- In a large saucepan, heat butter over medium heat. Add onion; cook and stir 2-3 minutes or until tender. Add garlic; cook 1 minute longer. Stir in remaining ingredients; bring to a boil. Reduce heat; simmer, uncovered, 15-20 minutes to allow flavors to blend.

SWEET AND SPICY BBQ SAUCE (TEXAS STYLE)

Steps:
- In a medium pot, cook the bacon over medium-low heat until crispy, 8 to 10 minutes. Remove to a plate lined with a paper towel to drain, then eat the bacon as a snack.
- Add the onions to the pot with the bacon grease and cook over medium-low heat until the onions start to caramelize, 6 to 8 minutes. Add the garlic and cook another 2 minutes. Add the tomato paste and cook, stirring occasionally, another 3 minutes. Whisk in the stock, sugar, vinegar, cumin, cayenne, salt and pepper and bring to a simmer. Cook until thickened, 15 to 20 minutes.
- Let cool to room temperature before using. This sauce is great on brisket or beef ribs.

- Combine the ingredients in a saucepan, then season. Bring to the boil and bubble for 3-4 mins until the sugar and salt have dissolved and the sauce is glossy. Remove from the heat, transfer to a jar, and leave to cool. Will keep in the fridge for up to 2 weeks.

- Combine the beef stock, ketchup, onion, bacon drippings, 1/4 teaspoon salt and 1/2 to 1 teaspoon pepper in a medium pot. Bring to a boil, then reduce the heat to medium low and simmer until the onion is tender, about 10 minutes. Remove from the heat and set aside to let the flavors develop, at least 1 hour. Reheat the sauce before serving.

TEXAS STYLE BARBECUE SAUCE
My DH loves BBQ sauce, so I am always trying different recipes...but I always seem to come back to this one! I truely am not a big fan of ketchup, so whenever I have to use it, I really have to mask it's taste (big time). This barbecue's main ingredient is tomato juice, so this sauce works very well for me! This sauce is excellent on all different types of meats, but is especially good on BBQ Chicken Pizza

MY FAVORITE TEXAS BBQ SAUCE
This is a sweet and tangy BBQ sauce recipe perfect for brisket or ribs or anything. I have tried quite a few and this is by far the best I've made. Hope you like it. Original recipe found in Celebrating Barbecue by Dotty Griffith. For better flavor you can sub 1/4 cup pan drippings from bbq for the butter.

- Combine all ingredients except butter/drippings in medium sauce pan. Simmer over very low heat stirring occasionally for 1 hour.
- Stir in butter/drippings and simmer an additional 15 minute
- Serve warm or cold.
- Store in air tight container in refrigerator up to 2 weeks.

- Melt butter in medium saucepan over medium heat. Add garlic; stir 30 seconds. Stir in ketchup and all remaining ingredients. Bring to boil. Reduce heat to medium-low; simmer until reduced to 1 1/3 cups, stirring occasionally, about 15 minutes. Season with salt and pepper. do ahead Can be made 1 week ahead. Cool slightly, cover, and chill.
