1 kg Chicken thighs (Boneless and skinless and cut lengthways )
150 g Natural yoghurt
2 tsp Paprika
2 tsp Ground cumin
0.5 tsp Cinnamon
0.5 tsp Dried chilli flakes
2 tsp Garlic granules ((or 3 cloves of fresh garlic))
1 Lemon (Zest and juice)
Salt and freshly ground pepper

Steps:

  • Mix the marinate ingredients together well in a large bowl.
  • Add the chicken thighs and marinade for at least 30 minutes or even better, overnight. (Cover with cling film and put in the fridge.)
  • Thread onto skewers and cook for about 20 minutes until golden on the outside and cooked through.

¼ cup soy sauce
3 tablespoons dark brown sugar, packed
Zest of one lime
2 tablespoons vegetable oil
3 garlic cloves, minced
1 tablespoon curry powder
½ teaspoon ground ginger
¼ teaspoon ground cardamom
½ teaspoon salt
2½ - 3 pounds boneless, skinless chicken breasts
1 (13-oz) can coconut milk (do not use low fat)
¼ cup peanut butter
⅓ cup dark brown sugar, packed
1½ tablespoons soy sauce
1 tablespoon red curry paste
3 tablespoons fresh lime juice, from 2 limes
1 lime, cut into wedges (optional)

Steps:

  • Pound the chicken breasts to an even ½-inch thickness between two pieces of wax or parchment paper. Cut the breasts into 1½" pieces and set aside.
  • Make the marinade by combining the soy sauce, dark brown sugar, lime zest, vegetable oil, garlic, curry powder, ginger, cardamom and salt in a large bowl. Add the chicken pieces to the bowl and mix until chicken is evenly coated. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 4 hours or overnight.
  • Make the sauce by whisking together the coconut milk, peanut butter, brown sugar, soy sauce and red curry paste in a medium saucepan. Bring to a simmer, then cook over medium heat, stirring occasionally, for about 3 minutes. Add the fresh lime juice. Set aside.
  • Preheat the grill to high heat. Meanwhile, thread the chicken pieces onto skewers. Grease the grill. Place the skewers on the grill and cook for about 10 minutes, turning once, or until the chicken is cooked through. Serve the chicken skewers with the Coconut-Peanut Sauce and lime wedges, if desired.

The marinade for this chicken is true to the authentic Thai grilled chicken (Gai Yang). Traditional Gai Yang is served with a dipping sauce but I find chicken thighs so juicy that it doesn't need it. Instead, I incorporate the flavour into the Marinade. Traditionally this is cooked over charcoal which gives it a wonderful smokey flavour. But it really is fantastic even cooked on the stove or in the oven, though my preference is to cook it on the outdoor grill. The key ingredients are the lemongrass and fish sauce - don't omit or substitute these!

1 large lemongrass stalk (, white part only very finely chopped (about 2 tbsp) (Note 2))

3 tbsp fish sauce
2 tbsp Chinese cooking wine (, sherry or sake (Japanese cooking wine) (Note 4))

Steps:

  • Place Marinade ingredients in a large ziplock bag. Massage to mix.
  • Add the chicken into the ziplock bag and massage to spread the marinade over all the chicken. Marinate for a minimum of 3 hours, preferably overnight (up to 24 hours).
  • Remove chicken from the Marinade and discard the Marinade (unless baking in the oven - refer Note 3).
  • Heat the outdoor grill on medium high. Or heat 1/2 tbsp oil in a non stick pan over medium high heat on the stove.
  • Cook the chicken until golden brown - around 3 minutes each side.
  • Rest for a few minutes before serving with lime wedges on the side, and garnished with fresh chilies and cilantro, if using.

