1 3/4 lbs. (800 g) chicken drumsticks
2 tablespoons finely chopped cilantro stems
3 cloves garlic, minced
chopped cilantro leaves, for garnishing
Thai sweet chili sauce, for dipping
1 tablespoon oil
1 3/4 tablespoons fish sauce
2 tablespoons coconut milk
1 tablespoon honey or Thai palm sugar
3 dashes ground black pepper
1 pinch cayenne pepper
1 pinch turmeric powder

Steps:

  • Preheat oven to 375°F (190°C).
  • Rinse the chicken and pat dry with paper towels. Combine all the ingredients in Marinade, whisk to mix well to form a nice milky pale yellow mixture.
  • Add the cilantro and garlic to the chicken, rub onto the chicken drumsticks with your hand. Add the Marinade to the chicken, mix to coat well and marinate for 30 minutes or best for two hours.
  • Arrange the chicken on a cookie sheet lined with parchment paper, bake for 40 minutes or until the chicken is cooked through. Garnish with chopped cilantro and serve immediately with Thai sweet chili sauce.

4 boneless, skinless chicken thighs (about 1 pound)
3 tablespoons canola oil
Salt and freshly ground black pepper
2 tablespoons minced garlic
1/4 cup cilantro leaves
2 limes, 1 zested and 2 juiced
2 tablespoons seasoned rice vinegar
2 tablespoons canola oil
1-inch chunk ginger, peeled and grated (about 1 tablespoon)
1 lime, zested and juiced
2 cloves garlic, minced
1/4 teaspoon red pepper flakes
1 cup chicken stock
Salt and freshly ground black pepper
1 tablespoon Thai green curry paste
1 tablespoon seasoned rice vinegar
3 scallions, white and green parts, chopped, for garnish
1 pound spaghetti, cooked al dente and sprayed with canola oil spray
1 carrot, shredded
1/4 cup crushed roasted peanuts

Steps:

  • For the chicken: Combine all the ingredients in a nonreactive bowl and let stand at room temperature for 20 minutes. Prepare a grill pan to medium-high heat and place the chicken thighs on the pan, cooking for 4 minutes per side.
  • For the noodles: In a medium saute pan over medium heat, add the canola oil. Add the ginger, lime zest and juice, garlic, red pepper flakes and chicken stock. Stir all to combine and sprinkle with salt and pepper. Add the curry paste, seasoned rice vinegar and scallions. Reduce the heat to low and simmer for 2 minutes.
  • Place the noodles in a large serving bowl along with the carrots and crushed peanuts and toss well to combine. Add the cilantro chicken and serve.

1 cup fresh cilantro leaves and tender stems
1/2 cup packed light brown sugar
1/4 cup honey
About 1/4 cup low-sodium soy sauce
About 2 tablespoons fish sauce
4 cloves garlic, cracked from skin
2 serrano chile peppers, seeded and chopped
1 Fresno chile pepper, sliced
One 2-inch piece fresh ginger, peeled and grated
2 pounds pork loin ribs, cut into single bones
8 chicken drummers (drumsticks), skinned
1 stalk lemongrass, white part chopped
1 lime, sliced
1/3 cup superfine sugar
One 1-inch piece fresh ginger, peeled and thinly sliced
About 3 tablespoons rice vinegar
2 tablespoons chopped fresh cilantro
2 tablespoons chopped fresh mint
2 tablespoons Sriracha
1 tablespoon fish sauce
1 Fresno chile, finely chopped
Juice of 1 lime
1/2 cup dry-roasted cashews or peanuts, finely chopped
1 bunch scallion tops, thinly sliced (reserve the whites for the Thai Cucumbers, recipe follows)
Jasmine rice, for serving
Thai Cucumbers, recipe follows, for serving
2 tablespoons rice vinegar
2 teaspoons superfine sugar
1 teaspoon fine sea salt
Juice of 1 lime
1 carrot, grated
1 seedless cucumber, peeled and thinly sliced
1 bunch scallion whites, finely chopped
1/4 cup fresh mint leaves
1 Fresno chile pepper, seeded and finely chopped

