Your palate will be singing when you make this easy, comforting Thai Coconut Curry Seafood Soup. This version features the addition of light coconut milk for a creamy coconut broth, making it so healthy too. Skip the take-out and make this insanely delicious Thai dish at home!

1 tablespoon canola oil
2 shallots, finely chopped
2-3 garlic cloves, finely chopped
1 tablespoon grated fresh ginger
2 tablespoons red curry paste
1 13-oz. can lite coconut milk
1 cup low sodium chicken broth
1 tablespoon sambal oelek
2 tablespoons fish sauce
2 tablespoons low-sodium soy sauce
1 tablespoon fresh lime juice
½ cup thinly sliced button mushrooms, stemmed
1/2 cup thinly sliced shiitake mushrooms, stemmed
8 large sea scallops, cut in half
1/2 pound cod fish, skinned and cubed
3/4 pound medium shrimp, peeled and deveined
1 pound fresh mussels, scrubbed and debearded
Handful chopped fresh basil and cilantro
2 cups steamed brown or white rice
Garnish with extra herbs.

Steps:

  • Heat the canola oil over medium-high heat in a large stock pot or Dutch oven.
  • Sauté the shallots, garlic, and ginger for 3 to 5 minutes until fragrant. Add in the red curry paste and stir to coat.
  • Stir in coconut milk, chicken broth, sambal oelek, fish sauce, soy sauce, and lime juice. Bring to a boil, then simmer for 15 minutes on low heat.
  • Add in the sliced mushrooms, scallops, and cod fish and cook for 2 minutes.
  • Add in the shrimp and mussels. Cover the pot and cook for about 5 to 6 minutes until all of the mussels have opened. (Discard any unopened mussels.)
  • Remove from heat. Toss in the basil and cilantro.
  • Place a scoop of rice at bottom of bowl and ladle the seafood mixture over the top.
  • Garnish with extra herbs and serve while hot.

2 tablespoons unrefined peanut oil
5 green onions, finely chopped, dark green parts separated from white and pale green parts
3 tablespoons minced fresh cilantro, divided
3 garlic cloves, minced
6 tablespoons Thai green curry paste
1 1/4 cups water
1 13-to 14-ounce can unsweetened coconut milk
2 small fresh red Thai chiles or 1 red jalapeño chile
2 makrut lime leaves
1 tablespoon fish sauce (such as nam pla or nuoc nam)
1 large carrot, peeled, thinly sliced on diagonal (about 1 cup)
4 cups thinly sliced bok choy
8 ounces uncooked medium shrimp, peeled, deveined
8 ounces bay scallops
1 pound green or black mussels, scrubbed, debearded
2 tablespoons minced fresh basil
2 cups (about) steamed rice

Steps:

  • Heat oil in large saucepan over medium heat. Add the white and pale green parts of the green onions, 1 tablespoon cilantro, and garlic; sauté until tender, about 2 minutes. Add the curry paste; cook until fragrant, about 1 minute. Add 1 1/4 cups water, coconut milk, chiles, lime leaves, and fish sauce. Bring to simmer. Add the carrot; cover and cook until carrot is just tender, about 5 minutes.
  • Layer bok choy, shrimp, scallops, and mussels in pan. Cover and simmer until mussels open and seafood and bok choy are cooked (discard mussels that do not open), about 5 minutes. Stir in the dark green parts of green onions, 2 tablespoons cilantro, and basil.
  • Divide rice among four shallow bowls. Ladle curry over rice and serve.

1 1/2 red onions, chopped
2 celery ribs, chopped
2 large carrots, sliced thin
10 large mushrooms, sliced
1/2 red pepper, chopped
1/2 stalk lemongrass, minced
1 cup kale or 1 cup spinach leaves, chopped
1 cup green beans, trimmed and cut in half
2 cups cooked cubed chicken
2 (450 ml) cans coconut milk
900 ml chicken broth or 900 ml vegetable broth
1 tablespoon green curry paste
1/3 cup fresh cilantro, chopped
1 teaspoon fish oil

Steps:

  • Melt butter in large stock pot.
  • Add garlic, ginger, onions, celery and cook until tender.
  • Add the rest of the vegetables and simmer 10 minutes longer.
  • Add the broth, milk and curry paste.
  • Simmer for 15 minutes.
  • Add fish oil and cilantro to taste.