1 red chili pepper, seeds removed and chopped
1 tablespoon chopped shallot
2-inch (5 cm) piece fresh ginger, peeled and chopped
1 garlic clove, peeled and chopped
Zest and juice of 1 lime
2 teaspoons honey or 1 teaspoon sugar
1/2 teaspoon ground coriander
1/2 teaspoon cumin
½ teaspoon fish sauce
¼ teaspoon salt
Small pinch white pepper
¼ cup (60 ml) light tasting olive or vegetable oil
4 boneless, skinless chicken breasts cut into large chunks

Steps:

  • Add all of the ingredients (except the chicken) to a blender with 1 tablespoon water. Blend until smooth.
  • To a bowl with a lid or a ziptop bag, add the chicken. Pour over ½ of the marinade and mix well to coat all of the chicken. Refrigerate for 1 hour.
  • Thread the chicken onto 4 skewers.
  • Preheat barbecue or indoor grill pan on medium high heat.
  • Grill the skewers for about 8 minutes. They will be ready to turn when they no longer stick to the grill and they have grill marks. Separate some of the marinade to a separate bowl. Turn, baste with the marinade and grill for 5 minutes or so on the other side until slightly charred and they no longer stick.
  • Discard any unused sauce. Do not consume any sauce that has come into contact with raw meat.

2 green onions, thinly sliced
1/4 cup fish sauce

2 tablespoons unsalted butter
8 bone-in, skin-on chicken thighs
1/4 cup peanuts, chopped
2 tablespoons chopped fresh cilantro leaves
1/2 cup sweet chili sauce
2 tablespoons reduced sodium soy sauce
2 cloves garlic, minced
1 tablespoon fish sauce
1 tablespoon freshly grated ginger
Juice of 1 lime
1 teaspoon Sriracha, or more, to taste

Steps:

  • Preheat oven to 400 degrees F. To make the sauce, whisk together chili sauce, soy sauce, garlic, fish sauce, ginger, lime juice and Sriracha in a small bowl; set aside. Melt butter in a large oven-proof skillet over medium high heat. Add chicken, skin-side down, and sear both sides until golden brown, about 2-3 minutes per side. Stir in chili sauce mixture. Place into oven and roast until completely cooked through, reaching an internal temperature of 165 degrees F, about 25-30 minutes. This recipe comes from Edward Khechemyan, the chef of Adana in Los Angeles. The food is not easily categorized. He learned to cook from his father, but given that that man was from Iran, that his upbringing was Armenian-American and that the Russian influence was strong everywhere, the menu is a hodgepodge in the best sense of the word, boasting of innumerable kebabs and more than a few intriguing salads and dishes of beans, and of rice and other grains. In his kitchen, Khechemyan moves quickly, and within 30 minutes, we had done four kebabs. The marinades are simple (he uses a lot of mild dried red chili powder, the kind you can most easily buy in Korean markets), and the grilling technique is not difficult. But it's unusual: he grills slowly (over briquettes fired with gas, by the way), not too close to the fire, he insists, until gorgeously browned. The fire is not superhot, but it's even - gas is good for that - and he keeps the grill grate a good six inches above the fire

1 small red onion
1 red pepper
2 teaspoons neutral oil
1 teaspoon salt

Steps:

  • Stir together all marinade ingredients in a small bowl. Place the chicken in a large zip-top bag or resealable container and pour in the marinade, making sure the chicken is completely coated. Chicken should marinate at least an hour and up to 48 hours. If prepping the veggies ahead of time, cut into 1-inch pieces and pack them in a second bag or container. Pack chicken & veggies in your cooler.
  • In a separate container, mix together all the ingredients for the peanut dipping sauce. Seal and pack in your cooler.
  • Fire up your grill or get your campfire going. You'll be cooking the skewers over medium-high to high heat.
  • Build your skewers: chicken on their own skewers, and the onions & peppers together. Brush the veggie skewers with oil, and season the chicken skewers with salt.

3 tbsp natural peanut butter (see notes)
1 tbsp soy sauce

2-3 tbsp coconut milk
2 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
1/4 cup coconut milk
3 garlic cloves, minced

3 tsp yellow curry powder
2 tsp turmeric
1 tbsp brown sugar
1 tbsp fish sauce
2 tbsp oil (avocado, peanut, or canola)

Steps:

