- Cook prawns in simmering salted water for 1-2 minutes.
- Remove with slotted spoon and set aside to cool.
- Place noodles, spinach leaves, prawns and sprouts in serving bowl.
- Make dressing by combining ingredients.

- Boil, steam or microwave asparagus until tender; drain.
- Meanwhile, spray medium frying pan with cooking oil. Whisk eggs, egg whites and milk in medium jug. Cook egg mixture in pan, over low heat, stirring , until almost set.
- Serve asparagus and scrambled eggs sprinkled with tomato and parsley.

SUMAC FISH & COUSCOUS SALAD (21 DAY WONDER DIET: DAY 3)
This is Day 3: Dinner, on the 21 day Wonder Diet. You can use any firm fish that is n season for this recipe. Sumac is a type of Middle-Eastern Spice, available from supermarkets. You can cook the fish without it if you like. The first time I made this recipe, I was unable to buy sumac, so I used a Portugese spice blend instead.

Steps:
- Spray medium pan with cooking oil; cook onion and garlic over heat, stirring, 1 minute. Add zucchini and tomatoes; cook, stirring occasionally, about 1o minutes or until vegetables soften. Remove from heat, stir in mint.
- Bring stock to a boil in a small saucepan; remove from heat, stir in couscous, stand 5 minutes. Stir into zucchini mixture.
- Meanwhile, preheat grill. Sprinkle fish with sumac; grill until cooked, turning once.
- Serve couscous topped with fish and lemon wedges.
PRAWN SALAD (PLA GUNG)
This recipe is from Recipes of Asia for Laos. This recipe can also be made with squid or scallops, or any combination of prawns, squid and scallops. If using squid, use only the body tube. Slit the body and press flat, score diagonally, and cut into 2 inch squares.

Steps:
- Bring water to a boil and add lemon grass, lime leaves and coriander. Boil for five minutes.
- Drop in prawns and cook 1 minute. Remove and rinse under cold water.
- Combine lime juice, palm sugar, garlic, ginger and black pepper in a bowl. Mix to dissolve sugar.
- Pour dressing over prawns and toss to coat. Add green onions and mint leaves, toss to mix.
POTATO, TUNA & EGG SALAD (21 DAY WONDER DIET : DAY 2 )
This is Day 2: Lunch, on the 21 Day Wonder Diet. You can make this salad the night before, and store it in the fridge. If you cook the potatoes in the microwave, be sure to prick them all over with a fork. This lunch is to be followed by an afternoon snack of 200g rockmelon (canteloupe).

- Boil, steam, or microwave potatoes and beans, seperately, until tender;drain, cool.
- Meanwhile, make dressing by combining yogurt, rind and juice in medium bowl.
- Quarter potatoes; add to dressing with tuna, onion and parsley, stir to combine. Serve salad topped with egg.
MEXICAN PRAWN SALAD
From *Taste of Mexico* by Elisabeth L. Oritz & per her intro, "Salads in Mexico are usually served w/the main course instead of green vegetables. Salads containing meat or seafood, however, are very satisfying & usually served as a separate course." I adapted this essentially make-ahead & assemble in minutes salad to suit our preferences w/options to add Old Bay Seasoning to the dressing & garnish w/avocado or lime wedges as desired. All ingredients are pre-cooked, but it seemed realistic to show that + ingredient prep time, so 20 min was allowed for prep & 5 min for assembly. *Enjoy* !

- Line a lrg salad bowl, platter or individual serving dishes w/lettuce leaves. Mix the mayo, sour cream & opt Old Bay Seasoning (if desired) in a sml bowl & set aside.
- In a separate bowl, combine choppped prawns, beans, carrot, cucumber, eggs & chili. Season w/salt to taste preferences.
- Add the prepared dressing to the prawn mixture & fold it in gently to ensure all ingredients are well-mixed & coated w/the dressing. Pile the mixture into the bowl, onto the platter or divide equally among 4 individual serving dishes & serve immediately garnished w/opt avocado slices &/or lime wedges as desired.
