1 1/4 cups white rice
2 teaspoons vegetable oil, plus more for brushing
1/4 cup low-sodium soy sauce
1 tablespoon Sriracha (Asian chile sauce), plus more for drizzling
1 1/2 teaspoons grated peeled ginger
1 large pork tenderloin (about 1 1/4 pounds), halved lengthwise
2 carrots, diced
1/2 English cucumber, diced
2 tablespoons fresh lime juice, plus wedges for serving
2 teaspoons packed light brown sugar
12 large Bibb or Boston lettuce leaves
Chopped fresh cilantro, for topping

Steps:

  • Combine the rice and 1 1/2 cups water in a medium saucepan; bring to a simmer over medium-high heat and cook until most of the water is absorbed, about 4 minutes. Reduce the heat to low; cover and continue cooking until all of the water is absorbed, about 12 more minutes. Uncover and transfer to a large bowl to cool slightly.
  • Preheat a large grill pan or grill over medium heat and brush with oil. Combine 2 tablespoons soy sauce, the vegetable oil, 1 1/2 teaspoons Sriracha and 1 teaspoon ginger in a bowl; rub all over the pork. Transfer the pork to the grill pan; cook about 8 minutes per side for medium doneness. Transfer to a cutting board and let rest 5 minutes; thinly slice.
  • Stir the remaining 2 tablespoons soy sauce, 1 1/2 teaspoons Sriracha and teaspoon ginger into the rice. Add the carrots, cucumber, lime juice and brown sugar and toss. Serve the rice and pork in the lettuce leaves; top with cilantro and drizzle with more Sriracha. Serve with lime wedges.

1/2 pound ground pork
3 1/2 tablespoons lime juice
3 tablespoons fish sauce
1 tablespoon Thai sticky rice powder
1/2 teaspoon sugar
Small pinch powdered chili pepper
1 tablespoon red and white onion (thinly sliced and mixed together)
1 tablespoon fresh cilantro and green onion (chopped and mixed together)
1 teaspoon lime leaf (sliced into very thin, fine pieces)
1 tablespoon lemongrass (chopped into thin pieces)
1 burrito-size flour tortilla
1 teaspoon mayonnaise

Steps:

  • Bring 1/2 cup water to a boil in a small pot. Add the pork and stir until pork is fully cooked. Turn off the stove, then drain out and discard the juices.
  • Add lime juice, fish sauce, rice powder, sugar and the powdered chili pepper. Using a wooden spoon, stir and mix until the pork is evenly seasoned. Add the red and white onion, cilantro and green onion, lime leaf and lemongrass. Using the wooden spoon, stir and mix until everything is evenly proportioned. This is the "larb."
  • Heat the tortilla in a hot pan until both sides are nice and soft. Lay out the tortilla on a cutting board, spread the mayonnaise on top and add "larb" right in the center of the tortilla. Wrap it up like a burrito. Serve, and you have yourself a nice, healthy lunch.

Steps:

  • In a small bowl, mix vinegar, sugar and salt until blended. Stir in carrots and onion; let stand at room temperature 30 minutes., In a large skillet, cook pork, ginger and garlic over medium heat 6-8 minutes or until pork is no longer pink, breaking up pork into crumbles; drain. Stir in soy sauce, mirin, salt, pepper and, if desired, fish sauce., To serve, drain carrot mixture. Place pork mixture in lettuce leaves; top with cucumber, red pepper, green onions, carrot mixture and herbs. Sprinkle with jalapeno and peanuts; drizzle with hoisin sauce. Squeeze lime juice over tops. Fold lettuce over filling.

This is one of Rachael Ray's recipes that I got off of the food network website. They're really incredible! Talk about flavor! It's from her 30 minute meals show. However, this took me about 35 minutes to make (with the sesame noodles that she made with them on the same show) probably because I can't chop as fast! They go perfectly with her recipe for 'Cold and Spicy Sesame Noodles'(which can be made un-spicy very easily), which I will also be posting.

1 lb chicken tenders, sliced thin
2 tablespoons vegetable oil
2 tablespoons fresh ginger, minced
4 garlic cloves, minced
1 red bell pepper, seeded and sliced thin
1 cup shredded cabbage and carrot coleslaw mix (coleslaw mix without dressing)
3 green onions, sliced at an angle
1/2 cup plum sauce
2 cups fresh basil leaves
1 tablespoon fish sauce
1/2 head iceberg lettuce, halved again
1/2 seedless cucumber, chopped

Steps:

  • Heat a large skillet over high until hot.
  • Add the vegetable oil, then the chicken.
  • Cook for two minutes stirring constantly.
  • Toss in the ginger, garlic, bell pepper, cabbage/carrot mix and green onions.
  • Stir-fry another two minutes.
  • Add the plum sauce and toos for one minute, then add the basil.
  • Drizzle in fish sauce and turn to coat evenly.
  • Pour into a bowl.
  • Place small heaps of chicken mixture onto a 1 or 2 leaf thick piece of lettuce.
  • Sprinkle cucumber over it and fold to eat like a taco.

2 cups uncooked white rice
1 tablespoon vegetable oil
1 pound ground pork
1 bunch green onions, thinly sliced
½ teaspoon minced garlic
1 (14 ounce) package firm tofu, drained and cubed
2 carrots, shredded
3 tablespoons hoisin sauce
2 tablespoons soy sauce
1 teaspoon sesame oil
¼ teaspoon hot chile paste
1 head iceberg lettuce leaves, separated

Steps:

  • In a saucepan combine the water and rice. Bring to a boil, cover, and reduce heat to a simmer. Simmer for 20 minutes, until water is absorbed. Set aside and keep warm.
  • Heat oil in a wok over medium-high heat. Cook the pork, green onions, and garlic for 5 to 7 minutes, or until lightly brown. Add the tofu, carrot, Hoisin, and soy sauce, stirring frequently until heated through. Remove from heat, and stir in the sesame oil and chile paste.
  • To serve: spoon a small amount of rice into each lettuce leaf, top with the stir-fry mixture, and drizzle with additional soy sauce or hoisin, if desired. Wrap the lettuce leaf to enclose the filling.

1 lb pork tenderloin
2 1/2 tablespoons fish sauce
3 teaspoons toasted rice powder (kao kua)
white rice
1/4 cup low sodium chicken broth
1 small onions or 2 shallots
2 limes, juiced
2 teaspoons sugar
1/4 teaspoon red pepper flakes
3 tablespoons fresh mint leaves, chopped
3 tablespoons fresh cilantro leaves, chopped
1 head bibb lettuce, leaves separated but left whole

Steps:

  • Trim pork of silver skin and fat. Cut in cubes and freeze in single layer until firm but still pliable (15 to 20 minutes).
  • Meanwhile, prepare rice powder if needed (if you're making it from scratch, toast 1 tablespoon white rice 5 minutes in small pan, then grind with mortar and pestle). Slice onion thinly. Assemble other ingredients.
  • Process partially frozen meat, 1/2 at a time, in food processor, pulsing 5-6 times until coarsely chopped. Stir 1 tablespoon fish sauce into ground meat and refrigerate 15 minutes to marinade meat.
  • Bring broth to simmer in 12-inch nonstick skillet over medium-high heat.
  • Add pork and cook 2 minutes, stirring. Add 1 teaspoon rice powder. Stir 1-1/2 minutes more until no longer pink.
  • Transfer pork to large bowl and cool 10 minutes. Add 1½ tablespoons fish sauce, remaining rice powder, shallots, lime juice, sugar, red pepper flakes, mint, and cilantro.
  • Serve with lettuce leaves.
