- Add the lemongrass, cilantro (coriander), shallots, and garlic to a mortar and pestle, and pound until pulverized. You can also use a food processor for this step.
- Add the oil, sugar, salt, black pepper, Thai soy sauces, fish sauce and turmeric (if using). Mix until well-combined.
- You can butterfly or spatchcock your chicken for grilling like it's done on the streets of Thailand. However, I cut the chicken into individual pieces to ensure they'd cook properly. This way, I can pull each piece off the grill once cooked. Rub the chicken with the marinade paste, ensuring every piece is thoroughly coated. Cover and place in the refrigerator to marinate overnight (or at least 12 hours).
- The next day, take the chicken out 1 to 2 hours before you're ready to grill.
- In a small bowl, mix the sugar and hot water until the sugar is dissolved. Mix in the rest of the sauce ingredients and set aside.
- Place the chicken on the grill, and use any remaining marinade to baste the chicken while grilling. Leave the marinade paste on the chicken, including any chunks of herbs as they will caramelize and add flavor. Turn and baste the chicken often to create a nice flavorful outer crust. Baste the chicken with the leftover marinade in the first half of the grilling process, but do not do this towards the end of cooking. The raw chicken marinade needs enough time to fully cook.
- Serve immediately with some coconut rice, your nam jim jeaw sauce, and lime wedges!

- Combine garlic, cilantro, sugar, white pepper, coriander, fish sauce, dark soy sauce, and lemongrass (if using) in the bowl of a food processor. Process until a rough paste is formed. Set aside.
- Place chicken halves flat on a cutting board. Insert 2 metal skewers into each chicken half, running parallel through legs and breasts. Transfer chicken to a baking dish that just fits them. Rub on all surfaces with marinade. Cover, transfer to refrigerator, and allow to marinate for at least 2 hours and up to overnight.
- When ready to cook, light 1 chimney full of charcoal . When all charcoal is lit and covered with gray ash, pour out and spread coals evenly over half of coal grate. Alternatively, set half the burners of a gas grill to high heat. Set cooking grate in place, cover grill, and allow to preheat for 5 minutes. Clean and oil grilling grate.
- Place chicken, skin side up, on cooler side of grill, with legs facing toward hotter side. Cover grill, with vents on lid open and aligned over chicken. Open bottom vents of grill. Cook until an instant-read thermometer inserted into thickest part of breast registers 140°F (60°C), about 45 minutes. Carefully flip chicken and place, skin side down, on hotter side of grill, with breasts pointed toward cooler side. Cover and cook until skin is crisp and an instant-read thermometer inserted into thickest part of breast registers 145 to 150°F (63 to 66°C), about 3 minutes longer. (Be careful, as the skin is very prone to burning.) If chicken threatens to burn before temperature is achieved, carefully slide to cooler side of grill, cover, and continue to cook until done. Do not leave lid off for longer than it takes to check temperature, or chicken will burn.
- Transfer chicken to a cutting board and allow to rest for 5 minutes. Carve and serve with chile dipping sauce.

- Whisk soy sauce, fish sauce, brown sugar, cilantro, sesame oil, ginger, Sriracha, garlic, lime juice, and lemongrass paste together in a bowl.

- Mix the marinade ingredients together, pour over chicken and leave it in the fridge to marinate for at least 30 minutes.
- While chicken is in the fridge, prepare the sauce.
- Heat vinegar, sugar in a saucepan over low heat, and stir until dissolved.

- In a shallow dish, mix together the coconut milk, fish sauce, 2 tablespoons minced garlic, cilantro, turmeric, curry powder, and white pepper. Add chicken, and turn to coat. Cover, and refrigerate for 4 hours or overnight.
- Preheat grill for high heat.
- In a saucepan, combine vinegar, water, sugar, 1 teaspoon minced garlic, bird's eye chile, and salt; bring to a boil. Reduce heat to low, and simmer until liquid is reduced, about 5 minutes. Stir sauce from time to time. Remove from heat and allow to cool before use.
- Lightly oil grill grate. Discard marinade, and place chicken on the grill. Cook for 10 minutes per side, or until slightly charred and juices run clear. Brush with sauce before serving. Serve remaining sauce on the side for dipping.

GRILLED ASIAN CHICKEN WITH CILANTRO & LIME DIPPING SAUCE
I found an interesting recipe on Epicurious and adapted it over time. You can check out the original here (http://www.epicurious.com/recipes/food/views/Grilled-Five-Spice-Chicken-105523). I made it a bit healthier by using boneless, skinless chicken, added some spices I like to the marinade, and boosted the flavor in the dipping sauce too. I'll admit that I really don't measure anything when I cook so all of the amounts are approximate. Don't sweat it - use more or less of things as you prefer. This comes together in a snap - I make the marinade in the morning before work and let it sit in the fridge all day. Then, when I get home, I pull it out to the counter and toast the star anise immediately. The dish comes together in 15 minutes from that point.

- In a large bowl, combine all the ingredients except the star anise and chicken. Stir well to blend. Add the chicken pieces and toss. Cover with plastic wrap or transfer to a zip log bag and marinate in the refrigerator for at least 4 hours (and ideally overnight).
- Thirty minutes before cooking, remove the chicken and the marinade from the refrigerator, and allow to sit out at room temperature. Place the star anise pods in a dry, hot pan over medium high heat and toast for about 3 minutes. Remove from the pan and pound or grind in a spice grinder into a powder. Add the star anise powder to the chicken and marinade and stir well. Meanwhile, make the sauce by mixing all ingredients together in a small bowl.
- Cook the chicken on a traditional grill for about ten minutes, or use a stovetop grill pan, sprayed with a little non-stick cooking spray. Alternatively, you could even broil the chicken on high, turning a couple of times for even browning.
- Transfer to a serving platter and serve with the dipping sauce. This chicken is great with some rice to soak up the extra sauce and an Asian-style slaw, steamed sugar snap peas, or broccoli sautéed with some sesame seeds and red pepper strips. My husband loves this simple dish and it's a big hit with my kids too! It's also a great crowd pleaser at an outdoor BBQ. It's like comfort food, made just a little more exotic than usual!

- Light the grill or heat the broiler. In a blender or food processor, puree the jalapenos, smashed garlic cloves, the 1/2 cup cilantro leaves and stems, the fish sauce, cooking oil, sesame oil, and 1/4 teaspoon of the salt. Put the chicken in a shallow dish and coat it with the cilantro puree.
- Grill the chicken over moderately high heat or broil it for 5 minutes. Turn and cook until just done, about 5 minutes longer.