5 cups fish stock
2 tablespoons chopped lemongrass
2 tablespoons grated fresh ginger
5 cloves garlic, crushed
2 tablespoons fish sauce, or to taste
ground black pepper to taste
1 tablespoon sesame oil
1 large onion, diced
1 tablespoon Thai green curry paste
1 pound cooked, peeled, and deveined shrimp
8 ounces Mussel, with shell, yield after shell removed, cooked
1 (13.5 ounce) can coconut milk
½ teaspoon white sugar
½ lemon, juiced
2 tablespoons chopped fresh cilantro

Steps:

  • Combine fish stock, lemongrass, ginger, 1/2 of the garlic, 2 tablespoons fish sauce, and black pepper in a large soup pot. Boil over medium-low heat for 20 minutes.
  • Meanwhile, heat sesame oil in a large saute pan over medium heat. Add onion and remaining garlic. Saute until onion is softened, about 3 minutes, taking care to not burn the garlic. Add green curry paste; saute for 1 minute. Add shrimp and mussels and saute until heated through, 2 to 3 minutes.
  • Add seafood mixture to broth in the large pot. Simmer together for 10 minutes, then add coconut milk and sugar. Stir in lemon juice and cilantro. Taste and add more fish sauce if you desire.

1 quart fish broth
2 cans coconut milk
1 pound shrimp, (peeled and halved or cut into thirds)
1 pound white fish, (cut into bite-sized pieces)
1 TBSP coconut oil
2-3 cloves garlic, (chopped)
2-3 inch piece ginger, (chopped fine)
1 stalk lemongrass (upper half removed, chopped into 1 inch pieces)
1 regular red pepper, (cut into strips)
2-3 tsps Thai green curry paste
2-3 tsps coconut sugar (or organic cane sugar, optional)
Fish sauce (or soy sauce, to taste)
Lime wedges
Cilantro

Steps:

  • Saute garlic, ginger and lemongrass in coconut oil for a few minutes
  • Add coconut milk and fish broth, bring to a boil, reduce heat and simmer about 5 minutes. Remove about ½ cup of liquid and mix in curry paste. Start with a small amount, about a teaspoon, mix back into soup and taste. If more spice is desired, add more curry paste in same manner. Once you have your desired spiciness, do the same thing with the sugar, adding it in slowly to get your desired sweetness.
  • Add red pepper, shrimp and fish and simmer until shrimp and fish is cooked. Season to taste with lime, cilantro and fish sauce or soy sauce.

2 1/2 cups canned unsweetened coconut milk
1 cup water
1 1/2 cups purchased broccoli slaw
1/2 pound uncooked shrimp, peeled, deveined
1/2 pound sea scallops
1 pound mussels, scrubbed
1/2 cup chopped fresh basil
2 tablespoons fresh lime juice
2 tablespoons fish sauce (nam pla; optional)
2 cups hot cooked jasmine rice or medium-grain rice (2/3 cup raw)

Steps:

  • Place curry paste in large pot. Whisk in 1/2 cup coconut milk. Bring to boil; boil 1 minute. Stir in remaining 2 cups coconut milk and 1 cup water. Add broccoli slaw, shrimp, and scallops. Top with mussels. Return to boil. Reduce heat to low; cover and simmer until mussels open and seafood is cooked, about 3 minutes. Discard unopened mussels. Add basil, lime juice, and fish sauce, if desired. Season with salt and pepper.
  • Press hot rice into four 2/3-cup custard cups, dividing equally. Invert cups to unmold rice into 4 bowls. Spoon stew around rice and serve.

12 ounces large shrimp, unpeeled
2 teaspoons green curry paste
4 ounces straw mushrooms
1/2 cup carrot, shredded
1/2 cup green beans, cut into 1-inch pieces
1 cup Chinese cabbage, cut into 1-inch pieces
2 tablespoons tamarind paste
1 tablespoon brown sugar or 1 tablespoon palm sugar
1 tablespoon fish sauce

Steps:

  • In a large saucepan, simmer shrimp in enough water to cover, until cooked or orange-pink in color, about 1-2 minutes.
  • Cool shrimp in the stock and then peel.
  • Reserve 4 cups of the stock. Set Aside.
  • Heat the reserved 4 cups of stock in a saucepan over high heat.
  • Stir in the green curry paste.
  • Add the mushrooms, carrot, green beans, and cabbage.
  • Bring to a boil then reduce heat and simmer until vegetables are just tender.
  • Stir in tamarind paste, sugar, and fish sauce.
  • Place some shrimp in a bowl and ladle in the soup.