  • Mix all of the ingredients except the coconut milk together in a small bowl. Whisk in a little of the coconut milk at a time until the sauce reaches your desired consistency. Refrigerate the sauce until just before you cook the chicken, then leave it at room temperature while the chicken cooks.
  • In a medium-sized mixing bowl, combine the coconut milk, garlic, ginger, soy sauce, curry powder, turmeric, honey, and fish sauce.
  • Using a large resealable plastic bag or a large bowl, combine the chicken and marinade, gently mixing it to ensure all surfaces of the chicken pieces are covered (if using a bowl, be sure to use a spoon or tongs for this step - anything but your hands - so the tumeric doesn't stain your skin). Marinate for at least 2 hours and up to 8 hours, turning the bag occasionally to help distribute the marinade.
  • Preheat the grill to medium high heat.
  • Remove the chicken from the refrigerator then drain off and discard the marinade.
  • Gently pat the chicken dry, then thread the chicken onto skewers. Brush the chicken with the oil and season it with the salt and pepper.
  • Cook the chicken on the grill until it's completely cooked through, about 12-15 minutes (cooked chicken should reach an internal temperature of 165F before consuming).
  • Place the skewers on a serving plate and sprinkle with the peanuts and cilantro (if using). Serve them with the peanut sauce on the side for dipping (you can also just drizzle the sauce over the chicken on the serving plate then add the toppings after).

One Skillet Thai Chicken Thighs + Noodles! A sticky, Thai inspired chicken recipe served with Thai Rice noodles, cooked in one skillet!

6 chicken thighs (, skin-on and bone-in*)
1 teaspoon peanut oil
3 green onions (, finely sliced)
1 small red chilli (, finely sliced)
1/4 cup crushed peanuts
1 cup Thai sweet chili sauce ((use sugar-free for lower carb))
1/3 cup low-sodium soy sauce
1/3 cup rice wine vinegar ((or white vinegar))
6 tablespoons coconut sugar (, or brown sugar (use brown sugar substitute for lower carb))
4 tablespoons fish sauce
2 tablespoons lime juice
1 tablespoon minced lemongrass
1 tablespoon minced garlic
2 teaspoons sesame ((or peanut) oil)
6.5 oz | 180 g rice stick noodles (, prepared to package instructions (usually boiled for 5-6 minutes))
3/4 cup bean sprouts
1 large grated carrots

Steps:

  • Preheat oven to 200°C | 400°F.
  • To prepare the glaze, combine all of the glaze ingredients in a deep bowl; whisk until combined. Pour about 2 cups of the sauce into a small, non stick saucepan and reserve for later (you need only 1/4 cup of sauce for the marinade).
  • Trim any extra skin and fat from the chicken thighs. Place the thighs into 1/4 cup of marinade and toss to evenly coat.
  • Heat the peanut oil in a large skillet over high heat and sear the thighs on both sides until browned (about 4-5 minutes each side).
  • Transfer to the preheated oven and bake until cooked through (about 25-30 minutes). Change your oven settings to grill or broil, and broil for an extra 3 minutes, or until the skin is caramelised and slightly charred. They will look shiny from the glaze.
  • While the chicken is in the oven, bring the remaining glaze to a simmer on low-medium heat, until the sauce bubbles up and begins to thicken (it should take about 3-5 minutes).
  • In the last 10 minutes of the chicken cooking time, prepare the rice noodles to package instructions (usually placing them into a bowl and covering in boiling water for 5-6 minutes until softened).
  • When the chicken is golden and crispy, remove from the oven; transfer to a warmed plate and keep warm by lightly tenting with foil.
  • Drain half of the excess chicken fat from the skillet and remove any charred pieces (this is optional). Heat skillet over medium-high heat and add one cup of the glaze with the prepared noodles. Stir fry for about a minute to combine, add in the bean sprouts and carrots; stir fry for a further minute or two.
  • Remove from heat; place the chicken back into the skillet over the noodles.
  • Garnish with the green onion slices, red chilli and sprinkle with the crushed peanuts. Serve with the remaining glaze!

