1 bunch cilantro, stems removed
3 medium jalapénos (, seeded and roughly chopped)
1 2-inch fresh ginger (, peeled and sliced)
2 tablespoons olive oil
1 medium yellow onion (, chopped)
1 red bell pepper (, seeded and chopped into 1/2 inch pieces)
2 13.5 ounce cans unsweetened coconut milk
2 tablespoons soy sauce
1 1/2 treaspoons kosher salt
1 pound boneless, skinless chicken breasts (, cut into 1/2 inch slices)
3 cups cooked rice
chopped green onion and sliced red serrano or Thai chili peppers if desired

Steps:

  • Reserve 2 tablespoons of the cilantro leaves and place the rest of the cilantro, jalapeños, ginger in a food processor and pulse until finely chopped. Heat 2 tablespoons of oil in a large saucepan over medium heat and cook the ginger mixture for 2 minutes or until fragrant and season with 1/2 teaspoon kosher salt. Add the onion and red bell pepper and cook until softened, about 5 minutes.
  • Add the coconut milk and soy sauce and bring to a simmer. Add the chicken and the remaining salt and simmer until cooked through, about 10 minutes, and so the sauce thickens.
  • Spoon rice into bowls and serve with the ginger chicken. Garnish with the remaining cilantro leaves, green onion, and sliced serrano peppers.

I always get the coconut chicken soup when I go to a Thai restaurant. I love the combination of flavors! This is a dish that can be served over white or basmati rice or made thinner by adding additional chicken broth and turned into a soup. Add some paper thin sliced mushrooms and scallions at last minute if you're making the soup. This is also really good with shrimp. Do watch that red curry paste, though- it's spicy!!!

4 boneless skinless chicken breast halves, sliced into thin strips
1 (13 1/2 ounce) can coconut milk
1/2 cup chicken broth
2 -3 tablespoons fish stock
2 tablespoons brown sugar
1 -2 chicken bouillon cube
1/4 cup fresh basil leaf, chiffonade
1/2 cup frozen English peas
1/2 cup canned water chestnut
1/2-1 tablespoon Thai red curry paste
2 limes, quartered

Steps:

  • In the bottom of a pot, stir together the red curry paste and a little coconut milk to combine.
  • Saute the chicken until cooked through.
  • Add the rest of the ingredients and simmer 10 minutes or so, or until the peas are cooked and the sauce has reduced and thickened to desired consistency.
  • Serve over hot cooked basmati or white rice.
  • (I have added about a quart of chicken broth to this base recipe to make soup- adding thinly sliced mushrooms and scallions) Serve with wedges of lime.

16 ounces angel hair pasta or 16 ounces spaghettini, uncooked
2 tablespoons peanut oil
16 ounces boneless skinless chicken breasts, cut into bite sized pieces
1 cup light coconut milk (NOT Coco Lopez) or 1 cup regular unsweetened coconut milk (NOT Coco Lopez)
1/4 cup creamy smooth cashew butter or 1/4 cup peanut butter
1 tablespoon soy sauce
1 tablespoon fish sauce (or soy sauce if you prefer)
3 garlic cloves, minced
1/2 teaspoon mild curry powder
1 tablespoon brown sugar or 1 tablespoon palm sugar
1/2 teaspoon red cayenne pepper
4 cups baby portabella mushrooms, sliced (crimini)
1 red bell pepper, chopped
10 -12 scallions, sliced

1/2 cup roasted cashews, chopped

Steps:

  • Heat water for noodles and cook pasta 6-8 minutes (stir-fryable) or according to package directions.
  • Drain noodles, rinse under cool water and allow to drain; cut into smaller pieces if desired.
  • Meanwhile, toast coconut if necessary.
  • Using a whisk, mix together ingredients for sauce: coconut milk, peanut butter, soy sauce, fish sauce, garlic, curry powder, brown sugar, and cayenne pepper.
  • Heat oil in large pan until almost smoking.
  • Add chicken and stir-fry until almost done and nicely browned.
  • Add bell pepper and cook 1-2 minutes.
  • Add mushrooms and cook until they are tender.
  • Add chopped scallions, basil, and the juice of the lime and cook briefly.
  • Stir in sauce mixture and allow to heat.
  • Add cooked noodles and chopped cilantro and toss until thoroughly coated.
  • Allow to heat through then remove from heat.
  • Serve garnished with toasted coconut, chopped cashews, and minced chiles.

