BLOOMING ONION AND DIPPING SAUCE
This is such an incredible appetizer. The flavor of the battered onion combined with the sauce makes for one addictive and unforgettable recipe!

- Heat oil on stove to 360 degrees. Heat enough oil to cover onion.
- Mix eggs in a large bowl and set aside
- Mix flour, salt, cayenne, paprika, pepper, and cumin in a large bowl. Set aside.
- Slice the top and the bottom off and peel off papery skin.
- Using a narrow knife CAREFULLY core the middle of the onion, 1 inch in diameter. Remove the center of the onion.
- Using a very sharp knife slice the onion several times to create petals. ONLY slice ¾ of the way down. Do not go farther or your onion will fall apart. (Believe me I know, I had to practice on two onions to figure this out.)
- Cut the onion 90 degrees and slice it again to make an x across the first slice. Keep slicing sections in half, VERY carefully until you have 16 sections, or petals.
- Gently spread petals apart.
- Dip onion in the egg mixture, doing your best to make sure the onion is completely coated.
- Transfer the onion to the flour mixture and coat each petal as best as you can.
- Repeat the process one more time.
- Fry the onion right side up for 10 minutes or until golden brown.
- Drain on paper towel and serve with sauce.
- In a small bowl, combine mayo, ketchup, horseradish, paprika, salt, pepper, and cayenne pepper and mix well.

- Start by cutting off 1/2 inch from the top of the onion, then peel the outer skin from the onion.
- Place the onion cut-side down. Starting about 1/2 inch from the root, make a downward cut all the way through to the board.
- Repeat to make four evenly spaced cuts around the onion. Make 3 additional cuts between each section until you have 16 evenly spaced cuts.
- Place the onion in a bowl of ice water, cut side down, for 2 hours.
- In a mixing bowl, whisk flour, paprika, cayenne, cumin, thyme, oregano, Kosher salt and white pepper.
- In a separate medium deep bowl, whisk together eggs, milk, and 1 cup water.
- Place the onion in a clean bowl, cut-side up, spoon flour mixture over the onion being mindful to get in all the nooks and crannies. If parts re left bare, the wet batter won't stick. Tap off excess flour and reserve.
- Cut side down, dredge floured onion in the wet ingredients, pull up and return to flouring mixing bowl, spooning flour over the top again.
- Place the onion into the refrigerator for about 10 minutes to let is set. Meanwhile, prepare the frying oil.
- In a high sided Dutch oven or deep fryer, heat vegetable or peanut oil to 400 degrees.
- Remove the onion from the refrigerator and shake any excess flour from the onion (it will burn in the oil while frying).
- Using a wire skimmer lower the onion, cut side down, into the oil. Oil temperature will fall, maintain at 350 degrees for duration of cooking.
- Fry until golden brown, about 8-9 minutes, turning halfway through so the root side is down.
- Remove onion using your wire skimmer and drain on paper towels.
- Serve hot with dipping sauce.

Preparing a Texas Roadhouse Cactus Blossom is simple and can save significant funds over visiting the restaurant for the fried onion appetizer. The Cactus Blossom, served at Texas Roadhouse restaurants, is very similar to a Bloomin' Onion, served at Outback Steakhouse, and Awesome Blossom, served at Chili's, and a Texas Rose, served at Lonestar Steakhouse. Learning how to make an onion blossom like they do at Texas Roadhouse is simple. The Texas Roadhouse Onion Blossom recipe features a whole onion which is sliced to separate the petals, then coated in a seasoned batter and deep fried. The finished dish gives the appearance that the onion has "bloomed" and opened up, exposing the many crispy petals within. Serve the Cactus Blossom with the spicy dipping sauce recipe made with horseradish that they use for the onion blossom at Texas Roadhouse or substitute ranch dressing or any other type of dip. - Mix mayonnaise, sour cream, chili sauce, cayenne pepper and horseradish sauce in a medium mixing bowl until well combined.
- Divide sauce among small condiment cups. Refrigerate until ready to serve.
- Heat the oil in a deep fryer or larrge stock pot to 375-400° Fahrenheit.
- Prepare the seasoned flour mix by combining flour with garlic powder, paprika, sugar and pepper in a large mixing bowl. Whisk seasonings and flour to incorporate well.
- Slice 3/4 inch of the root end of each onion.
- Make 12-16 slices into the trimmed end working in a clockwise manner. Do not cut completely through the onion, leaving about an inch of uncut onion near the opposite root end.
- Remove about 1 inch of the center petals from each onion.
- Toss the onions in the seasoned flour to coat well. Peel back the petals slightly to allow the flour to reach between each petal, but do not remove.
- Combine remaining flour, paprika, pepper, cornstarch, salt, and garlic salt and beer in a second large mixing bowl. Whisk well until smooth.
- Dip the floured onions in the batter. Allow excess batter to drip off each onion.
- Use a fryer basket to carefully place the battered onions, one at a time, into the hot oil. Cook for about 90 seconds, flip and cook for an additional 90 seconds.
- Transfer onions to a plate lined with paper towel to drain.
- Place on a serving platter and insert the cup of dipping sauce in the center of each onion.

- Cut a medium onion in half, peel and place face down on counter. Cut onion into strips at about 1/2" across the onion. Batter: mix flour, cayenne, black and white pepper and sugar. Fill a small bowl with milk or buttermilk. Toss the onion strips in the flour, then the milk and then the flour again. Fry the petals in 1/2" of hot oil in a skillet, or bake in a 400 degree oven until crispy. Creamy Chili Sauce: Combine 1 pint each mayo and sour cream, 1/2 cup chili sauce and 1/2 tspn cayenne pepper. Optionally add 1/4 C horseradish for extra kick.