1/2 cup unsweetened coconut milk, stirred
1/4 cup smooth peanut butter
1 Tbs. fresh lime juice
1 Tbs. soy sauce
2 to 3 tsp. Thai red curry paste
1-1/2 to 2 lb. boneless, skinless chicken thighs (about 6 to 8 thighs), trimmed of excess fat
4 Tbs. vegetable oil
2 Tbs. fresh lime juice
2 tsp. Thai red curry paste
2 cloves garlic, minced
1 tsp. kosher salt
1/4 tsp. freshly ground black pepper
2 thin scallions, white and light-green parts only, thinly sliced on the diagonal
Lime wedges, for serving

Steps:

  • In a small saucepan, combine the coconut milk, peanut butter, lime juice, soy sauce, and curry paste. Cook over medium heat just until the sauce comes to a gentle simmer, whisking until smooth. Remove from the heat, cover, and set aside. Just before serving, whisk the sauce to bring it back together if it has separated.
  • If using bamboo skewers, soak 12 10-inch skewers in water for at least 30 minutes before cooking time. Alternatively, use metal skewers.
  • Cut the thighs evenly into 1-1/2-inch pieces. In a medium bowl, whisk the oil, lime juice, curry paste, garlic, salt, and pepper. Add the chicken to the bowl and mix well. Cover and refrigerate for 1 hour or up to 1 day.

4 boneless, skinless chicken breast halves (about 4 ounces each)
2 teaspoons Asian chile paste, such as sambal oelek
Kosher salt and freshly ground black pepper
4 scallions
1/4 red bell pepper, cut into long thin strips
1/4 yellow bell pepper, cut into long thin strips
1 tablespoon vegetable oil, like soy or peanut
2 tablespoons chopped toasted peanuts
2 tablespoons freshly squeezed lime juice
2 tablespoons Southeast Asian fish sauce
2 tablespoons water
1/2 teaspoon Asian chile paste, such as sambal oelek
1 teaspoon honey
1 tablespoon chopped fresh mint or coriander (cilantro)

Steps:

  • Pound each chicken breast between 2 lightly oiled sheets of parchment or waxed paper into a 4 by 4 inch piece about 1/8-inch thick.
  • Lay a piece of chicken smooth-side down on the work surface. Spread 1/2 teaspoon of the chile paste over the surface and season with salt and pepper, to taste. Trim and halve the scallions lengthwise. Lay them side-by-side across the lower third of the chicken, so there is white and greens at both ends. Top with 2 or 3 pieces of the red and yellow peppers. Roll the chicken around the vegetables into a tight cylinder. Thread a wooden skewer through the seam of the roll to seal. Repeat with the remaining chicken and vegetables to make 4 rolls. These can be made up to 24 hours ahead and refrigerated.
  • Preheat the oven to 425 degrees F.
  • Heat the oil in an oven-proof nonstick skillet over high heat. Season the rolls with salt and pepper, to taste. Lay the rolls, seam side down, in the pan, and cook, turning occasionally, until browned, about 2 minutes. Transfer the pan to the oven, and cook until the chicken is cooked through, about 5 minutes more. Meanwhile, make the sauce. Combine the lime juice, fish sauce, water, chile paste, honey, mint and coriander in a small bowl and set aside.
  • To serve: Carefully remove the skewers, taking care to keep the rolls intact. Cut across the rolls to make round pieces about 3/4-inch thick, and thread onto skewers. Transfer to a platter, sprinkle with peanuts and serve with the dipping sauce.

These succulent spicy Easy Thai Chicken Skewers are quick to prepare, and they're paleo too!

1/4 cup soy sauce, (gluten-free tamari, or coconut aminos for paleo diet)
1 tsp sesame oil
2 tbsp honey
1 - 2 tsp Sambal Oelek, (hot chile paste, or Sriracha sauce)
1/2 inch fresh ginger root, (peeled and finely grated)
2 cloves garlic, (crushed)
2 medium chicken breasts, (or 4 chicken thighs, skinless and boneless)

Steps:

  • If using wooden skewers, soak in water for at least 30 minutes.
  • Mix all marinade ingredients together.
  • Cut chicken into 1-inch cubes or strips and thread onto skewers. (Alternatively, you can marinate the chicken first and thread onto skewers just before grilling.)
  • Put chicken pieces in a shallow dish, pour marinade over top and turn chicken pieces to make sure all are coated or submerged. Let marinate for at least an hour in the refrigerator
  • Grill over medium heat, turning after 7 minutes. Grill on the other side until chicken is no longer pink and the internal temperature of the thickest parts registers 165°F.
  • Add a squeeze of lime and serve with lime quarters. Delicious over Never-Fail Thai Coconut Rice.