2 teaspoons vegetable oil
8 small skin-on, bone-in chicken thighs (about 3 pounds)
Kosher salt and freshly ground pepper
2 tablespoons plus 1 teaspoon packed dark brown sugar
1 tablespoon fish sauce
1/2 cup light Thai coconut milk
2 tablespoons plus 1 teaspoon distilled white vinegar
1/2 English cucumber
1 large carrot
6 ounces thin dried rice noodles
1/4 cup torn fresh mint

Steps:

  • Bring a pot of water to a boil. Meanwhile, heat the vegetable oil in a large skillet over medium-high heat. Season the chicken on both sides with salt and pepper. Add skin-side down to the skillet and cook until dark brown and crisp, about 8 minutes; flip and brown the other side, 2 minutes. Remove to a plate and wipe out the skillet.
  • Off the heat, add 2 tablespoons brown sugar to the skillet and sprinkle the fish sauce over the sugar. Return the skillet to medium heat, stir and bring to a simmer. Add the coconut milk and 1 teaspoon vinegar; stir to combine. Return the chicken skin-side up to the skillet and gently simmer in the sauce, turning occasionally, until cooked through, about 25 minutes. Add a splash of water occasionally if the sauce gets too thick.
  • Meanwhile, halve the cucumber lengthwise and scoop out the seeds. Cut the cucumber and carrot into thin matchsticks. Toss with the remaining 2 tablespoons vinegar, 1 teaspoon brown sugar and 3/4 teaspoon salt in a medium bowl.
  • Remove the boiling water from the heat, add the rice noodles and stir to loosen. Let sit until tender, 2 to 4 minutes, then drain and rinse under cold water. Shake out as much water as possible.
  • Divide the noodles and chicken among plates. Spoon the coconut sauce on top. Serve with the vegetables; top with the mint.

1 tablespoon unsalted butter
1/4 cup finely diced Spanish onion
2 cups long-grain rice
One 13- to 14-ounce can unsweetened coconut milk
1 1/2 teaspoons kosher salt
1/4 teaspoon freshly ground black pepper
1 cup cashews
4 green onions, thinly sliced
1 teaspoon allspice berries
1 teaspoon whole cloves
1 teaspoon whole fennel seeds
2 teaspoons (or more if you like your curry spicier) hot Madras curry powder
3 tablespoons canola oil
8 boneless, skinless chicken thighs, cut into 1-inch pieces
Kosher salt and freshly ground black pepper
1 small Spanish onion, thinly sliced
2-inch piece fresh ginger, peeled and grated
2 tablespoons tomato paste
6 cups chicken stock
1 cup unsweetened coconut milk
2 cinnamon sticks
1/2 mango, chopped
1/2 cup dried coconut
2 green onions, green and pale green parts only, thinly sliced
1/4 cup chopped fresh cilantro leaves
1/4 cup chopped fresh mint
Honey, to taste

Steps:

  • For the coconut green onion rice: Melt the butter in a medium saucepan over high heat. Add the onion and cook until soft, about 2 minutes. Add the rice and stir to coat the grains in the butter. Add the coconut milk, salt, pepper and 1 cup of water and bring to a boil. Stir once, cover, reduce the heat to medium-low and cook until tender, about 16 minutes.
  • Preheat the oven to 300 degrees F.
  • Spread the cashews on a baking sheet and toast in the oven until lightly golden brown, about 8 minutes. Let cool and finely chop in a food processor.
  • Remove the rice from the heat and let sit, covered, for 5 minutes. Remove the lid, fluff the rice with a fork and fold in the green onions and half of the cashews. Let sit 5 minutes more before serving.
  • For the chicken curry: Heat a small saute pan over low heat. Add the allspice, cloves and fennel and toast, shaking the pan occasionally, until you can smell the spices, about 5 minutes. Remove from the heat and let cool slightly. Transfer the spices to a coffee or spice grinder and finely grind. Combine the ground spices with the curry powder in a small bowl.
  • Heat the oil in a large Dutch oven over medium-high heat until it begins to shimmer. Season the chicken with salt and pepper and then with 1 tablespoon of the curry spices, tapping off any excess. Brown the chicken on all sides, about 8 minutes, and remove to a plate.
  • Add the onion to the Dutch oven and cook until soft, about 4 minutes. Add the ginger and cook for 30 seconds, then add the remaining curry spices and cook for 1 minute. Add the tomato paste and cook for 1 minute. Add the chicken stock, coconut milk, salt and pepper and cook until reduced slightly, about 10 minutes. Add the cinnamon sticks and mango and cook until reduced slightly, about 10 minutes. Reduce the heat to low, add the chicken and cook until tender, about 15 minutes. Remove the chicken to a bowl and discard the cinnamon stick and mango pieces. Add the dried coconut and the remaining 1/2 cup cashews and cook until slightly thickened, about 10 minutes more. Remove from the heat, return the chicken to the pot and fold in the green onions, cilantro and mint and season with salt, pepper and honey, if needed.
  • To serve: Spoon the rice into bowls and ladle some chicken curry over.

