Spinach and Artichoke Chicken Casseroles image

Provided by Molly Yeh

Time 1h5m

Yield 8 servings

Number Of Ingredients 18

3 tablespoons unsalted butter
1 large onion, finely chopped
Kosher salt
2 cloves garlic, chopped
6 tablespoons all-purpose flour
2 cups whole milk
Enough chicken soup bouillon for 2 cups broth
1 1/2 pounds boneless, skinless chicken thigh or breast, chopped into 1/2- to 3/4-inch pieces
1/2 teaspoon dried thyme
Freshly ground black pepper
One 14-ounce can artichokes, drained and chopped
One 10-ounce block frozen spinach, thawed and drained
8 ounces light cream cheese
1/2 bunch fresh parsley
Pinch crushed red pepper
One 16-ounce can refrigerated biscuit dough
1 large egg, lightly beaten with a splash of water
Flaky salt, such as Maldon

Steps:

  • In a large skillet over medium-high heat, melt the butter. Add the onion and a pinch of kosher salt and cook, stirring, until soft, about 10 minutes. Add the garlic and cook for another minute.
  • Stir in the flour to evenly distribute. Add 1 cup milk, stirring continuously until thickened; repeat with the remaining 1 cup. Stir in the chicken soup bouillon, then add the chicken, thyme and a few turns of black pepper and simmer, stirring often, until the chicken is cooked through and no longer pink, 10 to 15 minutes. Add the artichokes, spinach, cream cheese, parsley, a pinch of crushed red pepper and a few turns of black pepper. Stir until the cream cheese is melted. Taste and adjust as desired.
  • Divide the spinach, artichoke and chicken mixture into eight 5-inch aluminum pans or a 9-by-13-inch casserole pan. Separate the biscuits, then top the casseroles with them. Brush them with the egg wash and sprinkle with the flaky salt and some black pepper.
  • If baking immediately, preheat the oven to 400 degrees F. Bake until the biscuits are golden brown, about 15 minutes.
  • If freezing, allow the casseroles to cool to room temperature, then cover tightly with foil and freeze. To reheat, bake at 400 degrees F for 30 minutes.

CREAMY SPINACH PASTA CASSEROLE

Creamy Spinach Pasta Casserole image

I had a bag of frozen spinach thawed and wanted to make regular greek spinach rice, but then my brain got toggled with cream and cheese and mushrooms and pasta for some reason, one thing led to another and the creation of this recipe happened. It was enjoyed, so if it sounds like something you would like, go along and play around with my recipe and tell me about it. Verdict: Not bad. It was a tad undersalted for my taste but i think in general its better than over salted. And you cant tell how salty the cheeses would be. So i would stick to the amounts of salt and just add salt while you are eating if needed. Optional in section B: you could add some chopped whole canned tomatoes - 1 cup. Also for those who prefer some meat in this dish, in section B you could add some cooked ham or turkey. Serve with a nice vinegrette salad of cucumbers, olives, tomatoes, lettuce..

Categories     One Dish Meal

Time 1h50m

Yield 1 casserole dish, 8 serving(s)

Number Of Ingredients 17

400 g pasta, 400gm cooked with seasonings and oil, al dente, drained
400 g frozen spinach, defrosted and drained
2 tablespoons fresh dill, chopped
3 garlic cloves, minced
2 spring onions, chopped
1 1/2 cups mushrooms, sliced
1/2 teaspoon salt
1/3 teaspoon nutmeg
3 tablespoons olive oil
150 g feta, cut into small cubes
80 g butter
3 tablespoons flour
700 ml milk
1/2 teaspoon salt
1/3 teaspoon nutmeg
1/3 teaspoon black pepper
2/3 cup cheese, grated

Steps:

  • Put a pan of water to boil, when boiled add salt or seasoning and about 2 tbsp oil then pasta. dont over cook. AL DENTE!
  • At the same time (1) is on the fire. Put a saucepan on the fire, add about 3 tbsp olive oil, saute onions, garlic for 1 minute, do not brown! Add the dill, spinach, seasoning and mushrooms. Saute for about 4-5 minutes on medium heat. Just enough to cook through and evaporate any excess liquid from the spinach or mushrooms. Make sure it does not 'fry', just lightly cook/saute. Remove from heat and leave to cool.
  • Drain pasta and pour into casserole dish, spread out at bottom of dish. The pasta should be about the height of half the dish.
  • Top the pasta with the feta, evenly ditribute to make sure that each serving has some cheese. Then top with spinach mixture. Evenly distribute.
  • Microwave the milk on the lowest heat for 2 minutes Check to see if its warm. The temperature we want the milk to be is heated but not Boiling.
  • Preheat the oven to 165C/ 320°F.
  • In a pot, melt the butter, do not burn, on low heat. Add the flour. Stir well, about 1 minute (during this time make sure the milk is heated enough or else blast it on high for 20 seconds). Add the heated milk to the pot, a quarter at a time. Each time mix well till it is as smooth as you can manage before adding more milk. About 30 seconds for each addition of milk - yes that quick. Add the nutmeg, salt, pepper and let it simmer on medium heat for another 2 minute while still stirring. This should leave you with quite a light, slightly watery white sauce (BECHAMEL) - which is what we want.
  • Pour the white sauce evenly over the spinach. Use a chopstick or butterknife and just lightly poke through the dish and wiggle about to allow some of the white sauce to get to the bottom layer. About 12 spots around the dish if you need to know. Sprinkle the grated cheese evenly over the top.
  • Put the casserole dish into the preheated oven. Middle of the oven or so, not to high, dont want the cheese to start to brown before the time is up. If your oven tends to burn the top move the dish lower. Anyway as each oven is different the top of the dish should start to puff up at about 40 mins into cook time. If its not starting to brown at all at this time just increase temp to 175C/350F for the last 15-20mins. Top should be slightly browned all over.
  • 10. Remove and leave to cool. Never serve immediately. Best served about 30-45 mins after removing from oven. Believe me, it will still be more than warm.

