This is the best oatmeal cookie recipe I've found yet! People are always asking me for the recipe! They are yummy... especially with a tall glass of milk.

1/2 cup butter
1/2 cup shortening
1 cup granulated sugar
1 cup light brown sugar
2 large eggs
2 teaspoons vanilla extract
1 1/4 cups sifted all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon clove
1/2 teaspoon allspice
3 cups old fashioned oats
1 cup raisins

Steps:

  • In a large bowl, combine butter, shortening and sugars.
  • Add eggs and vanilla and beat until fluffy.
  • Combine flour, salt, baking soda, cinnamon, cloves and allspice.
  • Add to creamed mixture; mix to blend.
  • Stir in oatmeal and raisins.
  • Drop a tablespoon of dough onto cookie sheet about 2-inches apart. Cookies will spread!
  • Bake at 350°F for 12-15 minutes.
  • Cool for about 5 minutes on cookie sheet, then remove to a cooling rack.

1 cup unbleached flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
14 tablespoons unsalted butter (1 3/4 sticks at room temp)
1 cup granulated sugar
1/4 cup light brown sugar (packed)
1 large egg
1 teaspoon vanilla
2 1/2 cups old fashioned oats (old fashioned type no instant stuff)

Steps:

  • Heat oven to 350°F - you will need 3 baking sheets lined with parchment paper (again the parchment keeps the cookie from burning and makes clean up faster).
  • Whisk together flour, baking powder, soda and salt.
  • Beat together with mixer at low speed - butter and sugar until the sugar granules are not visible. Increase speed and beat 1 minute longer, scrape sides as needed and add egg, beat another 30 seconds. Add flour mixture 1/3 at a time and incorporate well over med speed until mixture is smooth. Add oatmeal and stir into the dough using your rubber spatula.
  • Divide into 24 equal portions and bake for 13 to 16 minutes placing only one cookie sheet in the oven at a time and rotating the cookie sheet half way through your cooking time -- these are the best and the thinnest cookies and very crispy.

1/3 cup buttermilk or 1/3 cup sour milk
2 cups firmly packed brown sugar
3/4 cup vegetable shortening
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
3/4 teaspoon salt
2 large eggs
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 cup chopped pitted dates (optional)
1 cup chopped walnuts (optional) or 1 cup pecans (optional)
1 cup raisins (optional)
1 cup sifted powdered sugar (ICING ONLY)
1/4 teaspoon vanilla extract (ICING ONLY)
2 -4 tablespoons milk (ICING ONLY)

Steps:

  • Spread the oats in a shallow baking pan. Bake in a 375*F (190*C) oven about 10 minutes or until lightly toasted, stirring occasionally.
  • Place toasted oats in a small bowl. Stir in buttermilk or sour milk and let stand a few minutes.
  • In a medium mixing bowl beat together the brown sugar and shortening with an electric mixer on medium to high speed until combined.
  • Add the baking powder, baking soda, cinnamon, nutmeg, and salt; beat until combined.
  • Beat in the eggs and vanilla. Beat in the oat mixture. Stir in the flour until just mixed.
  • Fold in the dates, raisins and nuts. (OPTIONAL).
  • Drop dough by rounded teaspoonfuls about 2-inches apart onto a greased cookie sheet.
  • Bake in a 375*F (190*C) oven about 10 minutes or until edges are golden brown.
  • Transfer cookies to a wire rack to cool completely.
  • Drizzle in a decorative manner with the Powdered Sugar Icing, if desired.
  • POWDER SUGAR ICING RECIPE.
  • In a small bowl combine powdered sugar and vanilla extract. Stir in enough milk to make an icing of drizzling consistency.

3 cups old-fashioned rolled oats
1 cup Pillsbury BEST® All Purpose Flour
1/2 tsp. baking soda
1/2 tsp. salt
1/4 tsp. ground cinnamon
1/2 cup raisins
1/2 cup coarsely chopped walnuts

Steps:

  • HEAT oven to 350 degrees F. Coat baking sheets lightly with no-stick cooking spray.
  • COMBINE shortening, brown sugar, egg, milk and vanilla in bowl of electric mixer; beat at medium speed until well blended.
  • COMBINE oats, flour, baking soda, salt and cinnamon. Mix into shortening mixture at low speed just until blended. Stir in raisins and walnuts. Drop by rounded measuring tablespoonfuls of dough 2 inches apart onto prepared baking sheets.
  • BAKE 8 to 10 minutes or until lightly browned. Cool 2 minutes on baking sheets. Place on cooling racks to cool completely.