1 ½ pounds skinless, boneless chicken breast halves - cubed
1 tablespoon curry powder
2 cups 1 inch pieces asparagus
1 cup snow peas
½ cup shredded carrots
1 cup chopped green onions
1 (14 ounce) can light coconut milk

Steps:

  • In a 2 quart saucepan, combine water and rice. Cover, and bring to a boil over high heat. Reduce heat, and simmer for 20 minutes.
  • In a medium size bowl, combine the chicken and curry powder, and toss to coat.
  • Coat a large nonstick skillet with cooking spray. Cook the chicken, stirring frequently, over medium-high heat for 4 minutes. Mix in the asparagus, snow peas, carrots and green onions; cook for 3 minutes. Pour in the coconut milk , continue cooking until sauce is hot, and chicken is cooked through. Serve over the hot, cooked rice.

1 lb chicken breast
1 medium onion
1 red bell pepper
12 ounces frozen green peas
12 ounces canned pineapple
2 tablespoons oil
1 garlic clove
3 teaspoons thai spices
1 teaspoon sweet curry

1 (8 ounce) can light coconut milk
1 (8 ounce) container vanilla yogurt
1 piece dried ginger (or fresh)
1 cinnamon stick
salt & pepper
jasmine rice
cashews (optional)

Steps:

  • Heat oil in a heavy saucepan
  • Chop garlic, onion and bell pepper. Add to pan and cook until brown and soft.
  • Chop pineapple into bite sized pieces and add to pan.
  • Add the curry, fish sauce and thai spices (I like Penzeys Thai Sate seasonings) and stir.
  • Cut the chicken into bite sized pieces, lightly season with salt and pepper, add to pan and brown on all sides.
  • Add coconut milk and yogurt. Bring to a boil then turn it down to a simmer.
  • Add green peas, ginger and cinnamon stick.
  • Let simmer for 10-15 minutes.
  • Remove cinnamon stick and dried ginger root.
  • Serve over rice and top with chopped cashews if desired.

6 boneless skinless chicken breasts
1/4 cup coconut milk (canned (stir before measuring)
1 tablespoon minced fresh ginger
1 teaspoon fresh ground black pepper
1 teaspoon hot chili flakes
4 green onions (thinly sliced (4 to 5)
3/4 cup rice vinegar
1/2 cup sugar
3 tablespoons soy sauce
1 teaspoon crushed red pepper flakes
3/4 cup light coconut milk ((reserve 2 Tablespoons)
1 1/2 cups water
2 garlic cloves (minced)
1/2 teaspoon salt
1 cup basmati rice
1/2 cup chopped pineapple
2 tablespoons fresh thai basil chiffonade

Steps:

  • For Chicken:.
  • Rinse chicken and pat dry. In a large bowl, mix coconut milk, ginger, pepper, and hot chili flakes. Add chicken and mix; cover airtight and chill at least 1 hour or up to 1 day.
  • Prepare Glaze.
  • (Start rice when you start the grill or the broiler).
  • Lift chicken from bowl, reserving marinade; pull thighs open and lay flat on a lightly oiled barbecue grill over a solid bed of hot coals or high heat on a gas grill; close lid on gas grill. Cook, turning thighs as needed to brown on both sides, until meat is no longer pink in center of thickest part (cut to test), 10 to 12 minutes, basting frequently with remaining marinade (use it all) until 2 minutes before chicken is done.
  • Transfer thighs to a warm platter and pour the chili glaze evenly over meat; garnish platter with green onions.
  • For Glaze:.
  • In a 2- to 3-quart pan, combine ¾ cup rice vinegar, ½ cup sugar, 3 tbsp soy sauce, and 1 tsp hot chili flakes. Bring to a boil over high heat and cook, stirring often, until mixture is reduced to ½ cup, 8 to 10 minutes. Use hot. If making glaze up to 1 week ahead, cover and chill; reheat before serving.
  • For Rice:.
  • Bring coconut milk (reserve 2 tablespoons), water, garlic, and salt to a boil. Add rice. Simmer uncovered for 20 minutes. When rice is done, stir in reserved coconut milk, pineapple and basil.