Steps:

  • For the ribs and legs: Combine the cilantro, brown sugar, honey, soy sauce, fish sauce, garlic, chile peppers, ginger and the white part of the lemongrass in a blender or food processor. Puree until a fairly smooth, thick sauce forms.
  • Put the pork ribs and chicken drummers in a large resealable plastic bag or shallow plastic storage container and slather the marinade over the meat. Add the lime slices and the top part of the lemongrass to the bag and refrigerate for 1 to 4 hours.
  • For the sweet and sour sauce: Combine 1/2 cup water, the sugar and ginger in a small pot. Bring to a simmer, stirring to dissolve the sugar, then simmer for a couple of minutes to infuse the syrup with the ginger. Pour the syrup into a small bowl and let cool. Remove the ginger, then stir in the vinegar, cilantro, mint, Sriracha, fish sauce, chile pepper and lime juice.
  • Preheat the oven to 350 degrees F.
  • Arrange the ribs in an even layer in a baking dish, and add the marinade and lime slices. Cover tightly with foil and bake for 1 hour. Remove the baking dish from the oven and add the drumsticks. Cover and bake for 30 more minutes.
  • Raise the oven temperature to 425 degrees F. Uncover the baking dish and bake until the ribs and drumsticks are deeply browned, 20 to 25 minutes. Transfer to a serving platter and drizzle with about half the sweet and sour sauce. Top with the nuts and scallions. Serve with rice and Thai Cucumbers. Pass the remaining sweet and sour sauce at the table.
  • Whisk together the vinegar, sugar, sea salt and lime juice in a bowl until the sugar and salt have dissolved. Add the carrots, cucumbers and scallions, and toss to combine. Transfer the mixture to a plastic food storage container and refrigerate until ready to serve. Add the mint and chile pepper just before serving, and toss to combine.

1/2 cup buttermilk
1/4 cup flaked coconut
1 cup fresh cilantro, chopped
2 garlic cloves, crushed
1/2 teaspoon salt
1/8 teaspoon pepper
4 whole chicken legs (2 lbs)

Steps:

  • Combine buttermilk, coconut, cilantro, garlic, salt and pepper in electric blender.
  • Whirl at high speed until pureed.
  • Pour into heavy-plastic food-storage bag.
  • Loosen skin on chicken legs.
  • Pull back from meat, leaving attached.
  • Add the chicken legs to bag, squishing to coat with the marinade.
  • Push out all the air; seal and marinate in refrigerator overnight.
  • Remove chicken from bag.
  • Pull skin back over meat.
  • Grill or broil 6 inches from heat for 45 to 50 minutes or until no longer pink near bone, turning legs over halfway through cooking.
  • Garnish with cilantro.

Steps:

  • Place all the ingredients above in a food processor and process until smooth.
  • Pour marinade over chicken breast and let flavors sink in for 15 minutes in the refrigerator.
  • Prepare your grill or broiler.

  • MARINATE CHICKEN: Place garlic, cilantro, soy sauce, lime juice, and sesame oil in a food processor and process until smooth.
  • Place chicken in large zipper-top bag, and pour marinade into bag. Seal the bag, and shake until chicken is coated with marinade. Lay bag flat in refrigerator, and marinate for at least 1 hour, and up to overnight.
  • COOK CHICKEN: Move oven rack 4 inches from broiler, and preheat broiler. Line rimmed baking sheet with foil, and spray lightly with nonstick cooking spray. Remove chicken from marinade and arrange in a single layer, spacing apart, on prepared baking sheet. Drizzle chicken with 1 tablespoon olive oil, and season with salt and pepper. Broil until browned and cooked through, about 10-14 minutes (all depending on your broiler). Internal temperature of chicken should register 165 degrees F on a meat thermometer. Let chicken rest for 5 minutes before serving. Serve with lime wedges.