CREAMY SPINACH ARTICHOKE CHICKEN CASSEROLE

Creamy Spinach Artichoke Chicken Casserole image

This casserole uses rotisserie chicken, frozen spinach and frozen artichoke hearts to save time on prep. A creamy, cheesy comfort food that's sure to please!

Provided by Kate

Categories     main course

Time 55m

Number Of Ingredients 11

16 ounces (454 g) frozen chopped spinach
16 ounces (454 g) frozen artichoke hearts
3 1/2 cups (425 g) shredded rotisserie chicken, from about 1 medium rotisserie chicken (see note 1)
8 ounces (227 g) cream cheese
16 ounces (454 g) sour cream
2 cups (141 g) finely shredded Parmesan cheese, divided
2 cups (197 g) shredded Monterey Jack cheese, divided
2 cloves garlic, finely chopped
2 teaspoons kosher salt, or to taste
1 teaspoon black pepper, or to taste
1 teaspoon onion powder

Steps:

  • Place the spinach and artichoke hearts in the fridge the night before to thaw. Place on a plate or inside a gallon zip top bag to prevent leaks. (If you don't have time to thaw the vegetables in the fridge, follow the microwave thawing directions below.)
  • Preheat the oven to 425 degrees F/220 degrees C and take the cream cheese out of the fridge to soften.
  • Finely chop the garlic, set aside.
  • If your spinach is frozen, place it in a medium microwave-safe bowl and microwave on high for 2 minutes. Stir, and microwave again for another 1 - 2 minutes, or until thawed. Stir again. Squeeze the moisture out of the thawed spinach and add to a 9 x 13 inch (33 x 23 cm) baking pan or casserole dish.
  • Shred or chop the rotisserie chicken into large pieces, discarding the skin. Place the shredded or chopped chicken inside the casserole dish or baking pan. (If you are using the microwave to thaw the vegetables, this step can be completed while the spinach is microwaving!)
  • If your artichoke hearts are frozen, place them into the same bowl the spinach was in (dump out the spinach water first!). Microwave on high for 2 minutes, stir, and microwave again for another 1 - 2 minutes, or until thawed. Stir again. (While the artichoke hearts are microwaving, you can shred the cheeses if not using pre-shredded cheese.)
  • Tear or chop the artichokes into smaller pieces and add to the pan.
  • Add the cream cheese, sour cream, kosher salt, black pepper, onion powder, garlic, 1 cup Monterey Jack cheese and 1 cup Parmesan cheese to a medium bowl (if you used the microwave to thaw the vegetables, you can use that same bowl).
  • Break up the cream cheese with a large spoon and stir until the ingredients are well combined. Add to the pan and stir to combine all the casserole ingredients together. Make sure the ingredients are distributed evenly in the pan but leave some texture on the top (do not smooth down the top of the casserole).
  • Sprinkle with the remaining Parmesan and Monterey Jack cheeses and bake for 25 - 30 minutes, or until the casserole is bubbly around the edges and the top is browned. Serve immediately.

THE FOOD LAB'S CREAMED SPINACH RECIPE

The Food Lab's Creamed Spinach Recipe image

The bare bones of this creamed spinach recipe are pretty straightforward and classic: The spinach is cooked low and slow to gradually concentrate its juices. Combined with a creamy béchamel sauce, it reduces into a rich, thick coating with a near pudding-like texture. The only minor embellishments I include here are a doubling-up of the alliums and a last-minute shot of crème fraîche for a final dose of creaminess and fresh flavor.

Provided by J. Kenji López-Alt

Categories     Side Dish     Sides

Time 2h

Yield 4

Number Of Ingredients 11

3 tablespoons unsalted butter
2 medium shallots, finely minced (about 1/2 cup)
2 medium cloves garlic, minced or grated on a Microplane (about 2 teaspoons)
2 pounds curly spinach, trimmed, washed, and drained
1 tablespoon all-purpose flour
1 1/2 cups heavy cream
1/2 cup whole milk
1/4 teaspoon freshly grated nutmeg
1/4 cup store-bought or homemade crème fraîche
Kosher salt and freshly ground black pepper
2 ounces Parmigiano-Reggiano, finely grated (about 1 cup; optional)

Steps:

  • Melt butter in a Dutch oven or large saucepan over medium-high heat. Add shallots and garlic and cook, stirring, until softened, about 2 minutes. Add spinach in 4 batches, turning each batch with tongs or a rubber spatula and allowing it to wilt before adding the next.
  • Add flour and cook, stirring constantly, until no dry flour remains. Slowly stir in heavy cream and milk. Bring to a simmer, stirring, then reduce the heat to the lowest possible setting and cook, stirring occasionally, until the spinach is completely softened and the sauce has thickened, about 1 1/2 hours.
  • Stir in nutmeg and crème fraîche and season to taste with salt and pepper. Remove from the heat.
  • If desired, preheat the broiler to high. Transfer creamed spinach to a 1-quart oval or round casserole dish and top it with the cheese. Broil until spinach is bubbly and cheese has formed a well-browned crust, about 2 minutes. Serve.
