minutes, stirring constantly, add a little water if mixture becomes too thick; set aside.
  • Cook roast in preheated oven, checking with meat thermometer starting at about 30 minutes, basting at intervals with cooked marinade.
  • For a roast that is medium (has pinkness in the center), go for 160 degrees; for a roast that is well-done (fully cooked), go for 170 degrees.
  • When done, remove roast from heat and let it rest for 15 minutes.
  • Thinly slice roast into 1/4" medallions.
  • and place on a large platter.
  • Garnish with cilantro leaves; serve with hot steamed rice.

This is a great Thai dish, that isn't too spicy. It goes great with sticky rice. Originally it called for meat sliced thinly at 1.5" x 3" and placed on thin skewers like a ribbon. But I just use pork steaks with the bone cut out, and then cut into quarters.

4 cloves garlic, finely chopped (sometimes I use a whole head)
10 -12 sprigs cilantro, finely chopped
4 tablespoons fish sauce (get this at any asian food store, one brand I use is Tiparos)
1 tablespoon soy sauce
4 ounces thick coconut cream (1/2 cup, fresh tastes best, then canned, but I usually use powdered for convience. Prepare according)
4 ounces cooking oil (1/2 cup)
1 tablespoon sugar
1/2 teaspoon white pepper (yes, in a pinch you can use black, but the white has a better flavor)
1 lb thinly sliced pork or 2 pork steaks, cut into quarters (8 pieces total)
1 tablespoon fish sauce
2 limes, juice of (or use 2 tbs rice wine vinigar)
1 tablespoon soy sauce
1 teaspoon chili powder
1 tablespoon sugar
2 tablespoons cilantro leaves, coarsely cut

Steps:

  • Pork& Marinade:Combine everything (but the pork) untill it's all blended together well.
  • Add the pork and let sit for at least 30 minutes.
  • I like to let it sit in the fridge overnight.
  • Some people like to use dishes or bowls to marinade the meat, but I like to use large zipper seal bags.
  • While the meat is soaking we can get going on the dipping sauce: Mix everything together and taste.
  • If it's too spicy-hot, just add a little more sugar, fish sauce, and lime juice till the flavor is right.
  • When it's time to cook the meat, start your grill (I prefer charcoal).
  • Skewer the meat if thats what you are doing, and place the items on the grill.
  • Cook both sides evenly for a couple of minutes and make sure it's cooked all the way through.
  • When eating, dip the meat into the sauce and enjoy.
